WINTER SALAD WITH RED CABBAGE, KALE AND POMEGRANATE



Winter Salad with Red Cabbage, Kale and Pomegranate image

This winter salad with red cabbage, carrots, kale and pomegranate seeds dressed with a zesty vinaigrette uses seasonal vegetables and is perfect for the season.

1/4 head of red or white cabbage
1 carrot
4 kale leaves
1/2 shallot or 1/4 red onion
1/4 pomegranate, seeds only
salt to taste
1/2 lemon, juice only
1/2 tsp Dijon mustard
1 tbsp Pomegranate molasses (see notes)
4 tbsp olive oil
pinch of salt

Steps:

  • Slice the cabbage and shallot thinly and grate the carrots. (Mandolin works well here.) Remove the rib from the kale leaves and discard, slice the kale thinly, then scrunch them in your hands to soften before adding to the salad bowl. Cut the pomegranate open and extract the seeds. Combine all ingredients in a salad bowl.
  • In a mason jar mix the lemon juice, pomegranate molasses, Dijon mustard, olive oil and salt. Cover with a lid and shake well until combined. Dress the salad with the vinaigrette and serve.

1 pomegranate 1 lemon, juice 2 tsp dijon mustard 2 tbsp pomegranate molasses 4 tbsp extra virgin olive oil ½ small red cabbage, cored and very finely shredded 1 large carrot, shredded or coarsely grated 125g kale, finely chopped • 1 small red onion, very finely chopped

Steps:

  • 1. Holding the pomegranate over a large bowl to catch the juice, carefully remove the seeds and set them aside separately. Whisk the lemon juice, mustard, pomegranate molasses and olive oil into the pomegranate juice. 2. Stir in the red cabbage, carrot, kale, red onion, and pomegranate seeds Toss lightly together, then allow to sit for 15 minutes (or up to 24 hours), before transferring to a serving platter. SF

  • Preheat your oven to 350 degrees F. Spread the pecans on an ungreased baking sheet in a single layer. Bake for 5-10 minutes, tossing once or twice throughout, until toasted and fragrant. Watch carefully and set a timer so that the nuts do not burn. Remove from the baking sheet and set aside.
  • Slice the onion thinly and place in a small bowl. Cover with cold tap water and set aside for 10 minutes while you finish preparing the rest of the salad (this will keep the onion's flavor but prevent the onion from having such a harsh, raw bite.) Drain the onion and lightly pat dry.
  • Slice the pomegranate in half across its "equator" (NOT top to bottom). Working one half at a time, turn the pomegranate over an empty bowl, cut side down, and squeeze it gently all the way around to loosen the seeds. With the back of a wooden spoon, firmly wrap the back of the pomegranate, knocking the seeds into the bowl (be careful—the juice can splatter). Rotate the pomegranate then repeat, so that you tap it all the way around and knock out as many seeds as possible. Slice the pomegranate into big wedges and remove any seeds you missed with your fingers. Repeat with the second half. Measure out 1/2 cup of the seeds for the recipe, then save the rest for a different use.
  • In a small bowl or large measuring cup, whisk together all of the dressing ingredients: olive oil, apple cider vinegar, mustard, honey, salt, and pepper. Alternatively, you can shake all of the ingredients together in a tightly sealed mason jar.
