Our family loves this meatloaf! It's covered with a tangy sweet and sour sauce made on the stove. It is very good!

1 ½ pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
¼ teaspoon ground black pepper
2 eggs
1 teaspoon dried minced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
½ cup white sugar
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
  • Push the meatloaf down into the pan forming a well for the sauce around all the edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.
  • Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
  • After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

Sweet and Sour Meatloaf (sometimes called Dutch Meatloaf) ~ a tangy, juicy meatloaf covered in an easy sweet and sour sauce made with ketchup, mustard, vinegar and brown sugar.

2 pounds ground beef (85-90% lean)
1 cup seasoned bread crumbs ((I used Progresso Italian Style))
1 medium onion, chopped fine
1/2 cup ketchup
1 egg, (lightly beaten)
1 teaspoon pepper
1 cup ketchup
2 cups water
1/4 cup classic yellow mustard
1/4 cup light brown sugar, (packed)
1/4 cup white vinegar

Steps:

  • Preheat oven to 350 degrees. Lightly grease a casserole dish large enough to hold the meatloaf and the sauce (about 4 quarts).
  • In a large mixing bowl, combine all the ingredients for the meatloaf. Form into a fairly tight loaf and place in the center of the casserole dish . Place the uncovered meatloaf in the oven while preparing the sauce.
  • In the same bowl used to mix the meatloaf, combine all the sauce ingredients. Whisk to combine. Carefully pour the sauce over the top of the meatloaf in the oven. Bake at 350 degrees for 1 1/2 hours (do not cover.)
  • Allow the meatloaf to rest 15 minutes before serving. Great served with mashed potatoes!

Press into a 9x5-in. loaf pan. , Bake at 350° for 50 minutes. In a saucepan, combine the sugars, vinegar, mustard and remaining tomato sauce; bring to a boil. Pour over meat loaf; bake until no pink remains and a thermometer reads 160°, about 10 minutes longer., Freeze option: Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

1 cup dried breadcrumbs
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped cremini mushrooms
1/2 cup pitted prunes, chopped
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 clove garlic, minced

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. 1 cup plain breadcrumbs
1 teaspoon salt
1 1/4 teaspoons pepper
2 eggs
1 (15 ounce) can tomato sauce, divided
reserved tomato sauce
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 cup sugar
2 tablespoons brown mustard

Steps:

  • Mix together the beef, bread crumbs, salt, pepper, eggs and 1/3 of the can of tomato sauce.
  • Form into a loaf and put into loaf pan.
  • Then take 1 tsp of water and sprinkle it over top of meatloaf (this makes a difference, but I am not sure why).
  • Bake at 350 for 50 minutes.
  • In saucepan combine the topping ingredients and bring to a boil.
  • Pour fat off of meatloaf, cut into serving size pieces in pan.
  • Pour topping over meatloaf& make sure it gets between slices, then bake for ten more minutes.
  • Enjoy!
