This Easy Melting Moments Biscuit Recipe is so quick to make. Buttery, light and melt in the mouth. No eggs required. Just four ingredients are needed, plus a pinch of salt. You'll have these cookies ready for your coffee break in no time.

50 grams icing sugar (sieved)
100 grams unsalted butter (at room temperature)
100 grams plain flour (sieved)
50 grams cornflour (sieved)
pinch of salt

Steps:

  • Preheat the oven to 160deg fan assisted. Have ready a baking sheet lined with a silicone baking sheet or baking parchment.
  • Cream the butter and icing sugar together until well combined. This will only take a couple of mins if the butter is soft enough.
  • Add the flour, cornflour and salt. Mixed everything together to form a smooth firm dough.
  • Shape into even small, walnut sized pieces. Place these onto the prepared baking sheet. If you wish to be exact, weight the dough first. Then divide into equal weights.
  • Bake in the centre of the oven for 15 - 20 mins. Or until baked. They won't have a deep golden baked colour and may still feel slightly soft as you take them out of the oven. But they will firm up once cooled.

Classic melt-in-your-mouth yo yo biscuits with a sweet creamy filling. These soft and crumbly custard cookies are inspired by the original CWA recipe.

180 g butter (at room temperature)
1 tsp vanilla extract
1/3 cup (50g) icing sugar
1 cup (150g) self raising flour
1/2 cup (75g) plain flour
1/2 cup (60g) custard powder
250 g icing sugar
40 g butter (at room temperature)
2 tsp vanilla esence
1/2 tsp lemon juice
1 drop pink food colouring (optional)

Steps:

  • Preheat oven to 160 degrees celsius (fan-forced).
  • Line two baking trays with baking paper.
  • Sift the icing sugar into a large bowl.
  • Add the butter and vanilla essence.
  • Beat with a stand mixer or hand-held beaters until smooth and creamy.
  • Sift into the bowl the self raising flour, plain flour and custard powder. Stir well to combine.
  • Roll mixture into teaspoonful sized balls and place 5cm apart on the prepared baking trays.
  • Press the tops of the balls lightly with a fork.
  • Bake for 10-12 minutes or until just ever so lightly golden.
  • Leave to cool on the trays for 10 minutes before moving to a wire rack to cool completely.
  • To make the filling, beat the butter, vanilla essence and lemon juice until smooth and creamy.
  • Slowly add the sifted icing sugar, beating well in between additions.
  • When the mixture is completely combined and smooth, add one drop of pink food colouring and beat until the colour is evenly dispersed.
  • Join two biscuits together with 1tsp of filling.
  • Preheat oven to 160 degrees celsius (fan-forced). Line two baking trays with baking paper.
  • Measure the self raising flour, plain flour and custard powder into the TM bowl and sift on Speed 3 for 30 seconds to combine. Place the flour mixture into a separate bowl and set aside.
  • Place the butter, vanilla essence and icing sugar in the TM bowl. Beat on Speed 4 for approximately 1 minute or until the mixture is pale, fluffy and smooth.
  • Add the flour mixture and combine on Speed 1, slowly increasing to Speed 4 until smooth and completely combined (if your mixture is too sticky, add a little more flour).
  • Roll mixture into teaspoonful sized balls and place 5cm apart on the prepared baking trays. Press the tops of the balls lightly with a fork.
  • Bake for 10-12 minutes or until just lightly golden. Leave to cool on the trays for 10 minutes before moving to a wire rack to cool completely.
  • To make the filling, combine the butter and icing sugar on Speed 4 until pale and smooth. Add the vanilla essence, lemon juice and one drop of pink food colouring. Beat for 1 minute, Speed 6, or until smooth and fluffy.
  • Join two biscuits together with 1 teaspoon of filling.

Number Of Ingredients 12

250g unsalted butter , at room temperature
½ tsp vanilla extract
1 tsp red paste food colouring (I used Sugarflair)
225g plain flour
35g cocoa powder
85g icing sugar
30g cornflour
50g unsalted butter , at room temperature
125g icing sugar
1 tsp vanilla bean paste
50g full-fat cream cheese
¼ tsp lemon extract (I used Nielsen-Massey)

Steps:

  • Heat oven to 160C/140C fan/gas 3 and line 2 baking trays with baking parchment. Put the butter and vanilla into a large bowl, and beat until soft and creamy. Add the colouring and beat to combine. Sift the remaining biscuit ingredients into the bowl and mix together until it comes together to form a uniform dough.
  • Using your hands, roll the dough into small balls (I weigh these so each biscuit is the same size, 20g each), then place 10 onto each prepared baking tray, leaving a couple of inches between each biscuit. Using a fork dipped in flour, press onto each of the biscuits, leaving an indent and pressing the biscuits a little flatter.
  • Pop the trays into the fridge for about 15 mins or until the biscuits have firmed up slightly, then bake for 20-25 mins. Allow them to cool on the trays for 5 mins before moving to a wire rack to cool completely.
  • For the filling, put the butter, icing sugar and vanilla in a large bowl and beat together until light and fluffy. Add the cream cheese and the lemon extract, and beat until just combined - the lemon extract helps to give the filling a little extra boost of flavour, to help it stand up against the biscuits.
  • Once the biscuits have cooled, put the filling in a piping bag fitted with a plain round tip and pipe filling on half the biscuits, sandwiching together with a second biscuit.
