We grow a lot of broccoli in our garden, so I've experimented with different ways to prepare it. It tastes very good and is good for you.

2 cups water
4 cups fresh broccoli florets
2 garlic cloves, minced
1 tablespoon olive oil
1 can (14 ounces) water-packed artichoke hearts, rinsed and drained
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 tablespoon lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • In a saucepan, bring water to a boil. Add broccoli; cook, uncovered, for 2 minutes. Drain and set aside., In a skillet, saute garlic in oil until tender. Add the artichokes and saute for 2 minutes. Add broccoli, salt, pepper and pepper sauce; saute 3 minutes longer or until broccoli is tender. Remove from the heat; sprinkle with lemon juice and Parmesan.

This meltingly tender pork shoulder is the ultimate make-ahead dinner party main. A chimichurri-style fresh basil sauce balances the rich pork with bright zesty flavors.

For the pork:
8 garlic cloves, finely chopped
1/4 cup olive oil
3 tablespoons whole grain mustard
3 tablespoons light brown sugar
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper
2 teaspoons oregano leaves, finely chopped
1 1/2 teaspoons smoked paprika
1 skinless, boneless pork shoulder roast, tied (Boston butt; about 6 pounds)
For the sauce:
1 large shallot, finely chopped
2 cups basil leaves, finely chopped
1 1/4 cups extra virgin olive oil
1/4 cup oregano leaves, finely chopped
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
1/2 cup fresh lemon juice
Special Equipment:
A (4-quart) slow cooker

Steps:

  • Cook the pork: Mix garlic, oil, mustard, brown sugar, salt, pepper, oregano, and paprika in a small bowl to form a paste. Rub all over pork, then transfer to a resealable plastic bag or slow cooker insert and chill overnight.
  • Place pork in slow cooker, cover, and cook on low until meat is fork-tender but not yet completely falling apart, 7 1/2-8 hours.
  • Meanwhile, make the sauce: Mix shallot, basil, oil, oregano, red pepper flakes, and salt in an airtight container. Cover and let rest up to 3 hours at temperature or up to 2 days in refrigerator. Stir in lemon juice just before using.
  • Transfer pork to a cutting board and let rest 5 minutes. Slice and transfer to a platter. Drizzle with sauce and serve with additional sauce alongside.
  • Do Ahead
  • Pork can be rubbed 2 days ahead; chill in an airtight container. Sauce, without lemon juice, can be made 2 days ahead; chill in an airtight container.

1 carrot, large bunch, cut into thirds
2 tablespoons olive oil
1 tablespoon McCormick® Zesty Spice Blend
½ teaspoon freshly ground black pepper
2 cups vegetable stock
1 cup buckwheat groats
1 tablespoon champagne vinegar
½ cup pistachio
¼ cup grapeseed oil
¼ cup water
kosher salt, to taste
freshly ground black pepper, to taste
⅓ cup fresh basil, torn
½ cup crumbled feta cheese
14 oz artichoke heart, drained and halved (1 can)
½ cup fresh spinach, torn
½ cup fresh basil, chopped

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Bring a large pot of salted water to a boil, then add the carrots and cook for about 5 minutes, until slightly tender but not cooked through. Drain and pat dry.
  • In a large bowl, toss the carrots with the olive oil, Zesty spice blend, and pepper until evenly coated. Spread the carrots on a rimmed baking sheet in a single layer. Roast for 10-15 minutes, until cooked through and crispy.
  • Using vegetable stock instead of water, cook the buckwheat groats according to the package instructions. Set aside.
  • Make the dressing: In a blender, combine the champagne vinegar, pistachios, grapeseed oil, and water and blend until a semi-smooth consistency is reached. Season with salt and pepper to taste. Add the basil and pulse a few times to incorporate.
  • Divide buckwheat groats between 2 bowls. Top with the carrots, feta, artichoke hearts, spinach, and basil. Drizzle over the dressing.
  • Enjoy!

2 teaspoons dried thyme
2 teaspoons grated lemon peel
1/4 teaspoon salt
1/4 teaspoon pepper
4 (1/4 lb) boneless skinless chicken breast half
4 teaspoons olive oil, divided
1 large onion, chopped
2 garlic cloves, minced
1 (14 ounce) can water-packed artichoke hearts, drained and halved
3/4 cup white wine or 3/4 cup reduced-sodium chicken broth
1/4 cup sliced pimento-stuffed green olives, drained
1/4 cup sliced black olives, drained

Steps:

  • Combine thyme, lemon peel, salt, and pepper; rub into chicken. Heat 2 teaspoons oil in nonstick skillet over medium heat. Brown chicken; remove and set aside.
  • In same skillet, heat remaining oil. Saute onion and garlic until tender. Stir in artichoke hearts, wine, and olives.
  • Return chicken to pan. Bring to a boil; reduce heat, cover, and simmer 6-8 minutes or until chicken is cooked through.
  • Remove chicken from pan; cover and keep warm. Simmer sauce uncovered for 2-3 minutes or until most of the liquid has evaporated.
  • Serve chicken with sauce.

A boyfriend's mother taught me this great dipping sauce for artichokes and asparagus. It's somewhat like aioli. Replace dried basil for fresh, and garlic salt for the garlic. If you do use dried basil, cut the original amount in half. Use low-fat mayonnaise if you like.

1 jar (6-1/2 ounces) marinated artichoke hearts
1 cup chopped onion
1 cup sliced fresh mushrooms
1/2 teaspoon minced garlic
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
1 can (6 ounces) tomato paste
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 teaspoon sugar
1/2 teaspoon salt, optional
Hot cooked pasta

Steps:

  • Drain artichokes, reserving marinade; set artichokes aside. In a large saucepan, saute onion and mushrooms in reserved marinade for 2-3 minutes or until tender. Add garlic; cook 1 minute longer., Stir in the artichokes, tomatoes, water, tomato paste, basil, sugar and salt if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until heated through. Serve over pasta.

1 (6 ounce) jar marinated artichoke hearts
1 cup onion, thinly sliced
1 large garlic clove, minced
1 (14 1/2 ounce) can whole tomatoes with juice
1 (6 ounce) can tomato paste
1 cup water
2 tablespoons fresh basil, chopped or 2 teaspoons dried basil
cooked pasta, of your choice
parmesan cheese, grated

Steps:

  • Drain artichoke marinade into a 2 quart casserole; quarter artichokes and set aside.
  • Add onion and garlic to marinade.
  • Cover with a lid or plastic wrap and microwave on high 6 to 8 minutes, or until onions are tender.
  • Drain juice from tomatoes into onion mixture.
  • Coarsely chop tomatoes and add to onion mixture, along with tomato paste, artichoke hearts, and water.If using dried basil add it now too.
  • Cover and microwave on high 8 minutes, or until bubbly hot.
  • Stir in fresh basil if you're using it and serve over any variety of cooked pasta.
