2 - 3 libras of chicken wing drummettes and flats
2 tablespoons olive oil
1/2 cup Crystal's Hot Sauce
2 - 3 tablespoons Ted Readers Bone Dust BBQ rub (recipe found here) or your favorite rub
1/2 cup ranch dressing
1/2 cup mayonnaise
1/4 cup whipping cream
juice of 1 lemon
1 teaspoon fresh sage, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon tablespoons fresh thyme, chopped
1 tablespoon Worcestershire sauce
2 tablespoons Tabasco® sauce
4 cloves garlic, minced
1/4 cup Parmesan cheese, grated
salt to taste
fresh ground black pepper to taste

Steps:

  • Toss the wings together with the olive oil, Crystal's and bone dust in a large sealable container and allow to marinate in the fridge for at least 4 hours but better yet, over night.
  • Remove from fridge 30 minutes prior to grilling and rest at room temperature.
  • Preheat grill to medium heat. Grill the wings until done. this may take about an hour depending on your grill, wind conditions, etc. Just be careful of flare ups! The wings are fatty and can go u pin flames in no time.
  • Whisk the reaming ingredients together in a large bowl. Add the sauce to the wings in increments and toss just until coated.
  • You don't want to drench them in this sauce, just a nice coat.

3 lbs chicken wings (use the plumpest chicken wings you can find)
1/2 cup margarine or 1/2 cup butter
1 cup soy sauce
1 cup brown sugar
3/4 cup water
1/2 teaspoon dry mustard
3/4 teaspoon garlic powder (optional)

Steps:

  • Arrange wings in shallow baking pan.
  • Heat butter, soy sauce, sugar, water mustard and garlic powder if using, until butter and sugar melt.
  • Cool; pour over wings and marinate at least 2 hours, turning once or twice.
  • Bake in same pan at 375F for 1-1/4 to 1-1/2 hours, turning occasionally. (Use the plumpest chicken wings you can find; if your market only has the normal scrawny ones, don't cook longer than 75 minutes)
  • Drain on paper towels and serve.

I got this recipe from Las Casas restaurant in Temple, TX. They claim to be famous for these White Wings...I'd never heard of them til I moved to this area, but I will say the White Wings are outstanding!!

Number Of Ingredients 4

4 (8 ounce) boneless chicken breasts
32 slices thin sliced bacon
1 lb monterey jack cheese, cut into 1 inch cubes
16 slices pickled jalapeno peppers

Steps:

  • Cut each chicken breast into 4 strips.
  • Place a cheese cube and one slice of jalapeno on each chicken strip and roll up.
  • Wrap one slice of bacon around each rolled up chicken slice, forming a ball; then wrap another slice of bacon the opposite way.
  • Tuck the bacon into the chicken ball, using toothpicks to hold in place.
  • Grill at medium heat for 20-30 minutes, rotating constantly to ensure the meats are cooked through.
  • Cheese will start to ooze out and bacon will be crispy when done.
  • NOTE: You can speed up the cooking process by blanching the chicken balls in a fryer first for about 3-4 minutes.
  • Serve with flour tortillas, salsa, sour cream, or pico de gallo.
