4 large red or yellow bell peppers, preferably Holland
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 500 degrees.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil over the peppers. Cover with plastic wrap and refrigerate for up to 2 weeks.

1 large red bell pepper
1 large poblano pepper
1 cup yellow cornmeal
1 cup all purpose flour
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon kosher salt

1/4 teaspoon cayenne pepper
3/4 cup sour cream
1/2 cup buttermilk
2 large eggs
3 tablespoons melted butter, cooled slightly, plus 1 additional tablespoon for pan
2 tablespoons canola oil
1 cup frozen corn kernels, thawed

Steps:

  • Place a 10-inch cast iron skillet on middle rack in oven and preheat to 425°F. Roast red bell pepper and poblano over an open flame on a gas stove or grill until skins are completely charred. Place in a bowl, cover with plastic wrap, and let sit until cooled, 5 to 10 minutes. Peel off charred skins; remove stems and seeds. Finely copy flesh of peppers.
  • In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, salt, baking soda, and cayenne pepper. In a separate medium bowl, whisk together sour cream, buttermilk, eggs, 3 tablespoons melted butter, and canola oil. Pour wet ingredients into bowl with dry ingredients and whisk until completely combined. Stir in chopped peppers and corn.
  • Using pot holders, carefully remove hot pan from oven. Place 1 tablespoon butter in skillet and swirl to completely melt and coat inside of pan. Pour in cornbread batter and place in oven. Bake until skewer inserted into middle of cornbread comes out clean, about 20 minutes. Let bread cool in pan for 5 minutes, then carefully turn out to wire rack and let cool an additional 10 minutes. Serve immediately. Reheat any leftover cornbread before serving again.

Cornbread is one of my favorite foods. Slightly sweet with just a hint of crunch from the corn, if it's moist, it's perfect, and this recipe is nice and moist.

1 cup roasted red peppers
2 tablespoons butter
1 cup yellow cornmeal (stone-ground )
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs (large)
1 cup milk

Steps:

  • To roast peppers see the instructions below. When the peppers are cooled and peeled, chop them into fairly small pieces. (Or use prepared roasted peppers to save time).
  • Preheat the oven to 400ºF.
  • Add the butter to a round or square baking dish. Warm the baking dish in the hot oven, making sure the butter does not burn (watch carefully).
  • Meanwhile, in a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt. In a small bowl, mix the eggs and milk. Pour the milk mixture into the cornmeal mixture. Stir with a fork until it is well blended. Stir in the roasted, chopped red peppers.
  • Remove the baking dish from oven and pour the batter into it. Stir gently to incorporate the melted butter into the cornmeal bread mix. Smooth the top. Bake for 20 minutes or until the bread pulls away from the sides of the pan and the top is set. Let cool on wire rack.

2 teaspoons honey
Freshly squeezed juice of 1/2 lime
2 cups cooked corn kernels (from 2 large ears)

1 medium shallot, thinly sliced
Handful of fresh cilantro, chopped
Sea salt and freshly ground black pepper

Steps:

  • For the dressing: Add the oil, vinegar, honey and lime juice to a deep bowl. Whisk to combine.
  • For the salad: Add the corn, peppers, shallot and cilantro to the bowl. Stir with a spoon until well mixed. Season with salt and pepper. 1 package (1/4 ounce) active dry yeast
2 tablespoons warm water (110° to 115°)
1-1/4 cups grated Parmesan cheese, divided
1/3 cup warm 2% milk (110° to 115°)
2 tablespoons butter, softened
1-1/4 teaspoons salt
3-1/4 to 3-3/4 cups all-purpose flour
1 large egg

Steps:

  • Place red peppers in a food processor; cover and process until pureed. In a large bowl, dissolve yeast in warm water. Add the red peppers, 1 cup cheese, milk, butter, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. 1 cup all-purpose flour
1 tablespoon baking powder
1/4 cup sugar
1 tablespoon ancho-chili powder
1 teaspoon salt
1 tablespoon minced fresh sage
1 dried red chili, seeded and cut into small pieces
1 cup buttermilk
1/3 cup extra-virgin olive oil
4 tablespoons unsalted butter, melted
1 large egg, lightly beaten
6 pounds bone-in pork shoulder, at room temperature
2 tablespoons dry mustard
2 tablespoons chili powder
2 tablespoons brown sugar
2 tablespoons ground ginger
1 tablespoon dried thyme
1 tablespoon salt
1 tablespoon black pepper
2 teaspoons ground clove
2 teaspoons cayenne
2 teaspoons ground cardamom
4 cloves garlic, minced
2 cups chicken stock
1/2 pound thick-cut smoked bacon, cut into 2-inch pieces
1 yellow onion, diced
1 sprig thyme
4 black peppercorns
2 cloves garlic, crushed

Steps:

  • Make the corn bread: Preheat oven to 400 degrees. Butter a 9-inch cast-iron skillet or deep pie dish. In a large bowl, sift together the dry ingredients. In a medium bowl, combine remaining ingredients. Add liquid mixture to the dry one and stir until just combined. Pour into skillet and bake for 20 to 25 minutes.
  • Meanwhile, trim the pork of excess fat. In a small bowl, combine all spices and sugar. Rub meat all over with minced garlic and the spice mixture, pressing firmly. Place on a rack set over a foil-lined baking sheet. When corn bread is done, lower oven to 325. Roast pork undisturbed for 4½ hours, or 45 minutes for each pound of meat.
  • While pork is roasting, make the bacon broth. Combine all ingredients in a medium saucepan. Bring to a boil, lower heat and cook at a bare simmer for 1 hour. Strain and discard solids. Refrigerate until fat has solidified and is easily removed.
  • Bring a large pot of water to a boil. Remove fava beans from their pods. Boil beans for 5 minutes. Drain and plunge into an ice-water bath. Once cool, drain and gently peel off and discard the skins. Set beans aside.
  • When pork has reached an internal temperature of at least 160 degrees, remove from oven to rest for 30 minutes. Carefully cut around the bone and pull out. Slice pork into 6-to-8-ounce slabs, each with some crispy skin. Warm the bacon broth. In each of 6 shallow bowls, add about â..." cup bacon broth and a mound of favas. Place a wedge of corn bread atop the favas. Top with a slice of pork.

1 pie crust
1 red bell pepper
1 tablespoon butter
2 tablespoons shallots, minced
1 ear of corn (shucked and kernels cut off the cob)
2 eggs
1 cup whole milk
1 teaspoon kosher salt
1/2 teaspoon pepper, freshly ground
2 tablespoons marjoram leaves, chopped fresh

Steps:

  • Heat oven to 400.
  • Place the pie pastry in a 9- or 10-inch tart pan with a removable bottom. Line the pastry with a sheet of aluminum foil and add pie weights, rice or dried beans. Place in the oven and bake until the edges are firm, about 10 minutes. Remove the foil and the weights and bake until the bottom is opaque, about 2/3 minutes. Remove and set aside to cool.
  • Over an open flame or on a grill, roast the pepper until it is charred. Place it in a plastic bag for 10 minutes, then peel and remove the seeds and the ribs. Dice the pepper and set aside.
  • Reduce the oven to 375.
  • In a frying pan, melt the butter over medium-high heat. When it has melted, add the shallots and the corn and sauté just until the shallots are translucent, about ½ minutes. Remove and set aside.
  • In a bowl, combine the eggs, milk, salt and pepper and beat with a whisk to blend. Add the oregano and the reserved corn and shallot mixture. Squeeze the peppers to remove any excess liquid and add to the bowl.
  • Pour the mixture into the tart pan and bake until slightly puffed and a knife inserted into the middle comes out clean, about 25-30 minutes. Remove to a rack and let cool a minimum of 15-20 minutes before serving.
