FRAGRANT LAMB KOFTA CURRY



Fragrant lamb kofta curry image

Rustle up our one-pan lamb meatball curry which uses our own specially created spice blend. It's ideal for a Friday night treat to share with the family

1 tbsp sunflower oil
1 small red onion, finely chopped
500g lamb mince
1 green or red chilli, sliced, to serve (optional)
basmati rice, to serve
2 tsp garam masala
1 ½ tsp ground cumin
1 tsp ground turmeric
1 tsp ground coriander
½ tsp red chilli powder
1 small red onion, finely chopped
thumb-sized piece of ginger, peeled and finely grated
2 garlic cloves, finely grated
1 green chilli, finely chopped (optional)
small bunch of coriander, leaves and stalks separated, stalks finely chopped, leaves reserved
400g can finely chopped tomatoes
1 tbsp tomato purée
300ml lamb stock
200ml can coconut cream

Steps:

  • Heat the oil in a large frying pan over a medium heat and fry the onion for 8 mins until soft but not golden. Remove to a bowl and set aside to cool. Tip the lamb mince and half the spice blend into a medium bowl with 1/2 tsp each salt and black pepper and the cooled onions. Knead with your hands to combine evenly, then form into 16 equal meatballs. Return the pan to a medium heat and brown the meatballs all over. Remove to a plate using a slotted spoon.
  • To make the sauce, fry the onion in the pan for 5 mins until beginning to soften, then add the ginger, garlic, chopped chilli (if using) and coriander stalks, and cook for a further 3 mins. Scatter in the remaining spice blend and cook for 1 min, then tip in the tomatoes, tomato purée, stock and three- quarters of the coconut cream. Stir to combine, bring to a simmer and cook for 15 mins until the sauce has reduced by a quarter.
  • Return the meatballs to the pan and cook for a further 15 mins, basting the meatballs in the sauce every few minutes until the sauce has reduced by a further quarter, and the meatballs are cooked through. Drizzle over the remaining coconut cream, then scatter over the coriander leaves and sliced chilli and serve with cooked basmati rice.

125 g lamb, strips lean (3)
1 shallot, chopped
1/2 teaspoon garlic, minced
1/2 tablespoon red curry paste (1/2)
60 ml light coconut milk (1)
1 teaspoon cornflour
2 teaspoons water
1 cup cooked rice (3)
1/2 cup vegetables (point free)

Steps:

  • Coat pan with cooking spray, heat. Brown the lamb and remove from the pan. Add shallots, garlic, and curry paste to the pan. Cook, stirring, for 30 seconds. Lower heat and stir in coconut milk. Add combined cornflour and water, and stir until mixture thickens. Return lamb to the pan, coat with sauce. Serve over the rice.

  • Heat a tablespoon of coconut oil in a casserole pot or a large saucepan. Add the lamb and stir on high heat until lightly browned, about 3-4 minutes.
  • Add the onion, chilli and celery and cook for about a minute, until slightly softened. Bring the heat down to medium. Add garlic, garam masala, turmeric, fennel seeds and ghee (or extra coconut oil if avoiding dairy). Stir through the lamb and cook for a minute to let the spices release their aromas.
  • Add coconut milk, tomato paste, water and sea salt. Stir and bring to boil. Then turn the heat down to simmer and cook for 1 hour, covered with a lid. Stir a couple of times.
  • After one hour, add the diced carrot and cook for a further 30-40 minutes, covered with a lid. Stir a few times. Sprinkle some fresh coriander or parsley and drizzle a little lemon or lime juice before serving.

  • Heat oil in a 4 qt. Dutch oven or a large cooking pot for 2 minutes over medium high until the oil starts to sizzle and shimmer. Add in cubed lamb and stir well to cook evenly until browned, about 6-8 minutes.
  • Add garam masala, yellow curry powder, cumin seeds, and salt. Stir well to coat the lamb, and continue to cook for 3 minutes.
  • Add coconut milk and tomato paste. Stir well and bring it to a boil. Turn the heat down to low and cover the lid. Simmer for 1 to 1.5 hours until the lamb is fork tender. Use a fork to check the tenderness of the lamb. If you are able to insert a fork in the center of lamb with little resistance, it's cooked fork tender.
