ITALIAN WINE BISCUITS
Perfect with a dessert course of fruit and cheese, Italian Wine Biscuits are lightly sweet with subtle flavors of red wine, black pepper, and a bit of salt.

Steps:
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and pepper. Make a well in the center and add the vegetable oil and wine.
- Mix thoroughly and refrigerate for about 1 hour.
- Preheat the oven to 350°F.
- To form the biscuits, pinch off 1-inch balls of dough and gently roll into a small log about 1/2-inch in diameter.
- Bring the ends together to form a circle and pinch to close.
- Place the formed biscuits on a parchment-lined baking sheet. Brush with the egg-water mixture.
- Bake for 12 to 18 minutes until solid and slightly crisp on the outside.
- These cookies do not really brown, so test them after 12 minutes and time them according to your personal taste.
- Cool on wire racks and store in an airtight container.

- Sift flour salt and pepper onto mixing board.

- Blend together and gradually incorporate into flour.
- The dough will be stiff.

- Place in oiled bowl, turn to coat, cover with towel and let rise until doubled in bulk.
- Preheat oven to 375º.
- Break off small pieces of dough and roll into ropes about 6 inches long.
- Form a ring and pinch edges together.
- Place on baking sheet and let rise 20 minutes.
- Brush with oil and bake 12 to 15 minutes or until lightly browned.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
- Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.
- Bake at 350 degrees F (175 degrees C) for 25 minutes or until slightly brown. After cookies cool they should be hard and crisp.

Simple, biscotti-like cookies flavored with red wine, these biscuits are perfect for dunking.

- Pre-heat the oven to 350 degrees F.
- Mix the wine and oil together and set aside.
- Whisk together the flour, salt, baking powder and the cup of sugar.
- Add the wine and oil mixture to the dry ingredients and mix them together with a fork until they are well combined into a stiff dough. It is a light red, rather odd color.
- Pinch off about 2 tablespoons of the dough and roll/pull it into a 7-9 inch cigar or pencil shape.
- Form the cookie into a circle, bowtie, figure eight, or spiral. Brush the top with the beaten egg and sprinkle a bit of sugar on part or all of the top. alternatively, roll part of the cookie in sguar, just enough to lightly coat it. Place the cookie on a parchment or silicone mat-lined cookie sheet and repeat with the rest of the dough.
- Bake the cookies for 25-30 minutes, until lightly browned on the bottom and slightly hard to the touch.
- Let them cool for a few minutes on the cookie sheet, then remove them to a wire rack to finish cooling.
