Steps:

  • Heat oil or butter in a large skillet, add Kielbasa and cook over medium high heat until lightly browned, remove with slotted spoon.
  • Reduce heat to medium, add onions and cook until transparent.
  • Reduce heat to low, add garlic and herbs and cook 1 minute.

I plan to try it with chopped collard greens instead of spinach next time, added about 20 minutes before the end of cook time. The spinach was fine, but I'd like to try a meatier-textured green. I also plan to add a bit of acidity with a tablespoon of vinegar stirred in before service.

1/3 cup tomato paste

  • Preheat the broiler to high with a rack set 2-inches from the heat source.

2 tablespoons extra-virgin olive oil

  • Place shallot and garlic cloves over two layers of aluminum foil. Coat with 2 tablespoons of extra-virgin olive oil and season with salt. Remove the kielbasa from the skillet with a slotted spoon to retain the grease in the skillet; drain the sausage slices on a paper towel-lined plate.
  • Add 1 tablespoon of olive oil to the skillet. Cook the mashed shallot and garlic in the hot oil for 1 minute. Stir in the mustard and cream. Reduce the heat to medium-low and add the Brussels sprouts and beans. Toss to coat and season with salt and pepper. Continue cooking until heated through.
