THE MOST INCREDIBLY AWESOME LASAGNA/LASAGNE!
I came up with this after trying to duplicate lasagna I fell in love with at a Christmas party. I had some of the details/ingredients, but not the exact recipe. If you don't like ricotta cheese, like a creamy lasagna or just want to try something different, give this a whirl! PLEASE don't substitute anything...it just won't come out the same.

Steps:
- Make the Bechamel Sauce:.
- Heat the cream and milk in the microwave until it is hot, but not boiling.
- In a medium saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, until the mixture begins to bubble, about 2 minutes.
- Gradually stir in the hot cream and milk. Continue to cook, whisking constantly, until the sauce comes to a boil. Reduce the heat and simmer, continuing to whisk, 2 to 3 minutes longer, or until fairly thick. Season to taste with nutmeg, salt and pepper. (I use about 1/8 teaspoon nutmeg, 1/4 teaspoon salt and 1/8 teaspoon pepper).
- Directions for Assembling the Lasagna:.
- In a deep lasagna pan begin layering with thin layer of red sauce.
- Add first layer of pasta (4 sheets) on top.
- Then add layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
- Add second layer of pasta (4 sheets) on top.
- Then add another layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
- Add third layer of pasta (4 sheets) on top.
- Then add another layer of red sauce (about 1 cup) and remaining béchamel sauce. Sprinkle parmesan on top. Then layer remaining mozzarella.
- Add fourth and final layer of pasta (4 sheets) on top. Then top with red sauce and sprinkle with remaining parmesan.
- Cover top of lasagna dish with cover or foil.
- Place assembled lasagna dish into oven for 50 minutes at 375 degrees. Remove cover and bake for another 5 - 10 minutes.
- Remove from oven and allow to settle for about 15-20 minutes before serving.

CLASSIC ITALIAN LASAGNA

- Preheat oven to 375 degrees F.
- Bechamel sauce:
- In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.
- In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.
- In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.
- Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.
- Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.
- In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
AUNT ANGIE'S LASAGNA RECIPE
Steps:
- For the Meatball Mix: Preheat oven to 375 degrees F.
- In a mixing bowl, combine all ingredients. Roll meatballs into desired size and bake in preheated oven for about 15 minutes or until golden brown. For the lasagna, instead of rolling into desired size, spread mix out evenly on a sheet pan and bake. Break up the meat for lasagna.
- For the Meat Sauce: In a stock pot (or large cooking vessel) brown the ground beef. Add the celery/carrot/onion mix and cook for about 2 minutes. Add the tomatoes and the seasonings. Let simmer for 2 hours.
- For Aunt Angie's Lasagna: Using a 1/2 hotel pan or medium to large baking dish, coat the bottom with a thin layer of meat sauce. Lay out 4 pieces of lasagna so they go up the side of the pan with an additional 3 to 4 inches hanging over the edge. Do the same in the other direction of the pan using pieces of pasta. Add another layer of meat sauce, followed by 1/2 of the meatball mix. Then top the meat with 1 pound of the ricotta cheese, 1 pound of mozzarella, and 1/4 cup of Romano. Add a layer of pasta and repeat to have 2 layers. Fold over the remaining pasta to cover the top. Top with meat sauce and place in preheated oven and bake until proper serving temperature is reached or top is golden brown.

- Preheat oven to 375 degrees F (190 degrees C).
- Season ground beef with garlic powder. Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Pour spaghetti sauce, tomato sauce, and oregano into a large saucepan. Set aside.

- Bring a large pot of salted water to a boil. Cook the lasagna noodles 3 to 4 minutes less than the package directs. Drain, reserving 1 cup pasta water, and pour the pasta onto a baking sheet to cool. Drizzle with olive oil to prevent the pasta from sticking and set aside until ready to assemble.
- For the Bolognese: Place a heavy-bottomed pan over medium-high heat and add the oil. Add the beef, season with salt, and cook, breaking up any lumps, until it begins to brown. Move the beef to one side of the pan, add the squash and cook until it begins to brown and soften, 2 to 3 minutes. Add the onions, celery and garlic with a large pinch of salt and cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 5 minutes. Stir in the tomato paste and toast for a few minutes until it looks rusty. Add in the white wine, scraping the brown bits from the bottom of the pan with a wooden spoon. Add the crushed tomatoes and thyme bundle and bring to a simmer. Stir in the reserved 1 cup pasta water and cook over low heat, partially covered, until the sauce has thickened and reduced, at least 20 minutes. Season with salt and pepper and remove the thyme bundle.
- For the bechamel: Melt the butter in a heavy-bottomed saucepot over medium heat. Whisk in the flour until it forms a wet sandy consistency. Slowly whisk in the milk and bring to a gentle boil. Reduce to a simmer, then whisk in the nutmeg and 1 teaspoon each salt and freshly ground black pepper. Cook, stirring often, until thickened and smooth, 10 to 15 minutes. Remove from the heat and whisk in the ricotta, pecorino and egg yolks, then set aside to cool slightly.
- Preheat the oven to 375 degrees F. Line a baking sheet with foil. Place a 7-quart roasting pan or a lasagna pan on the baking sheet.
- To assemble: Spoon a layer of Bolognese into the pan, covering the whole bottom. Add an even layer of noodles and press into the sauce. Add a layer of Bolognese over the noodles, then another layer of pasta. Spoon some of the bechamel over the noodles, covering the entire surface. Add another layer of pasta, pressing down gently. Spoon a layer of Bolognese to cover the surface. Repeat the layering, ending with a layer of Bolognese on top. Sprinkle with the mozzarella, then cover with foil and bake until completely warmed through, 45 minutes to 1 hour.
- Uncover and continue to bake until golden brown and crusty on top, about 10 minutes. Sprinkle with grated Parmesan and let set 20 to 30 minutes before serving.

HEALTHIER LASAGNA/LASAGNE
I found this recipe in Men's Health magazine. Considering it is far lower in calorie content than a standard lasagne it really is very tasty. It cuts down on all the fatty and calorie rich ingredients, such as the mozzarella and ground meat and packs in a lot of extra vegetables.

- Preheat your oven to 190C/375F/Gas 5.
- In a non stick frying pan, brown the meat for about 7 minutes. Season with salt.
- Drain any excess fat from the pan by placing the meat into a sieve, keep aside.
- In the same pan, fry the onion, garlic, celery, carrot and mushrooms in a little olive oil for about five minutes.
- Add the meat back to the pan and add the tomato paste and chopped tomatoes at the same time.
- Season using the oregano, basil and sugar. Add salt and black pepper to taste.
- Simmer for about 15 minutes.
- In the meantime add the spinach, zucchini, cottage cheese and egg whites together in a bowl. Using a hand blender of food processor, blitz the ingredients until you achieve a sauce.
- Spread 1/4 of the tomato sauce in the bottom of a large lasagne dish. Cover with three lasange sheets. Next add another layer, using another 1/4 of the tomato sauce and then cover with half the cottage cheese sauce. Place the remaining three lasagne sheets over the top and cover with the remaining cottage cheese sauce.
- Cover with tin foil and bake for 45 minutes. After that time, remove the foil and top with the grated mozzarella cheese. Then return to the oven for a further 15 minutes.
- Serve with a green side salad.
- Note: As zuccini contain a lot of water, you might first want to place the grated pieces in a collander and sprinkle them with a little salt. Squeeze out any excess water before adding with the other ingredients. This is optional.

- Cook noodles in a large pot of boiling water until done. Rinse, and drain. Set aside.
- In a medium saucepan, saute green pepper and onions in butter or margarine over medium heat. Stir in undiluted soup, milk, mushrooms, pasteurized cheese, pimento, and basil.

NO WHITE-SAUCE LASAGNA/LASAGNE
When it comes to making white-sauce I am a failure. I came up with this recipe out of a dire need to make a truly scrummy lasagne without using white sauce. It does take some time to make the meat sauce but it is worth it! Serve with garlic bread and salad - yummy! I live in the Netherlands where there is a minced meat mixture called 'half-om-half' which includes pork and beef. I usually use this rather than just beef but have no idea what the proportions of each are in it. If you mix it yourself please post your proportions so I can try it too!

- Heat the oil in a large frying pan.
- Add the chopped shallots and crushed garlic, heat until the shallot is soft.
- Add the minced meat, stir thoroughly.
- Add the milk to the meat, cook the meat until it is brown all over.
- Add all the tomatoes and sugar, stir well.
- Add the herbs.
- Add some of the red wine and worcestershire sauce, stir.
- Add the mushrooms (if using), stir.
- Simmer on a low heat and let the liquid reduce.
- When the liquid has reduced add more worcestershire sauce and red wine. Simmer.
- Repeat this stirring, adding liquid, simmering and reduction process for at least two hours. The meat should end up very glossy and gloopy. It almost looks like it is one large blob rather than minced meat.
- Meanwhile, mix the grated parmesan and pepper into the creme fraiche, leave aside.
- Preheat the oven to 200°C.
- When the meat is ready add a thin layer to cover the bottom of an ovenproof dish. Add lasagne sheets, then a thicker layer of meat. Repeat - I always end up with three layers of lasagne sheets.
- On the final layer of lasgne sheets spread the creme fraiche mixture.
- Cover the creme fraiche mixture with the grated cheddar.
- Bake in the oven until golden (30-45 minutes).

- Heat the oil in a large saucepan. Add the onions and saute for 3 minutes. Add the peppers and saute for 2 minutes. Add the zucchini and saute 3 minutes before adding the tomatoes, tomato paste, garlic and oregano, basil, thyme, salt and pepper. Cover the saucepan and simmer for 20 to 30 minutes (the longer the better as long as the sauce is not sticky.)
- Preheat the oven to 200 degrees F (95 degrees C). Grease a 9x13 inch baking dish.
- While the sauce cooks, melt 2 tablespoons butter in a saucepan. Add the flour into the butter, stir vigorously for 2 minutes. Gradually add the milk, stirring until the sauce thickens. Stir in the cheese, reserving as much as you will want to sprinkle on top of the lasagna. Stir the cheese into the flour and butter mixture until it has melted completely. Season with nutmeg, salt, and pepper.
- Soak the lasagna noodles in water for 30 seconds.
- Cover the bottom of the prepared dish with some of the tomato sauce, followed by a layer of the lasagna sheet, and the cheese sauce. Continue layering these ingredients ending with a layer of cheese sauce. Sprinkle the final layer of cheese sauce with nutmeg, salt, pepper, and the reserved cheese.
- Bake the lasagna 40 to 50 minutes, until the top of the lasagna is golden brown.

- METHOD Place the meat in a non-metallic bowl with 1 tbsp olive oil, a clove of garlic, the thyme and balsamic vinegar and mix well. Cover and leave in the fridge to marinate overnight.
- Put 4 tbsp olive oil in a frying pan with the onion, carrots, celery, mushrooms (if using), chilli and remaining garlic. Cover and cook over a low heat for 15-20 minutes, stirring occasionally, until all the contents have softened. Once the vegetables start to stick to the bottom of the pan, set aside.
- Remove the garlic and thyme from the marinated meat and discard. In another pan, heat the remaining oil over a high heat, add the meat and cook, covered for 30-60 seconds. At this stage, the game usually releases water - as soon as this happens, drain the water and juices away. This will take the "gamey" edge off a little. You may need to repeat this procedure a few times until the meat is very dry. Season to taste and keep stirring.
- Once the meat starts to stick to the pan, add the cooked vegetables and wine and stir again. Now add the tomatoes and crumble in the stock cubes, lower the heat and stir well until the cubes have dissolved. Cover and leave to simmer for 2 hours, stirring occasionally. At the end of the process, the sauce should be neither too stiff nor too runny. Add water or cook for slightly longer, uncovered, to achieve the right consistency.
- Meanwhile make the pasta. Sift the flour and salt into a large bowl. Make a well in the middle and add the eggs. Slowly mix the eggs into the flour using your fingertips, until all the flour has been incorporated. Add a little water if the mixture is too hard, or a little semolina flour if too soft. On a work surface lightly dusted with semolina flour (if necessary), knead the dough for a few minutes until smooth and elastic. Shape the dough into a ball, wrap in cling film and leave it to rest in the fridge for 20 minutes.
- To make the béchamel sauce, melt the butter in a saucepan over a low heat. Take off the heat and stir in the flour a little at a time until you have a thick paste. Gradually add the milk, stirring to incorporate each addition before adding the next. Add a pinch of salt and the nutmeg, and then place over a medium heat and bring to the boil, stirring constantly. Lower the heat and stir for 5 minutes then set aside to cool, stirring occasionally.
- Preheat the oven to 180°C/Gas mark 4.
- Dust a work surface with semolina flour and roll out the pasta dough into a sheet about 1mm thick. Using a pastry cutter or one of your ramekins, stamp out 24 circles of pasta.
- Spoon a layer of the game sauce, about 1cm deep, into each ramekin. Place a disc of pasta over the sauce in each ramekin. Spoon another layer of game sauce on top, then cover with béchamel. Repeat these layers (pasta, meat sauce, béchamel) at least twice more, finishing with plenty of béchamel.
- Sprinkle the pecorino on top of the dishes and place in the oven for 20 minutes, or until the cheese has browned. Leave to rest for a few minutes before serving... Enjoy!
