8 ounces uncooked linguine
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 teaspoons finely chopped fresh garlic
1 teaspoon dried parsley flakes
1/2 cup dry white wine *
16 ounces medium (31 to 35 count) raw shrimp, peeled, deveined
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain; keep warm. Set aside.
  • Melt Butter with Olive Oil & Sea Salt in 12-inch skillet over medium heat until sizzling. Add garlic and parsley; sauté 30 seconds. Add wine; cook 1 minute. Add shrimp; cook, turning once, 2-3 minutes or until shrimp are pink.
  • Add hot, cooked pasta. Toss lightly until pasta is well coated. Sprinkle with Parmesan cheese.

Seafood Linguini With White Wine Sauce image

We were craving shrimp and white wine sauce on night, and this is what I came up with. Bay scallops were on sale at the store, so I threw those in too. Please feel free to use any white wine you like. I happened to have a nice bottle of sauvignon blanc on hand, and it worked just fine. As a matter of fact, it tasted amazing. Note on the sea salt: I have some Tuscan flavored sea salt which is what I used for seasoning. If you don't have a flavored salt, please feel free to add some dried spices to taste such as dried Italian spice or a little rosemary. This also tastes great reheated the next day after the pasta absorbs more of the sauce.

1 lb linguine
1 lb shrimp, peeled and deveined
1/2 lb bay scallop
2 tablespoons extra virgin olive oil
3 tablespoons garlic, minced
3/4 teaspoon crushed red pepper flakes
3 tablespoons butter
1 1/2 cups white wine (sauvignon blanc)
1 teaspoon lemon zest
sea salt (Tuscan Seasoned)
ground black pepper, to taste
fresh parsley, chopped, to garnish

Steps:

  • Cook linguini according to package directions.
  • In a large skillet over medium heat, warm the olive oil.
  • Add garlic and crushed red pepper and cook for a couple minutes until fragrant.
  • Melt a couple tablespoons of the butter into the olive oil and garlic, and add the shrimp.
  • Add the white wine and bring to a boil.
  • Reduce heat and simmer for another 3-5 minutes until wine reduces.
  • Add scallops, remaining 1 tbsp of butter and lemon zest.
  • Cook sea scallops for another couple minutes until just warmed through.
  • Season with salt and pepper to taste.
  • When pasta is cooked , drain and add to a large serving bowl.
  • Top linguini with the seafood and white wine and sprinkle with the chopped parsley.
  • I like to let the pasta sit for a bit covered in foil to absorb some of the sauce before serving.

This white wine linguine, made with pasta, chicken stock, butter, Parmesan cheese, and (gasp!) an entire bottle of white wine, is quick and easy enough for a weeknight, yet elegant enough for entertaining.

Kosher salt (to taste)
1 pound linguine (or any other long pasta)
1/4 cup extra-virgin olive oil (plus more for drizzling)
1 clove garlic (smashed and thinly sliced)
One (26-ounce) bottle Sauvignon Blanc*
1 cup canned or homemade chicken broth
Freshly ground black pepper
1/4 cup finely grated Parmigiano-Reggiano or other hard (sharp cheese, plus more for garnish)
1 tablespoon (1/2 oz) butter

Steps:

  • Bring a large pot of generously salted water to a boil. Add the pasta and boil just until the pasta can fully bend but remains undercooked, 5 to 6 minutes.
  • Before draining the pasta, ladle 1 cup (237 ml) of the pasta water into a measuring cup. Drain the pasta.
  • Meanwhile, in a large, deep-sided skillet over medium-low heat, warm the olive oil until hot and shimmery. Add the garlic and cook until golden, 2 to 3 minutes.☞TESTER TIP: Be careful not to let the garlic brown or it'll taste bitter.
  • Remove the skillet from the heat. Slowly and carefully add the bottle of Sauvignon Blanc as it may splatter at first.
  • Pour in the chicken broth. Raise the heat to medium-high and bring to a boil.
  • Add the drained pasta to the skillet along with 1/2 cup (118 ml) of the reserved pasta water. Season with salt and freshly ground pepper. Keep the mixture at a boil and use tongs to toss the pasta frequently to prevent sticking.
  • Cook until the pasta is al dente, tender yet firm to the bite, and the liquid has been almost but not completely absorbed, tossing frequently, about 10 minutes.
  • If needed, add a little more of the reserved pasta water to keep the sauce slightly loose. Keep a watchful eye as cooking times will differ depending on the type and brand of pasta.
  • Add the cheese, a little at a time, while tossing with the tongs so the cheese melts evenly and doesn't stick to the skillet.
  • If a thinner sauce is desired, toss in a little more of the reserved pasta water. Keep in mind the sauce will thicken upon standing.
  • Turn off the heat and add the butter, gently tossing to create a silky glaze. Taste and adjust the seasonings, if necessary.
  • Drizzle lightly with more oil. Season with freshly ground pepper and more cheese and serve immediately.

Extra-virgin olive oil
9 cloves garlic, smashed
5 dozen littleneck clams, scrubbed under cold running water
1 cup white wine
1/2 cup water
1 large pinch crushed red pepper flakes
1 pound linguine
2 tablespoons butter
2 tablespoons chopped Italian parsley leaves
2 tablespoons chopped oregano leaves
1 cup grated Parmigiano-Reggiano, optional, plus shavings for garnish
Kosher salt
Big fat finishing extra-virgin olive oil (high quality)

Steps:

  • Coat a large saute pan with olive oil and add half the garlic cloves. Bring the pan to a medium- high heat and cook until the garlic becomes golden brown. When the garlic is golden brown and very aromatic, remove it and discard, it has fulfilled its garlic destiny. Put 3 1/2 dozen clams in the pan with the wine and 1/2 cup of water. Cover the pan and bring it to a boil over medium heat. Cover and cook until the clams open, about 10 minutes. Remove the clams from the pan and reduce the cooking liquid. Let the clams cool slightly, then remove them from the shells and reserve. Discard the shells. Pour the cooking liquid into a measuring cup.
  • Bring a large pot of well salted water to a boil over medium heat.
  • Coat the same saute pan again with olive oil and add the remaining garlic cloves and a large pinch of crushed pepper flakes. Bring the pan to a medium-high heat and cook until the garlic becomes golden brown. When the garlic is golden brown and very aromatic, remove it and discard, it has fulfilled its garlic destiny. Add the remaining raw clams and reserved clam cooking liquid to the pan. When adding the reserved clam liquid, be sure to check for sand and grit in the bottom, you may lose the last couple of tablespoons of juice but that is better than sand in your pasta! Cover and cook until the clams open.
  • While the clams are cooking, drop the linguine into the salted boiling water and cook until the pasta is very "al dente" maybe a minute or so less than the box directs.
  • Remove the cooked clams in their shells from the pan and keep warm. Add the butter and cooked clams that have been removed from their shells back to the pan. Bring the liquid to a boil and toss in the cooked pasta and the herbs. Cook the pasta together with the sauce until the sauce clings to the pasta. Turn off the heat and toss in the grated Parmigiano-Reggiano, if using, and finish with a drizzle of big fat finishing oil. Toss or stir vigorously to combine.
  • Divide the pasta into serving dishes and garnish with the clams that are still in their shells and a little more shaved Parmigiano-Reggiano, if desired.
  • This won't make you want to clam up!

1/4 cup extra-virgin olive oil
1 teaspoon red pepper flakes
4 to 6 cloves garlic, finely chopped
1 tin flat fillet of anchovies, drained, 6 or 7 fillets
2 tablespoons fresh thyme leaves, 4 or 5 sprigs stripped or 1 1/2 teaspoons dried
1 cup dry white wine
1 cup clam juice or chicken stock
1 can (15 ounces) fancy whole baby clams
1 lemon, zested
1 pound linguini, slightly undercooked, about 6 to 7 minutes
1/4 cup chopped parsley leaves
Lots of black pepper and some coarse salt
Crusty bread, for mopping

Steps:

  • Heat a large deep skillet over medium heat. Add extra-virgin olive oil, 4 turns of the pan in a slow stream, red pepper flakes, garlic and anchovies and cook until anchovies melt into the oil. Add thyme and wine. Reduce wine 1 minute. Add clam juice or stock, clam juice will give the dish a stronger clam flavor, chicken stock will give it a buttery personality. Stir in clams and lemon zest. Drain pasta. Add to skillet and toss with sauce 2 to 3 minutes, until pasta is al dente and has absorbed some of the sauce and flavor. Add parsley, pepper and salt, to your taste and serve with bread for mopping up remaining juices.

¼ cup olive oil
1 clove garlic, minced
¾ cup chopped parsley

Steps:

  • In a large pot with boiling salted water cook linguini pasta until al dente. Drain.
  • In a large skillet saute the garlic in the olive oil. Add the liquid from the clams, parsley, white wine, basil, and salt and stir well. Cook for 10 minutes. Stir in clams until heated through.
  • Toss cooked and drained linguini pasta with the clam sauce and serve warm.

light cream or milk
1/2 cup onion, chopped
2 tablespoons butter or 2 tablespoons margarine
2 garlic cloves, minced
1/4 cup flour
1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup parsley, snipped
1/4 cup dry white wine
parmesan cheese

Steps:

  • Combine reserved clam juice and milk to make 2 cups.
  • Cook onion in butter until tender.
  • Add garlic; cook 30 seconds.
