Vegetarian Loaf (No-Meat Meatloaf) image

This recipe is an adaptation of two recipes which I combined. The first recipe is Wheat Loaf (Recipe # 58627). The second recipe is Chili Meatloaf from the Splenda Cookbook. My girlfriend is a vegetarian and she loves this "meatloaf". I'm not a vegetarian, but I like it too.

1 (12 ounce) package Morningstar Farms Meal Starters Grillers recipe crumbles (or other soy ground meat subsitute)
1/2 cup toasted wheat germ
1/4 cup breadcrumbs
1 cup shredded reduced-fat monterey jack cheese
1/2 cup tomato sauce
1/4 cup Egg Beaters egg substitute (or 1 egg)
1 teaspoon yellow mustard
2 teaspoons dried onion flakes
2 teaspoons dried parsley flakes
1/2 teaspoon chili powder
1/4 teaspoon kosher salt
1 tablespoon Splenda sugar substitute
2/3 cup tomato sauce
1/2 teaspoon chili powder
1 tablespoon Splenda sugar substitute

Steps:

  • Preheat Oven to 350 degrees.
  • Prepare a WELL greased/oiled 8x4 inch loaf pan and set aside.
  • Mix ingredients for TOPPING SAUCE in a small bowl and set aside in refrigerator.
  • Mix crumbles, wheat germ, breadcrumbs, and cheese in a large bowl until well blended.
  • Add remaining ingredients for LOAF and mix well.
  • Turn out mixture into the loaf pan.
  • Bake for about 45 minutes (depending on pan size and oven).
  • Add TOPPING SAUCE in the last 15 minutes of Baking.
  • Let sit in loaf pan for 5-10 minutes to firm up a little before removing.

This recipe came from a vegetarian cooking class I took. It makes a great substitute for meat loaf! It is NOT low fat but, it is VERY good! It makes great sandwiches the day after too. Just slice and put on some whole wheat bread with a little extra ketchup. YUMMY!

1 cup finely ground raw not toasted walnuts (I use my blender to do this)
1 cup wheat germ (also raw)
1 cup grated mild cheddar cheese
3/4 cup tomato juice
2 eggs, well beaten
1 large onion, finely chopped
1 teaspoon thyme
1/4 teaspoon marjoram
1/2 teaspoon oregano
1/2 teaspoon basil
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Mix together the nuts, wheat germ and cheese.
  • Add remaining ingredients and mix well.
  • Turn all of the mixture into a WELL oiled loaf pan.
  • Bake for 45 minutes.
  • I glaze this with ketchup (fruit sweetened) about the last 5 minutes of baking.
  • I also let this sit in the loaf pan for 5-10 minutes to firm up a little before removing.
  • Serve like "meat loaf" with your favorite sides!

½ large onion, finely chopped
½ green bell pepper, finely chopped
1 large clove garlic, finely chopped, or more to taste
1 (12 ounce) package vegetarian burger crumbles
1 ripe tomato, chopped
1 pinch salt
1 pinch ground black pepper
1 pinch dried rosemary
1 pinch dried thyme
1 pinch dried basil
½ cup dry stuffing mix, or more as needed
¼ cup vegetable broth
2 teaspoons tomato paste
1 teaspoon Worcestershire sauce
1 egg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a frying pan over medium heat. Add onion, bell pepper, and garlic. Cook until onions are translucent, about 5 minutes.
  • Add burger crumbles and tomato; cook until tomato breaks down, about 5 minutes. Season with salt, pepper, rosemary, thyme, and basil. Stir and remove from heat. Let mixture cool slightly.
  • Place burger-tomato mixture in a large bowl. Add stuffing mix and stir to combine. Mix broth, tomato paste, and Worcestershire sauce together in a separate bowl until evenly combined. Pour into the burger-stuffing mixture. Season to taste. Add egg and stir until moist. Pour meatloaf mixture into a loaf pan and smooth the top.
  • Bake in the preheated oven until heated through, 45 to 60 minutes.

I have tried and tried meatloaf recipes they all fall apart before you get them out of the pan. This meatloaf is very good and sticks together to be served. Leftover meatloaf makes wonderful sandwiches with mayonnaise.

1 green bell pepper, seeded and cubed
1 medium onion, roughly chopped
3 small stalks celery
1 ¼ pounds ground beef
1 pound mild pork sausage
1 ½ cups cracker crumbs
1 (1 ounce) envelope dry onion soup mix
¼ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried sage
1 ½ cups milk
½ cup ketchup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a food processor or blender, combine the bell pepper, onion and celery. Process until finely chopped, but not liquid. Transfer to a large bowl. Add the ground beef, ground pork, cracker crumbs, onion soup mix, salt, pepper, sage and milk. Mix well using your hands, or if you have a stand mixer, mix using the paddle attachment. Transfer to a 9x5 inch loaf pan and form into a loaf, mounding in the center. Cover with a generous layer of ketchup.
  • Bake for 1 1/2 hours in the preheated oven. Serve hot. Refrigerate leftovers, slice and serve cold in sandwiches.

2 eggs
1/3 cup ketchup
1/4 cup barbecue sauce
2 teaspoons Dijon mustard
1/2 cup rolled oats
2 tablespoons parmesan cheese
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon dried parsley

Steps:

  • In a large pot, bring lentils to a boil with enough water to cover by a couple inches. Reduce heat, and simmer for 30-40 minutes or until very soft. Drain.
  • Meanwhile, whisk the rest of the ingredients together until combined.
  • Puree lentils in a food prosesser until smooth. Dump that into the egg mixture, and stir. Pour into a greased 8x8 baking dish, and bake at 400 for 30 minutes or until firm.
  • Enjoy.

High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup quick-cooking oats
3/4 cup monterey jack cheese or 3/4 cup American cheese
1 egg, beaten
4 1/2 ounces spaghetti sauce or 4 1/2 ounces tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper

Steps:

  • Add salt to water and boil in a saucepan.
  • Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
  • Remove from fire.
  • Drain and partially mash lentils.
  • Scrape into mixing bowl and allow to cool slightly.
  • Stir in onion, oats and cheese until mixed.
  • Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
  • Mix well.
  • Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
  • Smooth top with back of spoon.
  • Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
  • Cool in pan on rack for about 10 minutes.
  • Run a sharp knife around edges of pan then turn out loaf onto serving platter.
