1/2 cup butter
1 cup white chocolate chips
2 eggs
1/2 cup sugar
1 cup all-purpose flour
1 teaspoon vanilla
3/4 cup apricot jam
1 cup white chocolate chips
1/4 cup sliced hazelnuts (or you can use sliced almonds)

Steps:

  • Melt butter and 1 cup white chocolate chips in small saucepan, stirring until smooth; set aside.
  • Beat eggs and sugar on high speed of electric mixer until thick and light, about 5 minutes.
  • Stir in melted chocolate mixture, flour and vanilla.
  • Mix well.
  • Spread half of batter in greased 9" square cake pan.
  • Bake at 325°F for 20-25 minutes, or until light golden.
  • Cool 5 minutes.
  • Spread jam on top.
  • Stir 1 cup white chocolate chips into remaining batter.
  • Drop by spoonfuls evenly over jam.
  • Spread out gently.
  • Sprinkle with nuts.
  • Bake 30-40 minutes longer, or until set.
  • Cool completely then cut into squares.

Amazing cookies so much flavour. I dip mine in bittersweet chocolate for a fancier cookie. Easy to vary ingredients in this recipe, try using candied ginger and hazelnuts or brazilnuts instead of apricots and almonds.

1/2 cup butter
1 1/2 cups sugar, white
2 large eggs
3 ounces white chocolate, baker, melted
2 3/4-3 cups flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2 tablespoons orange juice
1 teaspoon orange rind
1 teaspoon almond extract
3 ounces white chocolate, baker, chopped
3/4 cup almonds, whole coarsley chopped, toasted
3/4 cup dried apricot, coarsley chopped

Steps:

  • Preheat oven to 350 degrees.
  • Beat butter, sugar and eggs together in large bowl.
  • Add in melted, cooled white chocolate.
  • Add all remaining ingredients making sure to blend well.
  • Dough will probably be sticky.
  • Grease and flour 2 cookie sheets.
  • Spoon half of the cookie dough evenly onto both cookie sheets and shape into a long wide log.
  • Bake for 30 minutes then cool for 10 minutes.
  • Cut into 3/4" wide slices.
  • Return cookies back to sheet and cook another 20 minutes, making sure to turn cookies once during last baking.
  • Cool and store in covered container.

3/4 cup butter, softened
1/2 cup confectioners' sugar
1 1/2 cups flour
1 (10 ounce) package white chocolate chips or 1 (10 ounce) package vanilla chips
1/4 cup whipping cream
1 (8 ounce) package cream cheese, softened
raspberries
kiwi
peach (etc.)

Steps:

  • Heat oven to 300°F.
  • Beat butter and sugar until light and fluffy.
  • Blend in flour.
  • Press the mixture onto the bottom and up the side of a 12 inch round pizza pan.
  • Bake for 20-25 minutes or until just lightly brown.
  • Cool completely.
  • Carefully melt the vanilla or white chocolate chips and the cream either carefully on the stove on very low, stirring constantly, or in the microwave.
  • Beat in the cream cheese.
  • When crust is cool, pour on the melted chocolate/cheese mixture, spreading evenly.
  • Cover with plastic wrap and chill until ready to serve--at least 3 hours.
  • Slice the fruit of your choice and place on the tart in an attractive manner.
  • This is best eaten the same day it's made.
  • But there won't be any leftovers anyway.

WHITE CHOCOLATE & MACADAMIA TART

1 1/4 cups plain flour
150 g cold butter, chopped
1/2 cup macadamia nuts
1/3 cup icing sugar
2 egg yolks
1 teaspoon ice water
2 (180 g) blocks white chocolate, chopped
4 egg yolks
2 eggs
1/4 cup caster sugar
1/3 cup thickened cream
1 teaspoon vanilla extract
1/2 cup macadamia nuts

Steps:

  • Preheat oven to moderately slow, 160°C, and lightly grease a 23cm springform flan pan.
  • Place flour, butter, nuts and icing sugar in a food processor and process until well-combined, add egg yolks and water and process until the ingredients just come together.
  • Turn onto a lightly floured surface, knead gently, wrap in plastic wrap and chill for 30 minutes.
  • Roll out the pastry between 2 sheets of baking paper, ease into prepared pan, trim the edges and chill for 10 minutes.
  • Bake blind (see Note below) for 15 minutes, remove paper and filling, and bake for another 10 minutes.
  • FILLING: Melt 250g chocolate in a small saucepan over a low heat; in a small bowl, using an electric beater, beat the egg yolks, eggs and caster sugar until the mixture is thick and creamy; stir in the cream, vanilla extract and melted chocolate.
  • Sprinkle the pastry base with macadamia nuts, pour the chocolate mixture into the pastry case; bake for 35-40 minutes or until the filling is set.
  • Cool to room temperature.
  • Serve the tart, drizzled with the remaining melted white chocolate.
  • NOTE: To blind bake, put rice, dried beans or pastry weights in the pastry shell, then bake as directed.

1 cup dried apricot, cut into small pieces and firmly packed
1 1/2 cups water
3 tablespoons Cointreau liqueur (or grand marnier)
1/4 cup white wine
1/2 cup white sugar
1/2 cup soft light brown sugar
1 cinnamon stick
0.5 (425 g) packet frozen puff pastry (ready rolled, thawed)
2 ounces chopped roasted almonds
1 ounce demerara sugar
dusting ground cinnamon
2 ounces white Belgian chocolate

Steps:

  • To make the filling, put the apricot pieces in a medium sized bown. Bring the water to a boil and pour over the apricots along with the white wine and the cointreau. Cover and set aside to soak for at least 30 minutes up to an hour.
  • Transfer the apricots and their soaking water to a saucepan and add the cinnamon stick and white and brown sugars. Bring to a boil, then reduce the heat and simmer, stirring occasionally until the mixture has a thick and jam like consistency, anywhere from 45 minutes to an hour. Set aside to cool. Remove cinnamon stick.
  • Pre-heat the oven to 205*C/425*F. Unroll the puff pastry. Cut out five or six 4 inch circles from it with a sharp cutter. Take a smaller 3 inch cuter and make another light indentation in the centre of the circle. (there should be a 1/2 inch border all around) Place on a baking sheet lined with parchment paper. Sprinkle the border with the demerara sugar and then dust with cinnamon lightly.
  • Spoon heaping TBS of the filling into the centre of the pastry, spreading it right up to the border indentation. Do not be tempted to overfill as the mixture will spread upon heating in the oven. Sprinkle the toasted almonds over top of each.
  • Bake for 15 to 20 minutes in the pre-heated oven until the filling is bubbly and the pastry is lightly browned and crisp. Remove from the oven and immediately remove from the pan with a spatula to a wire rack to cool completely.
  • Melt the white chocolate in the microwave for 20 to 30 seconds until quite soft and melted. Take a fork and drizzle the white chocolate decoratively across the tarts. Let cool completely before serving.
