Keto No-Bake Coconut Balls image

No-Bake Coconut Balls are healthy keto snowball cookies with only 4 ingredients. Dairy-free, gluten-free, and raw vegan. A delicious paleo treat for Christmas with a pure-white color.

1 1/2 cup Unsweetened Desiccated Coconut
1/2 cup Almond Flour
3 tablespoons Erythritol (- Monk fruit or xylitol or erythritol)
1/3 cup Water
3 tablespoons Coconut Oil
1 1/2 cup Unsweetened Desiccated Coconut
1/2 cup Almond Flour
3 tablespoons Sugar-Free Maple Syrup (or blue agave or maple syrup or honey (if not vegan))
2 tablespoons Water (or coconut water + 2 extra tablespoons if too dry)
2 teaspoons Pure Coconut Extract (- optional)
1/4 cup Sugar-free Powdered Sweetener

Steps:

  • Cover a plate with parchment paper. Set aside.
  • In a food processor, with the S blade attachment add all the ingredients, unsweetened desiccated coconut, almond flour, sweetener, melted coconut oil, and water.
  • Process on medium speed for 1-2 minutes until it forms a sticky wet dough easy to bring together in your hands to shape balls. If too dry, add an extra 1 tablespoon of water up to 2 tablespoons in total. Process again until it sticks together.
  • Stop the food processor and scoop out some coconut ball dough in your hands. Roll to form a ball, place on the prepared plate. Repeat until you form 16 balls.

2 cups desiccated coconut, unsweetened
½ cup icing sugar
1 teaspoon salt
1 teaspoon vanilla extract
⅔ cup sweetened condensed milk
dark chocolate
almond

Steps:

  • In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
  • Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
  • Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
  • Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).
  • Enjoy!

  • Add 4 tbsp melted butter or coconut oil to 2 cups chocolate chips and microwave for about a little more than a minute in the following pattern: 20 seconds+20 seconds+10 seconds+10 seconds+10 seconds, stirring after each one. As soon as the chocolate is mostly melted stop heating and stir until the chocolate is smooth.
  • Stir coconut with the melted chocolate. If the mixture clumps up, heat in the microwave for 10 seconds until the mixture is easy to stir. Using a tablespoon or a small ice cream scoop take a little bit of the coconut mixture, add an almond to the middle of it. Try to make the candies very small, the ingredients are rich and you want them to be one small bite.
  • Using hands (you can wear disposable gloves to keep the mixture from sticking to your hands) form a ball, then roll between the palms of your hands until it's smooth. Now quickly while it's still somewhat soft roll in the coconut. If the chocolate hardens the coconut will not stick to the outside. If the coconut mixture becomes too hard to roll, just microwave the mixture for 5-7 seconds, stir and get back to rolling.
