SAUSAGE-PROVOLONE PATTIES WITH FRIED EGGS

Steps:
- Put the bacon in a medium saucepan and fill with water. Bring to a simmer over medium heat and cook 20 minutes; drain, rinse under cold water and pat dry. Combine the bacon, pork tenderloin, wine, garlic, parsley, sage, red pepper flakes, sugar, 1/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl; toss to combine. Cover and refrigerate at least 1 hour and up to 4 hours. Transfer the pork mixture to a food processor and pulse until coarsely chopped. Transfer to a bowl and stir in the cheese. Form into 8 to 10 patties, about 2 inches wide and 1/2 inch thick. Put on a plate, cover and refrigerate at least 1 hour. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the sausage patties and cook until browned on both sides, 8 to 10 minutes. Transfer to a plate and tent with foil to keep warm. Crack the eggs into the hot skillet, season with salt and pepper and fry until just set, 2 to 3 minutes. Serve with the sausage patties.
PORK SAUSAGE AND EGG CASSEROLE
This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Perfect for a brunch, we also love it for supper too!

Steps:
- Cook sausage and drain grease.
- In large bowl, beat eggs and stir in the milk.
- Add the sausage, hash browns, cheese, salt and pepper.
- Pour the mixture into 2 well greased round 2 qt pyrex bakeware casserole dishes uncovered, dividing them equally.
- Bake at 350 degrees for approximately 45 minutes or until a knife inserted comes out clean.

Steps:
- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

SAUSAGE-WRAPPED SOFT BOILED EGG (SCOTCH EGG) RECIPE BY TASTY
Here's what you need: large eggs, ground sausage, green onion, garlic, mustard, salt, pepper, flour, seasoned bread crumb, vegetable oil

Steps:
- Bring a medium pot of water to a boil. Add 5 eggs and boil for six minutes.
- Remove from heat and immediately transfer eggs to an ice water bath to cool (this will prevent the eggs from cooking further and will ensure a nice soft boiled egg)
- Combine sausage, green onions, garlic, mustard, salt, and pepper.
- Peel the cooled eggs and roll in flour.
- Press out the sausage mixture into patties and wrap around the floured eggs.
- Whisk the remaining 2 eggs together to form an egg wash.
- Roll your sausage-wrapped egg in flour, then egg wash, and finish in the seasoned bread crumbs. Repeat for each egg.
- Heat oil to 300˚F (150˚C) and fry each egg for about 3 minutes, until browned on all sides.
- Transfer fried eggs to a baking tray and finish cooking in a preheated oven for 5 minutes at 400˚F (200˚C)
