Thai It! You'll Like It! image

This flavorful pasta dish pairs shrimp or chicken with noodles and a peanutty sauce. I don't know how authentic it is, but I do know it's creamy and delicious! And as an added bonus, it's low-fat. This recipe is from Looneyspoons by Janet and Greta Podleski.

Number Of Ingredients 13

12 ounces uncooked fettuccine or 12 ounces linguine (can also use rice noodles, spaghetti, or any other noodle of your choice)
2 cups sliced red bell peppers (sliced in thin, long strips)
1 cup snow peas, trimmed and halved
1/3 cup chopped green onion
1/2 cup low-sodium low-fat chicken broth
2 teaspoons sesame oil
2 tablespoons reduced-fat peanut butter (or soy nut butter)
1 1/2 tablespoons reduced sodium soy sauce
1 tablespoon white vinegar or 1 tablespoon rice vinegar
1 teaspoon grated gingerroot
1 clove garlic, minced
1/2 teaspoon crushed red pepper flakes (I omit this)
1 lb cooked shrimp (or chopped cooked chicken breast)

Steps:

  • Cook pasta according to package directions; drain and keep warm.
  • While pasta is cooking, prepare sauce.
  • In a large saucepan, combine all ingredients except shrimp; mix well.
  • Bring to a boil; reduce heat to medium.
  • Cook and stir for 3-4 minutes, until vegetables are crisp-tender and sauce is bubbly and slightly thickened.
  • Stir in shrimp (or chicken) and cook just until heated through, 1-2 minutes; do not overcook or shrimp will be rubbery.
  • Toss hot shrimp sauce with pasta and serve immediately.

1 1/4 to 1 1/2 pounds flank steak
Salt
1 pound whole-grain or whole-wheat spaghetti
5 to 6 ounces shiitake mushrooms
1 red bell pepper
1 hot red chile pepper
2 tablespoons high-temp oil such as peanut, canola, or safflower
3 tablespoons curry paste, such as Patak's, mild to medium heat
3 to 4 garlic cloves, grated or chopped
4 to 5 scallions, cut into 1-inch-long pieces
3 tablespoons fish sauce
2 cups chicken stock
1 cup frozen shelled edamame
1 loosely packed cup fresh basil leaves, thinly sliced or torn
Zest and juice of 1 lime
Black pepper

Steps:

  • Place the flank steak in the freezer for a few minutes to aid in thinly slicing it safely.
  • Bring a large pot of water to a boil, salt the water, and cook the pasta to al dente.
  • While the pasta water comes to a boil, stem and thinly slice the mushrooms, seed and thinly slice the bell and hot peppers.
  • Remove the meat from the freezer and thinly slice into 1/4-inch-wide, 2-inch-long pieces.
  • In a large skillet or wok, heat the oil over medium heat with the curry paste for 1 to 2 minutes. Raise the heat to medium high. Add the beef and cook in a single layer for 2 to 3 minutes, then flip the meat and add the shiitakes, garlic, bell and hot peppers, and scallions. Stir-fry for 2 to 3 minutes more, then add the fish sauce and stock and bring to a boil. Add the edamame, heat through for a minute, then add the basil.
  • Drain the pasta. Place in individual bowls, then add the steak, vegetables, and broth. Sprinkle the lime zest and juice over the mixture, toss vigorously, and season with black pepper to taste.

1 tablespoon honey mustard
1 tablespoon low-fat mayonnaise
1/2 teaspoon lemon, zest of
6 ounces bacon, cooked,fat drained and crumbled
1 10 inch white round sourdough bread or 1 round whole wheat bread
1 cup baby spinach leaves or 1 cup watercress, washed,dried
8 ounces thinly sliced turkey breast, cooked
4 slices low-fat cheese (Swiss is good)
1 cup alfalfa sprout
1 large tomatoes, sliced
1 small cucumber, sliced

Steps:

  • Slice the loaf in half across and pick out bread chunks until you have about 1/2" shell all round, top and bottom (save the bread crumbs for other recipes) Combine the honey mustard, mayo and lemon zest.
  • Line the bottom with half the spinach (watercress).
  • Arrange the crumbled bacon, turkey,cheese sprouts, tomatoe and cucumber, top with remaining spinach Spread the Mustard, mayo mixture inside the top half.
  • Place top on the loaf, press down and cut into 6 wedges& Serve.
