- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
- Bake for 18 to 20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Steps:
- Whisk together the flour, cornstarch, cream of tartar, baking soda, salt, cinnamon, nutmeg & ground cloves.
- In a separate large bowl beat together the butter and sugars until fluffy. Turn the mixer down to low then beat in the egg, vanilla and pumpkin.
- Slowly add in the flour mixture. The dough will be very sticky.
- Cover the bowl with clingfilm and refrigerate for at least 2 hours or up to 2 days.
- When ready to bake, take the dough out of the fridge.
- Preheat the oven to 350F degrees and line 2 cookie trays with parchment paper or silicone baking mats.
- In a small bowl whisked together the sugar and cinnamon for the cinnamon sugar coating.
- Form the dough into balls of about 1.5 tablespoons in size, then roll in the cinnamon sugar coating and flatten slightly
- Place the cookies on the cookie sheets about 2 inches apart.
- Bake for about 8-10 minutes until the tops look just set.

- Beat pumpkin, butter, white sugar, and brown sugar together using an electric mixer in a mixing bowl until creamy. Beat in eggs.

- Preheat an oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
- Stir the flour, oats, baking powder, cinnamon, nutmeg, pumpkin pie spice, ginger, and salt in a bowl.

- Next time I will add more spices and maybe add some cinnamon or nutmeg to the frosting.

PUMPKIN SPICE COOKIES
Back when I was doing Weight Watchers several years ago, I kept hearing about Bakers Breakfast Cookies. I couldn't get them where I lived and that's all anyone could talk about. Someone sent me some. I looked at the ingredients and came up with these. These are NOT typical cookies! They are hefty stick to your rib cakey cookies! And you will be sorely tempted to add more flour. I don't know how they'd come out if you do. But if you follow the recipe, you get the cake-like cookies. Also please note, I have no clue how many "regular" size cookies these would make, or how long they would take to bake, so if you try them normal size, could you let me know? Thanks! I have no idea how Weight Watchers does their points system anymore, so use whatever tools you use now to figure out the points! :)

- Preheat oven to 300°F.
- Combine flour, soda, salt, and pumpkin pie spice in a medium bowl. Mix well with a wire whisk and set aside.
- In a large bowl, blend sugars with an electric mixer. Add the butter and beat to form a grainy mixture. Then add egg, pumpkin and vanilla. Beat at medium speed until light and fluffy.

- Combine flour, pumpkin pie spice, baking powder, baking soda and salt in a medium sized bowl.
