After going to one of my favorite steak houses and having a similar sauce, I needed to learn how to make it; it's delish! You gotta try it.

2 tablespoons olive oil
1 shallot, diced
1 cup pinot noir wine
1 cup beef broth
1 tablespoon butter
1 tablespoon Italian seasoning
1 pinch salt to taste

Steps:

  • Heat olive oil in a small saucepan over medium heat. Cook shallot in hot oil until golden brown, about 5 minutes.
  • Pour wine into saucepan; cook, stirring regularly, until reduced in volume by half, 3 to 4 minutes.
  • Stir beef broth with the wine. Reduce heat to medium-low and cook at a simmer until slightly reduced, about 5 minutes. Stir butter and Italian seasoning into the sauce; cook until butter is completely melted, 2 to 3 minutes. Season with salt.

2 ripe peaches, peeled, pitted and chopped
Zest of 1 orange plus strips of peel for garnish
1 cup freshly squeezed orange juice
1 bottle rose, chilled

Steps:

  • In a blender, combine the peaches, orange zest, orange juice and a splash of cold water. Blend until smooth, then pour into ice cube trays and freeze.
  • Add three of the fruit cubes to each of four wine glasses. Fill the glasses halfway with rose, garnish with a strip of orange peel and serve.

If you cook with wine, this is a great trick. Make ahead, freeze and use as needed. No need to open a bottle when your recipe calls for wine. *One cube equals 2-3 Tablespoons, which equals 1- 1 1/2 cups wine. Choose your favorite red or white or make both. Kudos to Eleanor Hetz for this recipe, posted in the Chicago Tribune 2/05. Enjoy! UPDATE: 1/11, I made 2 trays from about 1 liter of wine. It really doesnt' matter how much wine you start with, just reduce it by half. Cooking time is for both reduction & chilling, not freezing. You're on your own for that one!

1 gallon red wine, ie. Gallo Hearty Burgundy or 1 gallon white wine, ie, Chardonnay, Pinot Grio

Steps:

  • Heat wine to a boil in a large non-aluminum pot.
  • Reduce heat to medium; cook uncovered over medium heat until the wine is reduced to about 4 cups, about 90 minutes. Remove from heat.
  • Cool for 30 minutes; refrigerate at least one hour.
  • Pour reduced wine into plastic cube trays; freeze.
  • Transfer frozen cubes into freezer bags.
  • Can be frozen up to 12 months.
  • 2/7/09: *Please note, to further clarify, once the wine has been reduced, 1 cube measures approximately 2-3T = the equivalent of 1C - 1/2 C wine prior to wine reduction. Wine reduction results in the full flavor of the wine without having to go through the process each time your recipe requires wine.

This is a very handy method to have beef or chicken bouillon ready when you need it. You could always double the recipe, and store in covered freezer-proof containers in the freezer.

2 cups chicken stock or 2 cups beef stock
1/2 cup white wine
1 bay leaf
2 cloves fresh minced garlic

Steps:

  • In a large saucepan, boil all ingredients until reduced by half; cool.
  • Divide evenly into ice cube trays; freeze until solid.
  • Remove from ice cube trays, place in a ziplock plastic bag.
  • Add 1-2 cubes to skillet or wok when sauteing or stir frying.
