FRENCH BUTTERCREAM
Creamy, airy, and silky is the best way to describe this French buttercream. It will become your new go-to frosting for cupcakes, cakes, and more.

Steps:
- Cook the sugar: Without stirring, bring the sugar mixture to a gentle boil and use a candy thermometer to monitor the temperature. The sugar needs to reach 240°F (115°C). This should take no longer than 6 minutes.
- Whip the egg yolks: While the sugar comes to temperature, get to work on the egg yolks. Add egg yolks and salt to the bowl of a stand mixer fitted with the whisk attachment. Whisk the yolks over medium speed until they are a very pale yellow color and fluffy, about 5 minutes.
- Store the buttercream: Use the buttercream as desired immediately or store for 3 to 4 days in a covered container in the refrigerator.

BUTTERMILK-MOLASSES ICE CREAM
A not-too-sweet ice cream with a hint of molasses and plenty of buttermilk tang!

Steps:
- Whisk eggs and molasses together in a medium bowl until combined. Set aside.
- Combine cream, buttermilk, brown sugar, vanilla extract, salt, and cinnamon in a medium saucepan over medium heat. Cook, stirring frequently, until sugar is dissolved and mixture begins to bubble around the edges, about 5 minutes.
- Add 1/2 of the hot cream mixture very slowly into the egg-molasses mixture, whisking constantly. Pour the tempered egg mixture back into the pan with the remaining hot cream mixture. Reduce heat to medium-low and continue to cook until mixture is slightly thickened and coats the back of a spoon, about 8 minutes.
- Strain custard through a fine-mesh sieve into a medium bowl. Cover with plastic wrap touching the top of the custard to avoid forming a skin. Cool completely in refrigerator, 4 hours to overnight.
- Pour custard into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

WHOLE-EGG LEMON BUTTERCREAM

- Bring 1 cup water to just below a simmer in a medium saucepan over medium-low heat. Using a handheld whisk, combine eggs, sugar, and salt in the bowl of a stand mixer. Place bowl on top of saucepan (it should not touch water) and cook egg mixture, whisking constantly, until lightened in color, thickened slightly, and an instant-read thermometer registers 160°F. Remove from heat and beat with stand mixer fitted with the whisk attachment on medium speed until completely cooled and tripled in volume, about 10 minutes. Add butter, 1-2 Tbsp. at a time, beating well after each addition until fully incorporated. Add vanilla and lemon curd and beat on medium-low speed until just combined.
- Do Ahead
- Buttercream can be made and refrigerated up to 5 days in advance or frozen up to 1 month. To use refrigerated buttercream, let sit at room temperature until soft, at least 2 hours. Beat with stand mixer fitted with the paddle attachment on medium speed until smooth. If texture is not smooth, beat in a little water, 1 tsp. at a time. To defrost, transfer buttercream from freezer to refrigerator to thaw overnight. Then follow the instructions for using refrigerated buttercream.
BUTTER CREAM FROSTING I
This is a frosting I normally put on birthday cakes. Its like the frosting that bakeries put on cakes, but I much prefer to make my own since I know what I am putting into it, and as always, homemade is best.

- Cream butter until soft. Add salt and part of sugar gradually, blending after each addition. Then add egg yolks and vanilla; blend well. Add remaining sugar, alternately with milk, until of right consistency to spread, beating after each addition until smooth. Makes 2 1/2 cups or enough frosting to cover tops and sides of two 8 or 9 inch layers.

- Whisk together the sugar and water in a deep heavy saucepan and bring to a boil over medium-high heat. Cook this sugar syrup, undisturbed, until it reaches 240°F/116°C.
- Meanwhile, while the sugar syrup is boiling, whip the eggs and salt in the bowl of a stand mixer with a balloon whisk/whip attachment on medium speed until well beaten.
- Once the sugar syrup is ready, and with the mixer running, very slowly pour the hot syrup onto the egg mixture, avoiding the beater and the sides of the bowl. Continue to beat on high until buttercream is completely cool, which could take several minutes.
- Once the buttercream is cool to the touch, add the butter, a piece at a time, beating on a medium-high speed all the while. Keep beating until all of the butter is added and the buttercream is smooth and creamy. Beat in vanilla. Buttercream is ready to use. Buttercream is best if used immediately. It can also be refrigerated in an airtight container in refrigerator or freezer. It MUST be brought back to a warm room temperature and re-beaten before using. If re-beating after chilling, use the flat paddle attachment.
