1/2 pound mushrooms, chopped very fine
1/4 pound plus 6 tablespoons butter
3 tablespoons of flour
salt and pepper to taste
1 pound chicken livers
4 tablespoons butter
1/4 cup cognac
pinch of nutmeg
parsley, chopped

Steps:

  • Cook mushrooms slowly with 1/4 pound of butter until they are black and thoroughly mellow. This will take about 2 hours. The mushrooms should be very concentrated with a strong mushroomy odor. Add more butter if necessary during the cooking.
  • When the mushrooms are thoroughly done add 6 more tablespoons of butter and flour. Blend this well and continue cooking the mixture for 1/2 hour more. Season to taste with salt and pepper and keep warm.
  • Sauté 1 pound of chicken livers in 4 tablespoons of butter until they are lightly browned but not too well done. Shake the pan so the livers brown on all sides. When they are done, mash them thoroughly or put them through a food mill. Combine the mashed livers with the mushroom mixture. Rinse out the pan in which the livers were cooked with 1/4 cup of cognac and add this to the mixture. Taste for seasoning and add a pinch of nutmeg and a little chopped parsley. Keep this sauce warm and serve it with the turkey.

3 oranges
1 lemon
3 cups chicken stock (a mix of the two is best) or 3 cups beef stock (a mix of the two is best)
3 tablespoons red wine vinegar
3 tablespoons granulated sugar
salt & freshly ground black pepper

Steps:

  • Peel the zest off of 2 oranges and the lemon with a vegetable peeler; set aside.
  • Squeeze the juice out of all the oranges and the lemon; set aside.
  • In a saute pan, over low heat, cook the sugar with the vinegar until reduced to a dark syrup.
  • Add the stock and orange and lemon juices; bring to a boil.
  • Reduce heat and simmer for about 45 minutes, skimming any foam that appears on the top.
  • Once done, the sauce should coat the back of a spoon.
  • Meanwhile, cut the reserved zests into thin julienne strips; add to sauce the last couple of minutes of cooking.
  • Season sauce with salt and pepper to taste; serve hot.

1 (6 lb) veal rump roast
4 -6 tablespoons shortening
flour
1 garlic clove
2 teaspoons salt
1 teaspoon pepper
1/2 lb mushroom
2 1/2 cups boiling water
2 chicken bouillon cubes
1/4 cup tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon oregano
1/4 teaspoon hot pepper sauce
1/4 teaspoon saffron
1/4 teaspoon allspice
3 ounces blanched almonds
16 small white onions
8 medium potatoes
1 (10 ounce) package green peas, frozen

Steps:

  • Cut the bones out of the veal and trim fat, cut into 2" chunks. Heat the shortening in a large skillet. Dredge meat in flour. Drop garlic into the skillet and begin browning some of the meat. Season with salt and pepper as it browns. Remove brown meat to toweling. Saute mushrooms in same skillet until tender and drain on paper towel. Without cleaning skillet, add the water and bouillon cubes. Add tomato paste and stir until smooth, simmering slowly. Stir in worcestershire sauce, oregano, hot sauce, saffron, and spices. Cut the almonds in half and stir into the sauce. Put some pieces of veal in the bottom of a 4 quart casserole and build alternate layers of meat, mushrooms, sauce, onions and potatoes. Cover and bake in slow oven (300*) for 1 3/4 hours. About 20 minutes before serving, add frozen peas in clusters here and there, and return to oven.

4 boneless chicken breasts, sliced into bite-size pieces
1 (28 ounce) jar ragu garden vegetable spaghetti sauce or 1 (28 ounce) jar any vegetable spaghetti sauce
1 (14 ounce) jar roasted red peppers
1 small onion, chopped
6 -7 large mushrooms, sliced
3 garlic cloves, chopped
2 tablespoons light brown sugar
1/4 cup red wine
olive oil

Steps:

  • In a large skillet, saute mushrooms, onions, and garlic in olive oil until onions are translucent and mushrooms golden brown.
  • Add chicken and cook until no longer pink.
  • Add jar sauce, wine and brown sugar; simer 15 minutes on medium-low heat.
  • Drain roasted peppers of oil and slice into strips; add to sauce and simmer 5 minutes more.
  • Serve immediately over pasta of your choice.
