BASIC HOMEMADE BREAD



Basic Homemade Bread image

If you'd like to learn how to bake bread, here's a wonderful place to start. This easy white bread recipe bakes up deliciously golden brown. There's nothing like the homemade aroma wafting through my kitchen as it bakes. -Sandra Anderson, New York, New York

Yield 2 loaves (16 pieces each).

Number Of Ingredients 6

1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)
1 tablespoon salt
6-1/4 to 6-3/4 cups bread flour
2 tablespoons canola oil

Steps:

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

Number Of Ingredients 10

1 cup bread flour
2 ¾ cups whole wheat flour
1 ¼ teaspoons salt
1 ¼ teaspoons baking soda
2 teaspoons white sugar
¼ cup margarine
2 cups buttermilk
¼ cup vegetable oil
1 tablespoon buttermilk
1 teaspoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a shallow baking pan with cooking spray.
  • Sift together the bread flour, whole wheat flour, salt, baking soda, and 2 teaspoons sugar in a bowl. Cut the margarine into the flour mixture until pieces are nearly indistinguishable. Make a well in the center of the mixture and pour in the oil and buttermilk. Stir with a spatula until dry mixture is completely moistened. Move the dough to a lightly-floured surface. Lightly knead the dough for no more than 1 minute. Place the dough into the prepared pan; pat down and around to form a round loaf. Cut a cross into the top of the loaf with your finger. Brush the top with 1 tablespoon buttermilk; sprinkle 1 teaspoon sugar over the top of the loaf.
  • Bake in the preheated oven for 30 minutes. Reduce heat to 375 degrees F (190 degrees C); rotate pan and bake another 30 minutes.
  • Allow loaf to cool on a wire rack before slicing.

Number Of Ingredients 7

2 1/2 cups lukewarm water
1 teaspoon sugar
1 teaspoon oil
3 1/2 teaspoons active dry yeast
5 1/2 cups bread flour
1/2 teaspoon salt

Steps:

  • Place water, sugar and oil in mixing bowl and stir lightly. Add yeast in water mixture, stir and let rest for 5 minutes or until water starts to bubble lightly. Mix flour and salt in a large bowl. Gradually mix in water mixture, stirring with a large spoon. When all ingredients are mixed thoroughly, remove from bowl. Knead dough into a round ball. Cover with a towel for about 5 minutes. Remove towel; cut dough into 8-ounce round balls. Cover again for about 5 more minutes. Remove towel; flatten balls into 1/4-inch thickness. Spread about 3 tablespoons of zahter with back of spoon to cover dough. Bake at 500 degrees for 10 minutes or until golden brown.

1/3 cup milk
1 tablespoon fresh chopped herbs
1 1/2 cups fresh crab meat
1 peeled, grilled, and diced Granny Smith apple
1 teaspoon sea salt
1/2 teaspoon cracked pepper
1/2 minced ginger
Apple reduction, recipe follows
Salal Berry Compote, recipe follows
6 cups organic apple juice
1 teaspoon cornstarch dissolved in 3 teaspoons water
1 diced white onion
1 tablespoon chopped garlic
1 tablespoon olive oil
2 cups white wine
2 cups orange juice
1/2 cup honey
4 cups salal berries
2 tablespoons chopped cilantro

Steps:

  • Preheat oven to 350 degrees F.
  • Combine butter and sugar in the bowl of an electric mixer and whip until pale yellow. Mix in eggs one at a time. Mix in one half the flour and the baking powder. Add the milk. Mix in the remaining flour. Add herbs, crab, apple, salt, pepper, and ginger. Butter six ramekins and fill each with batter. Bake for approximately 20 minutes. Serve with Apple Reduction and Salal Berry Compote.
  • Reduce apple juice to approximately 1/4 cup. Thicken with cornstarch mixed with water, if necessary.
  • Saute onions and garlic in olive oil until soft. Add white wine, orange juice, and honey and reduce until almost dry. Add salal berries and cook at medium heat until berries start to break apart. Season with salt and pepper. Add cilantro and cool.

1 cup regular rolled oats, plus additional
2 cups whole wheat flour
½ cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup melted butter
2 teaspoons vanilla extract
1 cup buttermilk
1 (12 fluid ounce) can or bottle Guinness® beer

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
  • Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
  • Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.
