THAI IT! YOU'LL LIKE IT!
This flavorful pasta dish pairs shrimp or chicken with noodles and a peanutty sauce. I don't know how authentic it is, but I do know it's creamy and delicious! And as an added bonus, it's low-fat. This recipe is from Looneyspoons by Janet and Greta Podleski.

Steps:
- Cook pasta according to package directions; drain and keep warm.
- While pasta is cooking, prepare sauce.
- In a large saucepan, combine all ingredients except shrimp; mix well.
- Bring to a boil; reduce heat to medium.
- Cook and stir for 3-4 minutes, until vegetables are crisp-tender and sauce is bubbly and slightly thickened.
- Stir in shrimp (or chicken) and cook just until heated through, 1-2 minutes; do not overcook or shrimp will be rubbery.
- Toss hot shrimp sauce with pasta and serve immediately.
THAI IT YOU'LL LIKE IT HOT CURRY BEEF NOODLE BOWLS
Steps:
- Place the flank steak in the freezer for a few minutes to aid in thinly slicing it safely.
- Bring a large pot of water to a boil, salt the water, and cook the pasta to al dente.
- While the pasta water comes to a boil, stem and thinly slice the mushrooms, seed and thinly slice the bell and hot peppers.
- Remove the meat from the freezer and thinly slice into 1/4-inch-wide, 2-inch-long pieces.
- In a large skillet or wok, heat the oil over medium heat with the curry paste for 1 to 2 minutes. Raise the heat to medium high. Add the beef and cook in a single layer for 2 to 3 minutes, then flip the meat and add the shiitakes, garlic, bell and hot peppers, and scallions. Stir-fry for 2 to 3 minutes more, then add the fish sauce and stock and bring to a boil. Add the edamame, heat through for a minute, then add the basil.
- Drain the pasta. Place in individual bowls, then add the steak, vegetables, and broth. Sprinkle the lime zest and juice over the mixture, toss vigorously, and season with black pepper to taste.

Not too heavy on the fat or calories and OOOOh so good. Once you have spread the top with the mayo mixture don't let it sit around or it will get soggy

Steps:
- Slice the loaf in half across and pick out bread chunks until you have about 1/2" shell all round, top and bottom (save the bread crumbs for other recipes) Combine the honey mustard, mayo and lemon zest.
- Line the bottom with half the spinach (watercress).
- Arrange the crumbled bacon, turkey,cheese sprouts, tomatoe and cucumber, top with remaining spinach Spread the Mustard, mayo mixture inside the top half.
- Place top on the loaf, press down and cut into 6 wedges& Serve.
