DELICIOUS CLAM AND FISH CHOWDER - LACTOSE-FREE



Delicious Clam and Fish Chowder - Lactose-Free image

A delicious, slightly lower fat recipe that is perfect for those who need to follow a lactose-free diet. Even the kids loved it!

2 small potatoes, peeled and diced
1 carrot, peeled and sliced thinly
1 celery rib, thinly sliced
1 shallot, thinly sliced
2 (6 ounce) cans minced clams, drained, juice reserved
1 large cod fish fillet, cubed (or 2 small)
1/2 cup butter
1/2 cup flour
1 teaspoon salt (to taste)
1/2 teaspoon black pepper (to taste)
6 cups whole milk, lactose free

Steps:

  • In small saucepan, mix vegetables with clam juice and boil until veggies are tender.
  • Meanwhile, melt butter in larger pan, then add flour slowly and whisk until smooth.
  • Add salt and pepper.
  • Cook for about 4 minutes over low heat. Slowly whisk in milk. Heat to simmer, uncovered., stirring often.
  • Add cod and cook for 5 minutes.
  • Next, add veggies and clams and cook for about 15 minutes or until chowder is thickened a bit, stirring often. Add more salt and pepper if necessary.
  • Enjoy!

This is such an easy recipe for clam chowder, it's one of my favorites! You can use more than two 5-ounce cans for this recipe if desired! Serving size is only estimated I could eat the whole thing myself LOL!

Number Of Ingredients 15

7 slices bacon, chopped (can use more)
1 onion, finely chopped
2 tablespoons fresh minced garlic (optional or to taste)
2 stalks celery, finely diced
1/2 cup dry white wine (or use chardonnay)
1 cup whipping cream (unwhipped)
1 cup full-fat milk
2 (5 ounce) cans clams (save the juice!)
1 large bay leaf
1 teaspoon dried thyme (rubbed between fingers to release the flavors)
1 small russet potato, peeled and grated
1 1/2 cups evaporated milk
3 tablespoons chopped fresh parsley
salt
pepper (lots of pepper!)

Steps:

  • In a heavy-bottomed pot brown the bacon, then add in onions, celery, thyme, bay leaf and garlic (if using); saute for about 4 minutes.
  • Add in wine, whipping cream, milk and the juice from the clams (save the clams to add in the end).
  • Add in the grated potato; bring to a slow simmer and cook for about 20 minutes until the grated potato softens, releases the starches and thickens the chowder base.
  • Add in the reserved clam meat, evapoated milk and chopped parsley; bring to JUST a simmer and remove from heat.
  • Season with salt and lots of black pepper.
  • Delicious!

2 cups diced potatoes
1/2 cup minced onion
1 1/2 cups water
1 teaspoon salt
1/4 teaspoon pepper
2 cans minced clams
2 cups milk
3 teaspoons flour
2 teaspoons butter

Steps:

  • Cook first 5 ingredients with the juice from the clams.
  • Cook gently until potatoes are tender.
  • Add clams.
  • Mix milk and flour.
  • Stir into soup.
  • Cook and stir until thickened.
  • Add butter.

This is a clam chowder that I have created that helps me keep within my food intolerances but fulfill my need for yummy clam chowder. No soy, gluten, dairy, or yeast. A little thinner base than most chowders and the base is brown not white, but the recipe is yummy as all get out. Based on recipe 52272.

6 -7 pieces bacon, cut into small pieces
2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed
2 cups brown rice milk
3 tablespoons potato starch (you can substitute Vance's DariFree to make the soup a little sweet)
1 cup chicken stock (pick one without any of your food intolerances)
1 teaspoon dried dill weed

Steps:

  • Add bacon to sauce pan and cook on medium low heat until crispy.
  • Add clam juice from both cans.
  • Add potatoes.
  • Cook and cover until potatoes are fork tender, about 15-20 minutes.
  • Stir occasionally so potatoes won't stick.
  • Combine 1 cup of rice milk with potato starch or Vance's DariFree.
  • Add rice milk, the rice milk mix, chicken stock, and dill weed.
  • Stir together.
  • Cook for about 30-45 minutes or until thickened.
  • Add the clams in the last 5 minutes of cooking.
  • Stir occasionally.
