- In a bowl, combine flours, sugar, baking powder, cream of tartar and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg and milk; stir into dry ingredients until a ball forms. , Turn onto a floured surface, knead 5-6 times. Roll to 1/2-in. thickness; brush with butter. Cut with a 2-in. biscuit cutter. Place on an ungreased baking sheet. Bake at 450° for 10-12 minutes or until golden brown.

Steps:
- Combine flours, baking powder and salt in a bowl.
- Cut in margarine with a pastry blender or 2 knives.
- Add milk, mix quickly.
- Turn out onto a floured board.
- Knead 6 to 8 times.
- Roll 1/4 inch thick.
- Cut into 12, 2 inch round biscuits or into wedges or squares.
- Place on a lightly greased baking sheet.
- Bake in a 425°F oven 12 to 15 minutes until lightly browned.
- For herb biscuits, add basil, thyme and parsley to dry ingredients.
- (These make great dumplings).
WORLD'S BEST WHOLE WHEAT BISCUITS
This is my favorite biscuit recipe, and it is so easy to make because there is no shortening to cut in. The bonus is they are made with healthy whole wheat. I always make these at Thanksgiving because I have plenty of heavy cream on hand. You can substitute white whole wheat flour or whole wheat pastry flour, but regular whole wheat flour works fine. And did I say they are easy? They can't fail. The recipe is from "1000 Vegetarian Recipes" by Carol Gelles

Steps:
- Preheat oven to 400 degrees F. Grease a baking sheet.
- In a large bowl, stir together both flours, the sugar, baking powder, and salt.
- Using a fork, gradually stir in the cream until a soft dough is formed.
- On a lightly floured board, knead the dough 10 to 12 times. Re-flour the board and pat into a circle or rectangle 1/2 inch thick. Using a 2 1/2-inch biscuit cutter, cut into biscuits (or just cut into 2 1/2-inch squares).
- Place on prepared baking sheet and bake 15 to 18 minutes or until golden on top.
- Variation: Add 1 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg to the dry ingredients.

WHOLE WHEAT BISCUITS WITH FLAX (OAMC OPTION ALSO!)
I finally perfected my baking powder biscuits recipe to accomodate whole wheat flour and flax seed. It took me awhile as straight substitutions didn't work well and the measurements were weird (5.3333 TBL, etc). I finally got the taste, texture and measurements down (for our tastes at least!) I use 'White-Whole-Wheat-Flour' by King Arthur Flours in the below recipe. I buy Ground Flax Seed from Costco (40 oz jar only $10). I use dry nonfat milk in my baking (cheaper and more convenient). If you don't have any on hand just substitute a little more than 2/3 C of fresh skim milk. My directions are using a Kitchen Aid Stand Mixer as that is what I always use when making my biscuits. Obviously you can adapt to your own mixing method. For OAMC-This recipe easily doubles. Form the biscuit dough into the flatten balls and place on a greased cookie sheet and place in the freezer. Once frozen, then place the dough into ziploc bags for freezer storage. You can then throw the frozen biscuits directly into the preheated 450 degree oven. They will take approximately 2-3 minutes longer to bake.

- -Preheat oven to 450 degrees and grease 8X8 inch square baking pan.
- -Mix together the flour, baking powder, salt, nonfat milk powder, and flax seed in the bowl of your mixer.
- -Add the butter and mix with the paddle attachment on your mixer. Mix until the butter is a little larger than pea sized pieces.
- -Add the water while the mixer is running. Once batter starts clinging to paddle it is done. You can always add a little more water at a time in case it is a dry day.
- -Scoop out the dough about 1/4 Cup at a time and form into a ball into your hand. Flatten out the dough ball and place in pan.
- -Bake for 12 minutes or until just turning golden brown on top.
FLUFFY WHOLE WHEAT BISCUITS
These light and fluffy biscuits, made with all-purpose and whole wheat flour, are perfect for breakfast or dinner.

- Combine all-purpose flour, whole wheat flour, baking powder, sugar, and salt in bowl. Cut in butter with a knife or pastry blender until mixture resembles coarse crumbs; stir in buttermilk until just moistened.
- Turn dough out on a lightly floured surface; knead gently 8 to 10 times. Roll to about 3/4-inch thickness; cut with a 2 1/2-inch biscuit cutter. Place biscuits on an ungreased baking sheet.
- Bake in preheated oven until biscuits are lightly browned, 10 to 12 minutes.

- Preheat the oven to 450 degrees F.
- Whisk together the flour, baking powder, and salt in a large mixting bowl.
- Cut in the oil with a fork or pastry blender until the mixture resembles coarse crumbs.
- Using a fork, stir in just enough of the milk so that the dry ingredients are moistened and the dough comes together.
- (Too much milk will make the dough sticky; too little will make the biscuits dry.) Gather the dough in a ball and turn it out onto a lightly floured work surface.
- Knead it gently 20 to 25 times.
- Then smooth it into a ball.
- Roll or pat the dough into a 1/2-inch thick round and cut it with a floured 2 1/2-inch biscuit cutter or the rim of a glass.
- Push the center straight down into the dough without twisting it.
- Reroll and recut the scraps of dough.
- Place the biscuits on an ungreased baking sheet about an inch apart for crusty sides or touching for soft sides.
- Bake on the center shelf of the oven for 10 to 12 minutes, or until the bottoms are lightly browned.
- Do not overbake.
- Serve hot or warm.
WHOLE-WHEAT COUSCOUS WITH ALMONDS
Using whole-wheat couscous adds fiber to this side dish. Serving it at room temperature, rather than chilled, allows the flavors to come through.

- Place the couscous in a medium bowl and pour 1 1/2 cups of boiling water over it. Stir, cover, and let it stand 10 minutes.
- Meanwhile, in a small skillet, toast the almonds over medium heat until lightly golden, about 3 minutes; remove from heat.
- Uncover the couscous and add the almonds, oil, tomato, parsley, capers, and garlic. Season the mixture with salt and fluff with a fork. Serve at room temperature.

PERFECT WHOLE WHEAT BISCUITS
These biscuits are sooo delicious! A mix of white and wheat flour makes them light yet healthy. It is preferable to use a soft winter wheat flour for your all purpose flour. My local health food store purchases super fresh ground flour from a nearby flour mill so it makes for spectacular baking! I usually make a double batch and cut them to be the super sized biscuits so that we can make breakfast biscuits with eggs, bacon and cheese! I don't change the recipe at all, ever. Tip: my grandmother always said that to make good, flaky biscuits handle the dough as little as possible, barely kneading it at all.

- Preheat oven to 375 degrees. Use parchment paper on baking pan if you have it on hand.
- Put both of the flours, the baking powder, sugar and salt in large mixing bowl.
- With a pastry cutter or your fingertips gently cut in butter until it resembles coarse cornmeal.
- Make a well in the center and add half and half. Stir gently until mixture forms somewhat of a ball.
- Place on a lightly floured surface and gently knead until a mass is formed.
- Roll to a 1" thickness and cut into circles with flour dipped 2" biscuit cutter.
- Place on baking pan and brush tops with the 3 tbsp of half and half and sprinkle with sugar.
- Bake for 15 to 20 minutes or until lightly browned.
- Serve hot for best flavor!
