ROASTED WHITE BEANS WITH VEGETABLES GREEK STYLE



Roasted White Beans with Vegetables Greek Style image

This hearty dish includes white beans, peppers and cherry tomatoes, roasted in olive oil until moist and tender.

1 ¼ cup dry white beans
½ cup olive oil
1 red bell pepper chopped in small pieces
1 green bell pepper chopped in small pieces
1 onion grated
1 garlic clove sliced
7-8 cherry tomatoes halved
1 tablespoon oregano
1 teaspoon tomato paste diluted with 1/4 cup of water
Ground Pepper
Salt to taste

Steps:

  • Soak beans overnight.
  • Rinse and simmer beans for about 30 minutes until soft but not mushy, drain and set aside.
  • Preheat oven to 350 F (180 C).
  • Chop vegetables and then in a large bowl mix the peppers, grated onion, garlic, beans, olive oil, tomato paste mixture, oregano, and pepper. Mix gently as to not break the beans.
  • Add the halved cherry tomatoes and mix gently.
  • Pour into casserole dish.
  • Add ¼ cup hot water to the dish pouring it in a corner and tilting the dish so that the water spreads (do not pour over as this will wash off the olive oil).
  • Cover with aluminum foil and roast for about 1 hour until peppers are soft.
  • Remove foil and roast for about 10 minutes if you want some browning. Be careful not to leave it uncovered too long, otherwise the beans will dry out.
  • Remove from oven, let it cool and add thick salt as needed.
  • Serve plain or with feta cheese.

Translated from "Atrévete a Cocinar con Karlos Arguiñano". Note: Spring onions are much bigger in size in Spain than in the US. I saw them in an American grocery store once labeled "knobby onions". They're about the size of a small onion, available year-round, and depending on the season they can be either extremely acidic or suitable enough to sprinkle raw on a salad. Though they look young and tender with verdant shoots and glowing white bulbs, they still make my eyes water to chop. You might want to use several (4-6) North American green onions, or just use a an ordinary white onion. Also, only the white part of the spring onion is used. The recipe says just to use "un bote en conserva" of beans (a can or jar cooked), and the jar of beans in my fridge is net weight 570g so that's what I put.

1/2 zucchini
1 spring onion
1 leek
2 tablespoons tomato sauce
4 tablespoons olive oil

Steps:

  • Peel and dice spring onion. Clean the leek and chop into fine disks.
  • Cut the zucchini in half lengthwise and slice, making "half moons".
  • In a large frying pan, heat olive oil, add all vegetables (except beans), cover and cook on medium heat for 8 minutes.
  • Open jar/can of beans and add to frying pan. Add also tomato sauce and one pinch of salt. Stir gently until heated through and serve.

1 lb great northern bean, dried (can also use white beans or navy beans)
7 cups water
1 1/2 teaspoons salt
1 1/2 cups potatoes, diced
1 cup carrot, diced
1/2 cup fresh parsley, chopped
2 -3 cups tomatoes, chopped (fresh or canned work well)
1/4 cup olive oil
1 medium onion, chopped
2 garlic cloves, finely minced
1 teaspoon pepper

Steps:

  • Rinse and sort dried beans and place in a large soup pot.
  • Add water and soak overnight(or use package directions for quick method).
  • After soaking (do not drain) add salt and bring to a boil.
  • Reduce heat, cover and simmer 1-1 1/2 hours, until nearly tender.
  • Add remaining ingredients.
  • Return to a boil.
  • Cover and simmer 45 minutes, stirring occasionally to prevent sticking.
  • Serve with fresh, warm bread.
  • NOTE: Leftovers from this dish can be served cold on lettuce leaves for a salad. Garnish with lemon slices and tomato wedges.

To add flavor to otherwise basic canned white beans, we start by slowly softening garlic in olive oil. Then we add more aromatics like rosemary and lemon zest to further infuse the oil. 12 ounces (1 3/4 cups) dried cannellini, or white beans
1 tablespoon whole black peppercorns
2 dried bay leaves
1 small onion (about 4 ounces), thickly sliced
1 tablespoon salt, plus more to taste
2 lemons
12 (about 1 3/4 pounds) baby artichokes
1 bunch (4 cups loosely packed leaves) fresh basil
6 tablespoons olive oil
4 large leeks, white and light-green parts only
2 teaspoons minced (from 2 large cloves) garlic
1/4 teaspoons freshly ground black pepper, plus more to taste
1 cup dry white wine
3 (about 1 pound) radicchio

Steps:

  • Pick over beans, discarding any stones or broken beans, and rinse. Place in a large saucepan, cover with cold water by 2 inches, and bring to a strong boil. Remove from heat, and let stand 1 hour, covered. (Alternatively, beans can be placed in a bowl, covered with 2 inches of cold water, and soaked overnight.)
  • Drain beans, place them in the saucepan, and add enough cold water to cover by 2 inches. Tie peppercorns in a small piece of cheesecloth, and add to beans along with bay leaves and onion slices. Return the mixture to heat, bring to a boil, and reduce heat to medium low. Simmer until beans are very tender, 35 to 40 minutes, adding 1 teaspoon salt about 10 minutes before beans are finished cooking. Remove from heat, set aside, and let beans cool in their liquid. They can be cooked and refrigerated in their liquid up to 2 days in advance.
  • Meanwhile, fill a large bowl with cold water. Cut lemons in half, squeeze juice into water, and add lemon halves. Trim about 1/2 inch from tips of artichokes, and pull off tough outer leaves. Trim stems to 1/2 inch, and trim off dark green outer layer of stem. Slice artichokes in half lengthwise if small or in quarters if large. Use a small sharp knife to remove the purple choke from artichokes -- if the choke is not purple, it is not necessary to remove it. Place prepared artichokes in the bowl of lemon water. Set aside.
  • Remove basil leaves from stems, discard stems, and wash leaves thoroughly. Drain and lay leaves out on paper towels, blotting away as much water as possible. Place basil in the bowl of a food processor, add 4 tablespoons olive oil, and process until smooth, about 2 minutes. Transfer puree to a small bowl, cover immediately with plastic wrap to prevent discoloration, and refrigerate until needed.
  • Cut leeks into 1/2-inch rounds, and place in a large bowl of cold water. Let sit for 5 to 10 minutes to rid them of any dirt and sand. Lift out of the water, and drain in a colander.
  • Heat remaining 2 tablespoons olive oil in a Dutch oven or large saucepan over medium heat. Add leeks, garlic, 1 teaspoon salt, and 1/8 teaspoon pepper, and cook until fragrant and tender, stirring frequently, about 10 minutes. Drain artichokes, discarding the liquid and lemons, and add to leeks along with wine. Cover, and cook until artichokes begin to become tender, about 15 minutes. Uncover, and cook until liquid evaporates and artichokes are tender, about 5 minutes more.
  • Meanwhile, cut radicchio heads into 1-inch wedges without removing the core; it will hold the leaves together. Drain cooked beans, reserving cooking liquid. Remove and discard bay leaves, onion slices, and peppercorns. Add beans, 2 cups of the cooking liquid, remaining 1 teaspoon salt, and remaining 1/8 teaspoon pepper to leeks and artichokes. Cook until beans are heated through and liquid has thickened, about 15 minutes. Stir in radicchio wedges, and cook until wilted, about 5 minutes. Adjust seasoning with salt and pepper, if necessary. Stir in 3 tablespoons of the basil puree. Serve immediately with the remaining basil puree on the side.

It opts for canned white beans, for the sake of weeknight convenience, and Swiss chard, which is much milder than puntarelle and easier to find in the U.S. Kale or escarole would also work well, if that's what you've got. On that note, grated Pecorino Romano cheese gives the broth a more pungent element, but Parmesan will work in its place. Serve in shallow bowls with toasted country bread to mop up the garlicky broth.

Pasta primavera, the creamy, vegetable-heavy pasta dish popularized in the 1980s at Le Cirque, in New York, is a little too fussy for a busy weeknight, but this reimagined white bean version comes together in less than a half-hour. The simple beans and vegetables feel fancy in their robe of cream, Parmesan, lemon juice and mustard. The dish is best with fresh spring vegetables, and it's also very flexible: Substitute spinach for the peas, a handful of halved cherry tomatoes for the carrot, and sugar snap peas for the asparagus. Drained jarred artichoke hearts wouldn't be out of place, either.

Steps:

  • Melt the butter in a 12-inch skillet (preferably straight-sided) over medium-high heat. Add the zucchini and 1 teaspoon salt, and stir, then cook undisturbed in an even layer until one side is golden, about 4 minutes. (It's great if the butter browns, but decrease the heat if it threatens to get too dark.) Stir in the asparagus, carrot and garlic, and cook, stirring occasionally, until fragrant and softened, about 4 minutes. Stir in the peas, scallions and ½ teaspoon salt, then add the red-pepper flakes, oregano and a generous amount of black pepper. Cook, stirring, until the peas are warmed through and bright green, about 2 minutes.
  • Add the white beans and the cream, lower the heat to medium, and let the cream come to a simmer. Simmer for about 1 minute.
  • Turn off the heat and stir in the lemon juice, Parmesan and Dijon. Taste and season with more salt, pepper or lemon juice as needed. Add 1 or 2 tablespoons of warm water to the creamy beans to loosen as you like; the sauce will thicken as it cools. (You may need more water when you reheat any leftovers.) Serve in bowls topped with the nuts and a handful of basil leaves. Pass more Parmesan at the table.

8 oz. dry white beans (Cannellini or Navy), (see note for using canned beans instead)
6 cups of water
2 TBSP. olive oil
1 medium leek (or onion), sliced
1 medium shallot, chopped
1 small bunch of Italian kale (cavolo nero, or, lacinato), stems removed, chopped
2 medium carrots, sliced
2 medium celery stalks, plus their leaves, sliced
1 large garlic clove, minced
2 bay leaves
½ tsp. dried Greek oregano
1 small sprig of fresh rosemary, or fresh thyme (optional)
½ tsp. freshly ground black pepper
1 small chunk of Parmesan cheese rind (if you have it)
1 large Yukon Gold potato (or two medium), cut into small cubes
1 14oz. can of crushed tomatoes (or of tomato sauce)
¾ -1 tsp. salt
--- olive oil for drizzling
--- Parmesan cheese for serving

Steps:

  • Place the dry beans in a pot, cover with 3" of cold water, and let them soak overnight.
  • The next morning drain the beans in a colander and rinse very well with cold water. Return the beans to the pot, add just enough water to cover them, and bring the water to a boil. After a couple of minutes, remove the pot from the heat, drain the water again and rinse the beans again. (This step is important, not only you are getting rid of the impurities and the residue of the beans, but your beans will be easier to digest and more gentle on your stomach!)
  • Return the rinsed beans to the pot along with 6 cups of cold water and the olive oil. Bring to a boil, reduce to a medium simmer, and partially cover with a lid. Cook for 15 minutes.
  • While the beans cook start prepping the vegetables. Once prepared add the leeks, shallot, kale, carrots, celery and garlic to the pot. Next add the bay leaves, oregano, rosemary, and ground pepper. Finally, if you have it, add the Parmesan rind (it adds lots of flavor to soups and stews as it slowly melds with the broth). Cook the soup for another 30 minutes, or, until beans are almost cooked.
  • Stir the potatoes and the tomato into the soup. Simmer for another 15 minutes or so, until the potatoes are tender. Lastly, stir in the soup the salt. Taste and adjust the seasoning, if necessary.
  • Let the soup cool down slightly, then serve with a generous drizzle of olive oil and a good sprinkle of fresh Parmesan cheese.
