Yield Serves 6-8

Number Of Ingredients 13

4 green tomatoes, sliced
4 ounces soft goat cheese, such as chevre, room temperature
4 ounces cream cheese, room temperature
1 egg
1 teaspoon (or to taste) hot sauce
GALETTE DOUGH
3 tablespoons yogurt, buttermilk or sour cream
1/3 cup (approximately) ice water
1 cup all-purpose flour
¼ cup yellow cornmeal
1 teaspoon sugar
½ tablespoon salt
7 tablespoons butter, cut into 6-8 pieces

Steps:

Add the butter pieces and blend with a pastry blender until the pieces range in size from bresdcrumbs to small peas. Sprinkle the sour cream mixture over the dough, 1 tablespoon at a time, tossing with a fork to evenly distribute. The dough should be moist enough to stick together hwn preseed, if not, add additional ice water. With your hands, gather the dough into a ball. Divide the dough into equal halves, press each half into a disk, wrap in plastic wrap and chill in the refrigerator for ½ to 1 hour. Preheat the oven to 400ºF Mix the goat cheese, cream cheese, egg, and hot sauce together until smooth. Remove the galette dough from the refrigerator and roll each round out into a 10 to 11-inch circle. Spread half of the cheese mixture onto the dough, leaving a 2-inch border. Lay ½ of the tomatoes over the cheese, making sure to keep the boarder. Fold the border of the dough over the filling, letting it pleat as you move around the circle. Repeat with the remaining dough, cheese, and tomatoes. Sprinkle with kosher salt, if desired. Bake at 400ºF for 35 to 40 minutes, until the tomatoes have released their juices and the pastry is golden brown. Remove from oven and let cool on rack. Number Of Ingredients 14

1 tablespoon butter
1 tablespoon olive oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon fresh thyme
salt and ground black pepper to taste
1 sheet frozen puff pastry, thawed
1 pound tomatoes, sliced into 1/4-inch rounds
½ cup grated Parmesan cheese, or more to taste
½ cup panko bread crumbs
½ cup crumbled feta cheese
1 tablespoon fresh parsley
1 egg, beaten
2 tablespoons thinly sliced fresh basil

Steps:

  • Heat butter and oil together in a skillet over medium heat; add onion. Cook and stir until onion is translucent, 10 to 15 minutes. Stir garlic, thyme, salt, and pepper into onion; cook and stir until fragrant, about 2 minutes. Remove skillet from heat.

GREEN TOMATO FRITTATA

Green Tomato Frittata image

This is an adaptation of a recipe I came across in "The Savory Way," by Deborah Madison. The acidic green tomatoes are nicely balanced by the neutral flavor of the eggs.

Provided by Martha Rose Shulman

Categories     breakfast, brunch, appetizer, main course, side dish

Time 1h

Number Of Ingredients 11

1 pound green tomatoes
Salt
freshly ground pepper to taste
Cornmeal for dredging
3 tablespoons extra virgin olive oil
1/4 cup finely chopped onion
2 garlic cloves, green shoots removed, minced
1 tablespoon slivered fresh basil
1 tablespoon snipped chives
8 large eggs
2 tablespoons low-fat milk

Steps:

  • Core the tomatoes and slice half of them about 1/3 inch thick. Set aside. Peel the remaining tomatoes by dropping them in a pot of boiling water for 30 seconds, then transferring to a bowl of ice water. Cut in half, squeeze or scoop out the seeds, and chop fine.
  • Season the sliced tomatoes lightly with salt and pepper, and dredge lightly in the cornmeal. Heat 2 tablespoons of the olive oil in a heavy, nonstick 10-inch skillet over medium-high heat, and fry the sliced tomatoes for two to three minutes on each side, just until lightly colored. Remove from the heat and set aside. If there is cornmeal in the pan, clean and dry the pan.
  • Heat the remaining olive oil in the pan over medium heat, and add the chopped onion. Cook, stirring, until tender, three to five minutes, and add a generous pinch of salt and the garlic. Stir together until fragrant, about 30 seconds, and stir in the chopped tomatoes. Season to taste with salt and pepper, and cook, stirring often, until the tomatoes have softened and are beginning to stick to the pan, about 10 minutes. Taste and adjust seasoning. Stir in the basil and chives.
  • Meanwhile, beat the eggs and milk together in a large bowl, and season with salt and pepper (I use about 1/2 teaspoon salt). When the chopped tomatoes have cooked down, turn the heat up to medium-high and pour in the eggs. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, letting the eggs run underneath during the first few minutes of cooking. Distribute the fried sliced green tomatoes over the surface of the frittata. Turn the heat down to low, cover and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom with a spatula. Meanwhile, preheat the broiler.
  • Finish the frittata under the broiler for one to three minutes, watching very carefully to make sure the top doesn't burn. Remove from the heat, shake the pan to make sure the frittata isn't sticking (it will slide around a bit in the nonstick pan) and allow to cool for at least 5 minutes, up to 15 minutes. Loosen the edges with a wooden or plastic spatula. Carefully slide from the pan onto a large round platter. Cut in wedges and serve, or serve at room temperature.

TOMATO GALETTE

Tomato Galette image

Salting the tomatoes ahead of time and letting them release some of their liquid is essential. It will allow the tomatoes to caramelize and ensures that the bottom of the crust stays flaky.

Provided by Andy Baraghani

Categories     Bon Appétit     Lunch     Brunch     Tart     Pastry     Tomato     Summer     Bake     Cheese     Soy Free     Peanut Free     Tree Nut Free

Yield 4 servings

Number Of Ingredients 12

2 cups all-purpose flour, plus more for dusting
2 1/4 tsp. kosher salt, divided
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into pieces
1 Tbsp. apple cider vinegar
1 1/2 lb. heirloom tomatoes, sliced 1/4" thick
2 garlic cloves, thinly sliced
4 oz. firm cheese (such as Asiago, cheddar, or Gouda), finely grated (about 1 1/2 cups)
1 large egg, beaten to blend
Flaky sea salt
Freshly ground black pepper
1/2 lemon
1 Tbsp. finely chopped chives

Steps:

  • Pulse 2 cups flour and 1 1/4 tsp. kosher salt in a food processor to combine. Add butter and pulse until mixture resembles coarse meal with a few pea-size pieces of butter remaining.
  • Transfer mixture to a large bowl; drizzle with vinegar and 1/4 cup ice water. Mix with a fork, adding more ice water by the tablespoonful as needed, just until a shaggy dough comes together. Turn out onto a work surface and lightly knead until no dry spots remain (be careful not to overwork). Pat into a disk and wrap in plastic. Chill at least 2 hours.
  • Preheat oven to 400°F. Gently toss tomatoes, garlic, and remaining 1 tsp. kosher salt in a large bowl. Let sit 5 minutes (tomatoes will start releasing some liquid). Drain tomato mixture and transfer to paper towels.
  • Unwrap dough and roll out on a lightly floured sheet of parchment paper to a 14" round about 1/8" thick. Transfer on parchment to a baking sheet. Scatter cheese over dough, leaving a 1 1/2" border. Arrange tomatoes and garlic over cheese. Bring edges of dough up and over filling, overlapping as needed to create about a 1 1/2" border; brush dough with egg. Sprinkle tomatoes with sea salt and pepper. Chill in freezer 10 minutes.
  • Bake galette, rotating once, until crust is golden brown and cooked through, 55-65 minutes. Let cool slightly on baking sheet. Finely grate zest from lemon over galette; sprinkle with chives.
  • Do Ahead: Dough can be made 2 days ahead. Keep chilled.
