Wholemeal pikelets are a great snack or breakfast for babies toddlers and children, perfect texture for baby-led-weaning

Number Of Ingredients 6

1 cup wholemeal flour (160g)
2 teaspoon baking powder
½ teaspoon cinnamon (optional)
¾ cup milk (180 ml)
1 egg
½ teaspoon vanilla (optional)

Steps:

  • Heat a pan over medium heat
  • Place dry ingredients into a medium mixing bowl, use a whisk or fork to combine them well, ie to make sure the baking powder is evenly dispersed through the flour
  • Add the wet ingredients and whisk until combined
  • Grease heated pan with either butter or oil
  • Drop spoonfuls of pikelet mix onto the pan, cook for 1-2 minutes (you should start to see bubbles forming on the surface of the pikelet, this means they are ready to flip
  • Cook for a further 1-2 minutes on the other side

Number Of Ingredients 5

1 cup wholemeal self-rising flour
1/4 cup unprocessed natural bran
1/4 cup raw sugar
1 egg
3/4 cup milk

Steps:

  • Combine all ingredients in a blender.
  • Process till smooth.
  • Heat frypan to moderately high.
  • Grease lightly.
  • Drop dessertspoons of batter into pan.
  • Allow room fror spreading and turning.
  • Cook till bubbles appear on top.
  • Turn and cook other side till golden brown.
  • Serve warm with butter.

These are so yummy, I just pick them up and eat them with my fingers (not very ladylike I know) but is great served with cream and berries or ice cream or however you like them really. These are even lovely cold, take along to picnics and spread with jam and a little cream, or just jam by itself.

2 tablespoons sugar
2 teaspoons baking powder
1 egg, beaten
3/4 cup milk
2 tablespoons butter, melted

Steps:

  • Mix all of ingredients.
  • Cook like pikelets.
  • (Take a tablespoon of the batter at a time and drop in a frypan with butter and basically cook as if it were an American pancake - brown underneath and then turn over - should be a lot smaller than normal pancakes).
