WHITE BEANS WITH SALT PORK

White Beans with Salt Pork image

This white beans recipe is from Fabio Trabocchi's cookbook, "Cucina of Le Marche," and goes wonderfully with his Grilled Pork Chops.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 12

2 cups dried cannellini beans, picked over and rinsed
1 teaspoon baking soda
1/2 pound salt pork, rind removed or pancetta
1 sprig fresh rosemary
1/2 cup extra-virgin olive oil, plus more for drizzling
1 medium onion, thinly sliced
2 cloves garlic, thinly sliced
1/4 pound prosciutto, cut into 1/4-inch pieces
3 tablespoons finely chopped fresh flat-leaf parsley
4 canned plum tomatoes, drained, seeded, and finely chopped
Freshly ground black pepper
6 slices (1/2 inch thick) crusty country bread, such as ciabatta, toasted

Steps:

  • Place beans and baking soda in a large bowl. Add enough water to cover by 2 inches. Let soak, overnight, at room temperature.
  • If using salt pork, bring a large saucepan of water to a boil over high heat. Add salt pork and cook for 10 minutes. Drain and let cool.
  • Cut salt pork or pancetta into 1/2-inch cubes. Place in a medium saucepan and add enough water to cover by 1/2 inch. Bring to a simmer over medium heat. Add rosemary and continue cooking until tender, adding more water as necessary to keep meat covered by 1/4 inch, about 30 minutes for salt pork or 10 minutes for pancetta. Remove from heat and set aside.
  • Drain beans and place in a medium saucepan. Add enough fresh water to cover by 2 inches. Bring to a simmer over medium-high heat and cook until tender, about 35 minutes, skimming any impurities that rise to the surface. Remove from heat and set aside.
  • Heat oil in a large saucepan over medium-high heat. Add onion, garlic, prosciutto, and parsley; cook, stirring, until onion and garlic are lightly golden, about 8 minutes. Add tomatoes and cook until softened, about 5 minutes. Drain salt pork or pancetta and add to pan, along with beans and their cooking liquid. Bring to a simmer, skimming surface as necessary. Partially cover saucepan, reduce heat and gently simmer until beans are tender and salt pork is translucent, about 20 minutes.
  • Drizzle with olive oil and season with salt; serve with bread.

SLOW-COOKED PORK SHOULDER WITH BRAISED WHITE BEANS

Slow-Cooked Pork Shoulder with Braised White Beans image

This sage-and-garlic-braised pork shoulder is served over creamy, slow-cooked white beans and spinach.

Categories     Bon Appétit     Pork     Bean     Spinach     Braise     Sage     Garlic     White Wine     Wine     Dinner     Wheat/Gluten-Free     Winter

Yield 4 servings

Number Of Ingredients 24

Pork:
1 (6-lb.) bone-in pork shoulder (Boston butt), fat cap trimmed to 1/4 inch
3 tablespoons Diamond Crystal or 5 teaspoons Morton kosher salt, plus more
8 fresh bay leaves, divided
1/4 cup sage leaves, plus 4 large sprigs
4 tablespoons olive oil, divided
1 head of garlic, halved crosswise
9 juniper berries
4 black peppercorns
3 cups dry white wine
1/4 cup best-quality red wine vinegar
Beans
1 large beefsteak tomato, halved crosswise
1 head of garlic, halved crosswise
4 large sprigs sage
2 cups coco nano or cannellini (white kidney) beans, soaked overnight, drained
2 tablespoons plus 1/4 cup olive oil
Kosher salt
Greens and assembly:
2 bunches mature spinach, tough stems removed
Kosher salt
2 tablespoons olive oil, plus more for drizzling
4 garlic cloves, thinly sliced
Flaky sea salt

Steps:

  • Pork:
  • Sprinkle pork all over with 3 Tbsp. or 5 tsp. salt. Tear 4 bay leaves and 1/4 cup sage leaves into small pieces and scatter over pork. Place pork on a wire rack set inside a rimmed baking sheet and cover loosely with plastic wrap; chill 12 hours.
  • Let pork sit at room temperature 1 hour. This will help it cook evenly.
  • Preheat oven to 450°F. Heat 2 Tbsp. oil in a large heavy pot over medium-high. Cook pork, turning occasionally, until browned on all sides, 15-20 minutes. Transfer pork to a large plate.
  • Remove pot from heat and pour off any fat. Discard fat and any leaves in pot; wipe out pot. Add remaining 2 Tbsp. oil to pot along with garlic, juniper berries, peppercorns, sage sprigs, and remaining 4 bay leaves. Cook over low heat until garlic just starts to brown around the edges, about 1 minute. Pour in wine and vinegar. Return pork to pot, placing fat side up, and cover with parchment paper, tucking edges down around sides of pork (this prevents it from drying out). Cover pot with a lid, transfer to oven, and cook pork 30 minutes. Reduce oven temperature to 300° and cook, turning pork every 30 minutes or so and adding a splash of water if braising liquid is reducing too quickly, until meat is very tender and pulling away from the bone, 2 1/2-3 hours.
  • Let pork sit until cool enough to handle. Remove bones; discard. Shred meat into 2"-3" pieces, removing any excess fat (it should pull apart very easily but still hold together in pieces). Transfer meat to a large saucepan and strain braising liquid over; discard solids. Cover and keep warm over lowest heat until ready to serve.
  • Beans:
  • Combine tomato, garlic, sage, beans, and 2 Tbsp. oil in a large pot. Pour in cold water to cover by 1 1/2" and bring to a simmer over medium heat, skimming foam from surface as needed. Reduce heat so that liquid is at a very gentle simmer; cook until beans are almost tender but still slightly starchy in the centers (you want them to be about 75 percent cooked), 35-45 minutes. Preheat oven to 300°F while the beans are still cooking.
  • Remove beans from heat; season with several generous pinches of salt and add remaining 1/4 cup oil. Transfer to oven and bake without disturbing beans (you want a film to form on the surface) until tender, 15-25 minutes. Finishing the beans in the oven ensures that they are evenly cooked and creamy. Turn off oven and leave beans inside to keep warm until ready to serve.
  • Greens and assembly:
  • Working in 2 batches, cook spinach in a large pot of boiling salted water until tender and no bite remains, about 2 minutes. Drain in a colander and let cool slightly, then squeeze out excess water.
  • Heat 2 Tbsp. oil in a medium skillet over medium and cook garlic, stirring, until softened and barely golden, about 1 minute. Add spinach and stir just to coat leaves in oil and warm through.
  • To serve, spoon beans plus a bit of their cooking liquid onto plates. Arrange several pieces of pork and spinach over beans. Drizzle with oil and sprinkle with sea salt.
  • Do Ahead
  • Beans can be made 1 day ahead. Let cool in liquid; cover and chill. Reheat gently before serving.

MOLASSES BAKED BEANS WITH SALT PORK

Molasses Baked Beans With Salt Pork image

Enjoy this comfort food: baked beans with molasses, salt pork, mustard, and brown sugar. Enjoy this easy Boston-style baked beans recipe.

Provided by Diana Rattray

Categories     Side Dish     Dinner

Time 12h50m

Yield 8

Number Of Ingredients 7

1 pound dried navy beans, pea beans, or yellow eye beans
1/2 cup chopped onion
1/2 cup molasses
1/2 teaspoon dry mustard
1/4 cup light brown sugar, packed
1 teaspoon salt
1/4 pound lean salt pork, diced

Steps:

  • Gather the ingredients.
  • Rinse the beans and pick them over. Place in a large bowl; add water to more than cover the beans (beans will expand).
  • Let beans stand overnight. Drain beans.
  • Combine beans and onion in a large saucepan; add water to cover and heat to boiling.
  • Cover and simmer for about 45 minutes or until skins begin to burst when you scoop a few out in a spoon and blow on them.
  • Drain liquid into a small bowl and reserve for sauce and cooking.
  • Measure one cup of the bean liquid into a bowl; add molasses, mustard, brown sugar, and salt. Stir well.
  • In a 2-quart bean pot or baking dish, layer half of the salt pork and all of the beans.
  • Pour the molasses mixture over beans; add just enough more reserved bean liquid to cover the beans. Top with remaining salt pork, pressing pieces down into the liquid. Keep extra reserved liquid refrigerated for use during baking.
  • Bake the beans covered at 300 F for 4 hours, checking occasionally. If beans seem too dry, add more reserved liquid. Uncover and bake for about 1 hour longer or until the baked beans are tender.

SWEET-BAKED WHITE BEANS WITH PORK

Sweet-Baked White Beans with Pork image

Provided by Food Network

Categories     side-dish

Time 3h10m

Yield 6 servings

Number Of Ingredients 19

2 1/4 cups small white or cannellini beans, picked over and soaked overnight
2 teaspoons dry mustard
1/4 cup cider vinegar
1 tablespoon grated fresh ginger
1/2 cup dark brown sugar, firmly packed
1 yellow onion, diced
3 cups chicken stock
4 ounces salt pork, in one piece
2 large unsmoked pork hocks
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 small red onion, very finely diced
1/2 small bunch flat-leafed parsley, leaves only, coarsely chopped
2 plum tomatoes, coarsely chopped
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 tablespoons cider vinegar
1 teaspoon soy sauce

Steps:

  • Preheat oven to 300 degrees. Drain the soaked beans in a colander and rinse them with cold running water. In a medium heavy casserole, combine the mustard, vinegar, ginger, brown sugar, onion and chicken stock. Whisk together until evenly blended and add the beans.
  • Trim any tough outer skin from the salt pork and pork hocks and add them to the casserole, placing the bacon in the center and 1 hock on either side. Bake in the warm oven for 3 hours, or until the beans have absorbed most of the liquid and the remaining sauce is thick. Stir occasionally to keep the beans evenly moistened, and add up to 1 cup water if necessary to keep the beans from scorching. About 1 hour before the beans will be done, combine all the ingredients for the garnish in a small glass bowl and toss together well. Pull the meat off the bones, cut the bacon into chunks and serve each bowl garnished with a spoonful of the vegetable salsa.

½ cup chopped onion
½ cup molasses
½ teaspoon dry mustard

1 teaspoon salt
¼ pound lean salt pork (diced)
½ pimento peppers
½ Thai chilli peppers

  • Rinse and pick over the beans then place them in a large bowl to stand for a night.
  • In the morning, drain your beans then combine them with the chopped onion in a large saucepan. Add the Thai and pimento peppers, then add water till it's slightly above the mixture then heat to boil.
  • Cover and simmer until the bean skins start to burst open.
  • Drain the water into a bowl, measure a cup of it then add molasses, mustard, brown sugar, and salt then stir well.
  • Add all the beans and half the salt pork into a baking dish, then pour the molasses mixture into them till the liquid rises just above the mixture.
  • Top with remaining salt pork then bake covered for 4 hours at 300F. Ensure that they remain wet, when they seem dry, add some of the drained water.
  • Uncover them and bake them for about one hour till the beans are fully tender.
  • You can also cook them directly over the fire by adding the pork chops from step 4. Let them cook for 2 hours while adding the molasses mixture and stirring occasionally. When the beans are as tender as you desire, correct the seasoning if necessary by adding more pepper, thyme, and garlic.
  • Enjoy.
