Here's a copycat version of the delicious Whole Foods Curry Chicken Salad. This salad can be served right out of the bowl, or on top of lettuce or toast. Gluten-free and dairy-free.

1 pound boneless, skinless chicken breasts (about 3 pieces), cooked and cut into 1-inch chunks
½ cup prepared mayonnaise
¼ cup prepared mango chutney
¼ cup sliced or chopped almonds, toasted
2 tablespoons curry powder
2 tablespoons dried currants (you can also use dried cranberries or raisins, if you prefer)

Steps:

  • In a medium mixing bowl, combine the cooked chicken, mayonnaise, mango chutney, almond, curry powder, and dried currants.
  • Stir to combine. Refrigerate the salad for 30 minutes to let the flavors meld, or serve immediately.

3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.

1.25 lb. boneless skinless chicken thighs
extra virgin olive oil
kosher salt
pepper
1/2 c. mayo
1/4 c. mango chutney
2 T. black currants
1 green onion (sliced (plus more for garnish))
1/4 c. almonds (toasted (plus more for garnish))
2 T. curry powder

Steps:

  • Preheat oven to 400 degrees. Place chicken thighs on a baking sheet, drizzle with extra virgin olive oil and sprinkle both sides of the meat with salt and pepper.
  • Roast for 20 minutes or until juices run clear in thighs. Allow to cool.
  • Slice chicken thighs into small chunks and place in a medium bowl.
  • Add remaining ingredients and mix well. Garnish with almonds and green onions. Say Grace and enjoy!

Delicious main dish salad, perfect for a summer lunch or light supper. I typically use Madras (hot) curry powder, but used a mild blend in this dish as I felt it would benefit from a lighter flavor. Use your own preference and adjust the amount to suit your taste. I garnished with fresh cilantro to add some color, but also ended up really enjoying the flavor it added. 4 cups water
1 3/4 cups chicken broth (I skipped and just used water to cook the breasts)
1 1/2 lbs boneless skinless chicken breasts
1/2 cup mayonnaise
1/3 cup plain yogurt
5 teaspoons curry powder (or to taste)
1 tablespoon fresh lime juice
1 teaspoon honey
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium red onion, chopped (1 cup)
1 (3/4 lb) firm-ripe mango, peeled, pitted, and chopped
1 cup red seedless grapes, halved
1/2 cup salted roasted cashews, coarsely chopped

Steps:

  • Bring water and chicken broth to a simmer in a 2- to 3-quart saucepan.
  • Add chicken and simmer, uncovered, 6 minutes.
  • Remove from heat, cover pan, then let stand until chicken is cooked through (about 15 minutes).
  • Move chicken to a plate, let cool 10 minutes, then chop into 1/2-inch pieces.
  • While chicken is cooling, whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl.

1 tbsp sugar
1 tsp all purpose flour
1/2 tsp sea salt
1/4 tsp white pepper
1/4 tsp powdered mustard
2 1/2 tbsp cider vinegar
3 tbsp water
1 egg yolk, lightly beaten
2/3 cup mayonnaise
Chicken Salad
5 cups chicken, cubed
3 stalks celery, diced
1/2 red onion, chopped
2/3 cup dressing
1/2 cup sour cream
2 tsp sea salt or to taste
1 tsp white ground pepper or to taste

Steps:

  • To make Dressing 1.In abowl, whisk sugar, flour, salt, pepper and mustard, set aside.In a small saucepan, bring vinegar and water to a boil. Very slowly and gradually, add the boiled mixture to the egg yolk, stirring constantly, until its warm to touch. If any egg solidifies, pick it out and discard. Gradually add wet mixture to the dry ingredients, whisking constantly to combine 2.Reduce heat to low and pour mixture back into saucepan. Stirring constantly, heat the mixture until thickened ,2-3 minutes. DO NOT ALLOW TO BOIL.Remove from heat, transfer to bowl and cool completely. Mixed boiled dressing with mayonnaise To make chicken Salad 1. Put celery and red onion in food processor--pulse to chop lightly. Return to final serving bowl.Add chicken to serving bowl.
