YOSHIDA'S SESAME-CRUSTED SALMON



Yoshida's Sesame-Crusted Salmon image

Mr. Yoshida's sauces are famous for their Asian marinade's and sauces. Dress up some salmon with their sauce (or other brand) and a few other ingredients.

Number Of Ingredients 5

4 (5 ounce size) salmon fillets
4 tablespoons Dijon mustard
black and white or toasted sesame seeds
1 1/2 cup Yoshida's Hawaiian sweet & sour sauce
1/4 cup balsamic vinegar

Steps:

  • Preheat the oven to 450 degrees F. Place the sesame seeds in a shallow dish. Brush the tops of the salmon with the mustard then press the mustard side of the salmon into the sesame seeds so they adhere. Place the salmon, sesame seed side up, in a shallow roasting pan. Bake at 450 degrees F for 10 minutes or until the fish flakes easily with a fork. Meanwhile, combine the sweet and sour sauce with the vinegar in a saucepan over medium heat. Bring to a simmer. Remove the salmon from the roasting pan and place on individual serving plates. Drizzle with the sweet and sour mixture and serve immediately.

This sauce is similar to the Yoshida sauce that can be found at costco and other stores. Note that this is not an exact copy but a very similar taste that can be made with ingredients that can be found in your kitchen and not a laboratory.

2 cups soy sauce
3/4 cup brown sugar, divided
3/4 cup white sugar, divided
8 green onions, cut into 1 1/2 inch sections
4 slices fresh gingerroot
1 garlic clove, chopped
1 cup honey

Steps:

  • Combine soy sauce, 1/2 cup brown sugar, 1/2 cup white sugar, green onions, ginger and garlic in a 2 quart saucepan. Bring the mixture to a slight boil. Reduce the heat to low and simmer for 15 minutes.
  • Pour the remaining white and brown sugar and the honey into the saucepan. Bring to a boil. The mixture will rise and foam, when it does this and doubles in size remove the pan from heat and cool.

This recipe came from the Mililani High School Project Grad cookbook. It is so yummy and so easy to make. You can serve the salmon on a bed of boiled or steamed won bok and then pour the sauce over it.

1 1/2 cups Yoshida gourmet sauce
Nori Goma Furikake

Steps:

  • Pour sauce in shallow baking pan.
  • Place salmon in pan and cover both sides with sauce.
  • Cover pan with foil and bake at 350 degrees for 45 minutes.
  • Uncover and sprinkle with furikake and return uncovered to oven for 15-20 minutes.

This spicy salmon fillet may be grilled, smoked with apple chips, or roasted in the oven.

1 (3 pound) salmon fillet
1 cup mayonnaise
1 tablespoon wasabi powder
1 (8 ounce) bag Yukon gold potato chips, crushed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a small bowl, mix together the mayonnaise and wasabi powder. Place the salmon on a greased baking tray, skin side down. Spread the mayonnaise mixture evenly over the top. Press crushed potato chips into the mayonnaise.
  • Bake for 20 minutes in the preheated oven, or until fish flakes with a fork.
