I needed a recipe to use up all the zucchini from my garden. I wanted something easy, delicious, and healthy. It's called dump because it's not exact measurements, and you can dump in what you like. Don't like hamburger, dump in cooked chicken, or pork. So easy, so yummy!

1 medium zucchini, sliced and cut into quarters
1 medium onion, chopped
1 can chopped/diced tomatoes
1/2 cup Uncle Ben's converted brand rice (uncooked - not instant)
1/2 lb browned hamburger
2 tablespoons cooking oil
salt and pepper

Steps:

  • Fry zucchini in oil until almost tender, add onions, cook another 5 minutes, then add tomatoes and stir well, remove from heat.
  • Salt& pepper to taste.
  • Grease medium size baking/casserol dish.
  • Add 1/2 of the zucchini mixture, sprinkle rice on top, then the hamburger, top with remaining zucchini mixture, salt and pepper to taste.
  • Cover, bake 40 minutes until rice is done.

Zucchini bread in only one step? We call it summer's greatest cake. Here's a moist, spiced zucchini quick bread recipe that anyone can make, and everyone will adore.

2 cups grated zucchini, from 1 large or 2 smaller zucchini
2 eggs, lightly beaten
2/3 cup canola or other neutral oil
1 cup sugar
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 cups all-purpose flour

Steps:

  • Preheat the oven to 350°F and grease or line a 9x5" loaf pan or cake pans of choice.
  • In a large mixing bowl, combine all the ingredients and stir by hand until well mixed. Be sure to scrape the bottom of the bowl to make sure everything is combined.
  • Pour batter into the loaf or cake pans, and bake until the cake feels firm on top and a cake tester comes out clean, about 1 hour for a loaf cake; less if divided into two cake pans. Cool in the pan for 20 to 30 minutes, then turn out onto a cooking rack to cool fully.

8 cups zucchini
1 cup sugar
3 tablespoons flour
1 dash salt
1 teaspoon cinnamon
3/4 teaspoon cream of tartar
1 tablespoon lemon juice
1 (10 ounce) can crushed pineapple
1 box yellow cake mix (Jiffy) or 1 box white cake mix (Jiffy)
1/2-1 cup butter, melted
1/2 cup nuts, chopped (optional)

Steps:

  • PEEL AND CUT ZUCCHINI LENGTHWISE, STRIP OUT SEEDS, CUT IN 1/2" SLICES, COOK IN BOILING WATER UNTIL TENDER.
  • DRAIN, COOL IN COLD WATER FOR 5 MINUTES.
  • DRAIN, ADD SUGAR, FLOUR, SALT, CINNAMON, CREAM OF TARTER AND LEMON JUICE.
  • STIR WELL.
  • ADD PINEAPPLE AND JUICE.
  • MIX WELL.
  • DO NOT BEAT.
  • POUR INTO A GREASED BAKING DISH (13X9" pan).
  • SPREAD DRY CAKE MIX OVER TOP.
  • DRIZZLE BUTTER OVER CAKE MIX.
  • SPRINKLE NUTS ON TOP.
  • BAKE AT 350F degrees FOR 60 MINUTES.
