2 teaspoons olive oil
6 servings (12 ounces) whole-grain linguine
1 tablespoon minced garlic
2 (14.5-ounce) cans diced tomatoes with basil, garlic and oregano (do not drain, no salt added if possible)
1 (14.5-ounce) can white beans (such as Great Northern or navy)
1 (10-ounce) package Fresh Express Baby Spinach
6 tablespoons Romano or Parmesan cheese (grated)

Steps:

  • Heat oil in a large nonstick skillet.
  • In a large pot, start boiling water for linguine and get linguine cooked while you continue.
  • Add garlic to the skillet, and saute for a minute or so.
  • Add the tomatoes and beans and bring to a simmer.
  • Add the spinach, cover, reduce heat to low and simmer about 10 minutes. Stir occasionally.
  • Spoon tomato/beans/spinach mixture over linguine and sprinkle with cheese.
  • This makes 6 servings of 1 cup of pasta, 1 cup of sauce and 1 tablespoon of cheese.

24 grape tomatoes or cherry tomatoes

Steps:

  • Heat large deep nonstick skillet over high heat. Add spinach to dry skillet; toss until just wilted, about 3 minutes. Transfer to strainer set over bowl.
  • Heat 2 tablespoons oil in same skillet over medium-high heat. Add shallots; sauté 5 minutes. Reduce heat to medium; add tomatoes and rosemary and sauté 1 minute. Add broth; cover and cook until tomatoes soften, stirring occasionally, about 4 minutes. Remove from heat. Crush tomatoes with potato masher. Stir in beans and 1 tablespoon oil. This delicious, dill-infused dish is inspired by a northern Greek recipe from Diane Kochilas's wonderful new cookbook, "The Country Cooking of Greece." The traditional way to wilt spinach in that part of Greece is to salt it lightly, put it in a colander and knead it against the sides of the colander for about 10 minutes. I find blanching or steaming the spinach more efficient, and a better method for those who need to watch their salt intake

1/2 pound (about 1 1/8 cups) dried Greek giant beans, giant lima beans or Christmas limas, washed and picked over
1 1/2 quarts water
1 bay leaf
1 onion, cut in half
Salt to taste
2 garlic cloves, crushed
2 large bunches spinach, (1 1/2 to 2 pounds), stemmed and washed
3 tablespoons extra virgin olive oil
1 leek, white and light green part only, chopped
1 bunch scallions, trimmed and chopped
1/2 cup chopped flat-leaf parsley
1/2 cup chopped fresh dill
1 28-ounce can chopped tomatoes, with juice, pulsed to a coarse purée in a food processor
Freshly ground pepper
4 ounces Greek feta cheese, crumbled (about 3/4 cup)

Steps:

  • Combine the beans, water, bay leaf, halved onion, and crushed garlic in a large saucepan and bring to a gentle boil. Reduce the heat and simmer 30 minutes. Add salt to taste and simmer another 30 minutes. The beans should be al dente: not yet soft but not hard either. Remove from the heat. Using tongs, remove and discard the onion, garlic and bay leaf. Place a strainer over a bowl and drain the beans. Taste the broth and adjust seasonings. Set aside.
  • While the beans are simmering, blanch the spinach in a large pot of salted boiling water for 20 seconds, or steam just until it wilts, abut 1 minute. Transfer to a bowl of cold water, then drain and squeeze out excess water. Chop coarsely.
  • Preheat the oven to 350 degrees.
  • Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet and add the leek and the scallions. Add a pinch of salt and cook, stirring often, until the mixture is tender, 3 to 5 minutes. Transfer to an ovenproof casserole or baking dish, preferably earthenware. Stir in the spinach, parsley, dill, beans, half the tomato purée, 2 cups of the bean broth and half the feta. Season to taste with salt and pepper and stir in another tablespoon of olive oil. Place the remaining tomatoes over the top and sprinkle on the remaining feta. Drizzle on the remaining tablespoon of olive oil. Cover and place in the oven.
  • Bake 1 to 2 hours, checking the liquid every 20 minutes to make sure that the beans are submerged; add more bean broth if necessary. When they're done, the beans will be creamy but intact.

3 garlic cloves, chopped
1 medium yellow onion, chopped
2 (15 ounce) cans diced tomatoes

2 (15 ounce) cans butter beans or 2 (15 ounce) cans other white beans, drained and rinsed
32 ounces vegetable broth (use less if you like a thicker soup)

The other night I wanted pasta and beans, but not like a soup. I looked through some recipes and nothing was quite what I wanted -- so I threw this together, and it rocked! You can vary the herbs according to what you have handy, and use any type of white bean (navy, cannellini, great northern, etc). Any extra sauce can be kept in the fridge and reheated -- just be sure to add a little of the starchy pasta water if needed to thin it out, as it gets pretty thick and clumpy.

2 tablespoons extra virgin olive oil
1 small onion, minced
3 garlic cloves, minced
1 small carrot, minced
1 stalk celery, minced
2 cups tomato puree
2 cups cooked white beans
1/4 cup sun-dried tomato, chopped
1/2 teaspoon fresh savory, minced
1/2 teaspoon fresh oregano, minced
1/2 teaspoon fresh rosemary, minced
5 ounces frozen spinach, thawed
salt & freshly ground black pepper, to taste
8 ounces whole wheat pasta, cooked
1/4 cup freshly grated parmesan cheese, for garnish

Steps:

  • Cook the pasta according to the package directions. When it's done, drain and reserve a little of the cooking water (1/2 cup or so). Return to the pot and keep warm while the sauce cooks.
  • Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the onion, garlic, carrot, and celery and cook, stirring frequently, until soft, 2 or 3 minutes. Add the tomato puree, beans, sun-dried tomatoes, and herbs to the pot and stir well. Season with salt and pepper. Simmer over medium-low heat while the pasta cooks. Toward the end of the cooking time, add the spinach to the sauce and cook just until heated through.
  • Add the cooked pasta to the sauce and mix thoroughly, adding enough of the pasta water to make the sauce the consistency you like. Serve hot, garnished with the grated Parmesan.
