Grain bowls are one of my favorite types of meals because they're filling and fun to make and they've got so much variety in texture, color and flavor. These have miso-marinated salmon. The miso, fermented soybean paste, in the salmon marinade provides a delicious depth of flavor. My favorite elements of the grain bowl might be the creamy mayo and the crunchy rice crackers on top.

Number Of Ingredients 30

1/4 cup (60 grams) unseasoned rice vinegar
2 tablespoons (42 grams) honey
2 tablespoons (36 grams) light miso
2 tablespoons (32 grams) soy sauce
2 teaspoons toasted sesame oil
1 teaspoon sriracha
1 pound (454 grams) boneless, skin-on salmon fillet, cut into 4 pieces
1 tablespoon neutral oil
Farro (recipe follows)
Pickled Vegetables (recipe follows)
Japanese mayo, preferred brand, Kewpie, for serving
Sriracha, for serving
Coarsely crushed arare rice crackers, soy sauce-flavored Japanese rice crackers, for serving
Cilantro leaves, for serving
Sliced scallions, for serving
Toasted sesame seeds, for serving
Lemon wedges, for serving
1 teaspoon kosher salt, plus more for seasoning
2 cups (360 grams) farro
1/4 cup extra-virgin olive oil
2 teaspoons toasted sesame oil
2 Persian cucumbers (8 ounces/226 grams), sliced into half moons
4 radishes (3 ounces/85 grams), thinly sliced
Half a small red onion (2 ounces/57 grams)
1 1/3 cups (159 grams) unseasoned rice vinegar
3 tablespoons (36 grams) sugar
2 tablespoons (10 grams) kosher salt
One 2-inch piece fresh ginger, peeled and thinly sliced
4 garlic cloves, peeled and smashed
1 cup ice cubes

Steps:

  • For the salmon marinade: Whisk together the rice vinegar, honey, miso, soy sauce, sesame oil and sriracha in a non-reactive container large enough to fit the salmon snugly. Add the salmon and turn to coat. Let marinate, turning occasionally, at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
  • To cook the salmon: Heat the oil in a medium non-stick or cast-iron skillet over medium-high heat. Remove the salmon from the marinade, letting the excess drip off, and add to the skillet, skin-side down. Reserve the marinade. Cook until the skin is golden brown and crispy, about 3 minutes. Flip and cook until the salmon is just cooked through, about 3 minutes more, depending on thickness. Pour the reserved marinade into the pan and cook 1 to 2 minutes, spooning over the fish to glaze. Remove the salmon on a plate to avoid overcooking. (The salmon can be made up to a day ahead and served warm, room temp or cold from the fridge.)
  • To assemble the bowls: Spoon the Farro (recipe follows) into 4 serving bowls. Add a piece of salmon into each bowl and gently break open the salmon into large chunks. Top with a spoonful of Pickled Vegetables (recipe follows). Garnish with a squirt of mayo, a drizzle of sriracha, crushed arare crackers, cilantro, scallions, sesame seeds and a lemon wedge on the side.
  • Bring a large saucepan of lightly salted water to boil. Add the farro. Bring to a simmer and cook until the farro is tender but still has a bit of chew, 25 to 35 minutes depending on the brand. Drain well. Return to the saucepan and add the olive oil, sesame oil and salt and toss to combine. Taste and season with more salt, if needed. (Farro can be made up to a day ahead and served at room temperature.)
  • Combine the cucumbers, radishes and red onion in a medium bowl. Combine the vinegar, sugar, salt, ginger and garlic in a small saucepan. Bring to a simmer and cook just until the salt and sugar dissolve. Add the ice cubes to melt and cool down the pickling liquid. Pour over the vegetables. Refrigerate until chilled, 30 minutes or more. (The quick pickled vegetables can be made up to a day ahead.)

MISO-SRIRACHA GLAZED SALMON

Miso is a fermented soybean paste, and is, well, the namesake ingredient behind miso soup. It is available in most natural foods stores and certainly in Asian supermarkets. Look for it in the refrigerated section near the tofu. Serve alongside steamed rice and vegetables for a spicy, sensible meal.

Number Of Ingredients 10

3 tablespoons toasted sesame oil
1/2 cup firmly packed light brown sugar
1/4 cup soy sauce
1/4 cup white miso paste
3 tablespoons Sriracha
1 clove garlic, minced
Nonstick cooking spray
6 (6-ounce) salmon fillets, about 1-inch thick
Steamed rice, to serve
Sliced green onions, green part only, for garnish

Steps:

  • Preheat the broiler.
  • In a small nonreactive mixing bowl, combine the oil, brown sugar, soy sauce, miso paste, Sriracha, and garlic.
  • Spritz the broiling pan with nonstick cooking spray. Place the salmon on the pan and broil 6 inches from the flame, basting the fish twice. Broil until the fish flakes easily at the center of the fillet, 9 to 10 minutes. Serve atop steamed rice. Garnish with green onions.
  • Replace the steamed rice with a mountain of Sriracha and SPAM Fried rice (page 75) and a friendly pile of Sriracha Slaw (page 47).

Japanese style-broiled salmon just like the restaurants. Easy recipe I came up with at the request of my family. Serve with sticky white rice and a light salad.

2 (1 1/2-pound) salmon fillets, skin removed
1 cup miso paste
¼ cup sake
½ cup brown sugar
2 tablespoons sesame seeds
1 teaspoon sesame oil
¼ cup water
½ cup prepared soy-ginger salad dressing
3 tablespoons seasoned rice vinegar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Fill a large skillet with about 1 inch of water and bring to a boil. Poach fish just until cooked on the outside, about 2 minutes per side. Transfer fillets to a broiler pan.
  • In a small bowl, stir together the miso paste, sake, brown sugar, sesame seeds, sesame oil, water, salad dressing and rice vinegar. Spread this over the tops of the salmon fillets.
  • Bake for 15 minutes in the preheated oven, or until almost cooked through. Switch the oven to broil, and broil until the top is browned and bubbly, about 5 more minutes. Cut fillets into portions to serve.

For a weeknight salmon that's impressive enough for entertaining, look no further. Salty miso paste and sweet maple syrup are the backbone of this simple, flavor-packed marinade, which is about as involved as this uncomplicated recipe gets. Here, the fish soaks up the sauce as the oven gets hot, and the snappy green beans roast in the same amount of time as the fillets. Start some rice when you walk in the door and you'll have dinner on the table in under a half hour.

4 (6-ounce) skin-on salmon fillets, about 1-inch thick
Kosher salt
Freshly ground black pepper
4 teaspoons maple syrup
1 tablespoon white or brown miso
1 tablespoon rice wine vinegar
2 teaspoons soy sauce
1 garlic clove, grated
1 pound green beans, trimmed
2 tablespoons olive oil
Pinch of red-pepper flakes (optional)
1/4 teaspoon toasted sesame oil (optional)
1/4 cup roughly chopped cilantro, both leaves and tender stems
4 lime wedges, for serving
Flaky sea salt, for serving (optional)
Cooked white rice, for serving (optional)

Steps:

  • Heat oven to 400 degrees and line a sheet pan with parchment paper or foil. Season the salmon fillets well with salt and pepper, and place them on a plate or in a large shallow bowl.
  • In a small bowl, whisk together the maple syrup, miso, rice wine vinegar, soy sauce and garlic. Pour the mixture on top of the salmon and gently massage the marinade all over the fish. Let marinate while the oven comes to temperature.
  • Meanwhile, in a medium bowl, toss together the green beans with the olive oil, red-pepper flakes and sesame oil (if using) and season generously with salt and pepper. Lay the salmon fillets on the sheet pan skin side down and spread the green beans out surrounding the fillets.
  • Arrange the salmon skin side down on the sheet pan and bake until the salmon is opaque and the green beans are cooked through, about 12 minutes. Right before serving, scatter with cilantro and a good squeeze of lime. Season with flaky sea salt and serve with rice, if desired.

Ever wondered what to do with the Japanese paste miso? This variation of a classic Nobu fish dish is a great place to start

3 tbsp pale (shiro) miso paste
2 tbsp mirin
1 tbsp sugar
1 tbsp saké (optional)
2 x 100g salmon fillets
half a cucumber
2 tsp rice wine vinegar
1 tsp vegetable oil
pinch caster sugar

Steps:

  • Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
  • Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
  • Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.
