2 1/4 pounds unrefrigerated ripe tomatoes (preferably plum)
1/4 cup fresh basil leaves
1 tablespoon flat-leaf parsley
1 tablespoon chopped garlic (from 2 garlic cloves), plus more if desired
1/4 cup extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
1 pound spaghetti or spaghettini
Grated Parmesan cheese, for serving (optional)

Steps:

  • Finely chop tomatoes, basil, parsley, and garlic, and mix together with oil (or pulse ingredients, including oil, in a food processor to blend).
  • Bring a large pot of salted water to a boil. Add pasta, and cook until al dente. Drain pasta, and toss it in a serving bowl with the raw sauce. Transfer to 6 shallow bowls, and drizzle with oil. Serve with cheese.

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

3 tablespoons butter or olive oil
1 1/2 to 2 pounds tomatoes, cored and roughly chopped
1 pound linguine, spaghetti or other long pasta
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil, and salt it. Place the butter or oil in an 8- or 10-inch skillet, and turn heat to medium. When butter melts or oil is hot, add tomatoes and turn heat to high.
  • Cook, stirring occasionally, until tomatoes begin to juice up, then turn the heat to low and keep warm, stirring occasionally, while you cook pasta.
  • Cook pasta until it is tender but firm. Drain, and toss with tomatoes and cheese. Season with salt and pepper, toss again and serve immediately.

1 pound pasta
Kosher salt
1 medium onion, peeled, quartered
1 celery stalk, quartered
1 small carrot, peeled, quartered
2 garlic cloves, peeled
2 tablespoons olive oil
1/2 pound ground beef or vegetarian substitute such as Lightlife Plant-Based Ground
1/2 pound ground pork or vegetarian substitute such as Lightlife Plant-Based Italian Sausage
2 tablespoons tomato paste
1 teaspoon dried oregano
Freshly ground black pepper
1/4 cup red wine
1 (15-ounce) can tomato sauce
2 tablespoons cold unsalted butter
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, process onion, celery, carrot, and garlic in a food processor until finely chopped.
  • Heat oil in a large skillet over high. Add chopped vegetables, beef, and pork and cook, breaking up with a spatula, until meat is beginning to brown, about 3 minutes. Stir in tomato paste, oregano, 3/4 tsp. salt, and 1/2 teaspoon pepper; cook, stirring occasionally, until heated through, about 1 minute. Add wine and cook, stirring constantly, until reduced by half, about 1 minute more. Stir in tomato sauce, reduce heat to medium, and simmer until sauce is slightly thickened, about 4 minutes.
  • Remove from heat, then stir in butter. Toss meat sauce with pasta, top with Parmesan, and season with pepper.

  • Let sauce cool, then chill in an airtight container for up to 3 days or freeze for up to 2 months.

10 to 12 fresh plum tomatoes (approximately 2 to 2 1/2 pounds)
4 ounces extra-virgin olive oil, plus additional extra-virgin olive oil, optional
3 cloves garlic, finely chopped
Pinch crushed red pepper
1/2 medium onion, finely chopped
Kosher salt
Freshly chopped parsley leaves

Steps:

  • Peel tomatoes by scoring the skin of each tomato with a sharp knife (do not cut too deep). Then, place scored tomatoes into a pot of boiling water and boil for approximately 1 to 1 1/2 minutes. Remove tomatoes and plunge into cold water. Peel and dice tomatoes and set aside.
  • Heat olive oil in a saucepan. When hot, add garlic and crushed red pepper. Saute until garlic turns slightly golden. Add chopped onion and saute an additional 2 1/2 minutes.
  • Add chopped plum tomatoes and cook approximately 5 minutes. Add salt to taste. Add chopped parsley and extra virgin olive oil if desired, just before using.

1/4 KRAFT Balsamic Tomato Basil Vinaigrette Dressing
15 plum tomatoes (2 lb.), quartered
4 cloves garlic
1/2 cup fresh basil leaves
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, blend all remaining ingredients except cheese in blender until smooth.
  • Drain spaghetti; place in large bowl. Add tomato sauce; mix lightly. Sprinkle with cheese.

1/4 cup olive oil
1 1/2 cups onions, diced
2 teaspoons garlic, minced (I typically increase this to a tablespoon since I love garlicky pasta sauce)
3 (14 1/2 ounce) cans plum tomatoes, crushed
1/2 cup reserved meatball pan dripping (meatball recipe posted separately)
1/2 cup fresh parsley, minced
1 tablespoon sugar
1 teaspoon crushed red pepper flakes
salt (to taste)

Steps:

  • Heat olive oil over medium high heat in a large dutch oven or similar pan.
  • Saute onions in oil for approximately 4 minutes, or until translucent. Add garlic and cook for an additional 30 seconds.
  • Add the tomatoes, pan drippings, parsley, sugar, red pepper flakes. Salt to taste.
  • Simmer for 15 minutes.
  • If you are using meatballs with the sauce, add the cooked meatballs after the 15 minutes and simmer for an additional 10 minutes.

This is the closest recipe I've found to the deliciously simple tomato sauces I've tried in Italy. Since in the States our tomatoes aren't sweetened by rich, volcanic soil, a little bit of sugar helps make the sauce more vibrant.

1 tablespoon olive oil
3 cloves garlic, peeled and halved
18 plum tomatoes, or more to taste - cored, seeded, and chopped
2 teaspoons salt
1 teaspoon white sugar
⅛ cup chopped fresh basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and brown for 3 to 4 minutes. Add tomatoes, salt, and sugar; cook for 15 minutes.
  • Place a large bowl on a work surface. Insert a colander inside the bowl. Place cooked tomatoes in the colander to drain, saving excess liquid. Transfer tomatoes to the bowl of a food processor and pulse until blended to the desired consistency. Return tomatoes to the saucepan. Add basil and cook for 20 to 30 minutes more, adding some of the reserved tomato liquid if the sauce is too thick.
