1 pound fresh asparagus, trimmed
2 tablespoons olive oil
3 cloves garlic, pressed through a garlic press
¼ teaspoon freshly cracked mixed peppercorns
1 ½ cups shredded Gouda cheese
freshly cracked Himalayan pink salt to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Spread out asparagus on the prepared baking sheet and sprinkle with olive oil, fresh garlic, and cracked peppercorns. Toss to coat evenly.
  • Bake in the preheated oven for 12 to 15 minutes. Remove from oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spread Gouda cheese down the center of the asparagus spears and broil until cheese is melted, 3 to 5 minutes. Remove from oven and sprinkle with pink Himalayan salt.

2 pounds thin asparagus (rinsed with ends cut off)
3 cups water
2 tablespoons salted butter
2 tablespoons whole wheat flour
3/4 cup shredded mozzarella (divided)
1/2 cup shredded asiago cheese
1/2 cup grated parmesan cheese
Sea Salt to taste
Garlic Pepper (or regular pepper to taste)
Fresh parsley for garnish (optional)

Steps:

  • Preheat the broiler on your oven. Place the rack on the top rung.
  • In a large skillet, bring 3 cups water to a boil. Toss in asparagus and cook covered for 4 minutes or until fork tender. Remove asparagus and place on a nonstick baking sheet (or pre-sprayed baking sheet), in a long row. Season with sea salt and garlic pepper to taste. Set aside.
  • Pour 1 cup asparagus water from the skillet into a measuring cup and discard the rest.
  • In the same skillet, now empty, heat 2 tablespoons salted butter over medium heat. Add the flour and stir to combine, about 1 minute.
  • Pour the asparagus water into the skillet and combine using a whisk until a thick sauce forms. About 4 minutes.
  • Turn off the heat and stir in the parmesan, asiago, and 1/2 cup mozzarella. Stir until creamy and fully melted.
  • Pour the cheese sauce over the center of the asparagus. Top with the remaining 1/4 cup mozzarella.
  • Broil for 4-6 minutes, or until the cheese is bubbly and golden brown. Watch this step carefully to not overcook.
  • Garnish with parsley if desired. Serve and enjoy!

1 cup chopped onions

6 cups chicken stock
2 teaspoons chopped garlic
1 pound Arborio rice

1/4 cup grated Parmigiano-Reggiano cheese
1/4 cup grated Romaino cheese
1/4 cup grated Asigo cheese
2 tablespoons chopped chives

Steps:

  • In a large saute pan, over medium heat, add the olive oil. When the oil is hot, add the onion and season with salt and pepper. Saute for 3 minutes, or until the onions are slightly soft. Add the stock and garlic. Bring the liquid to a boil and reduce to a simmer. Cook for 6 minutes. Add the rice and simmer for 18 minutes, stirring constantly, or until the mixture is creamy and bubbly. Add the butter, cream, cheese and chives. Reseason with salt and pepper. Simmer for 2 minutes and serve immediately.

Steps:

  • Cut off bases on Asparagus and boil in water in sauce pan for 10 minutes.
  • Pre-heat oven to 400.
  • Cover cookie sheet or 9 x 11 pan with aluminum foil, lie Asparagus stalks on foil - season with pepper.
  • Cover with slices of Brie, season with pepper.
  • Cover Brie with diced cheddar, season with pepper.
  • Cover Cheddar with grated mozzarella, season again.

4 lbs asparagus
1/3 cup butter
1/2 cup all-purpose flour
5 cups milk
8 ounces cream cheese
1 teaspoon grated fresh lemon rind
1 tablespoon lemon juice
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg
15 lasagna noodles
2 cups shredded mozzarella cheese
1/2 cup freshly grated parmesan cheese

Steps:

  • Bend asparagus spears gently to snap off tough end.
  • Cut tender parts into 1" pieces.
  • Wash under cold running water.
  • Shake off excess water and place in microwaveable container.
  • Microwave on HI for 3 minutes (alternately, cook in boiling water for 3 minutes).
  • Drain and rinse under cold water, drain again.
  • Set aside 1 1/2 cups asparagus tips.
  • In saucepan, melt butter over medium heat.
  • Gradually whisk in flour and cook, stirring constantly, for 1 minute.
  • Whisk in milk and stirring constantly, cook for 10 minutes or until thickened.
  • Remove from heat.
  • Stir in cream cheese, lemon rind, lemon juice, salt, pepper and nutmeg until cheese is melted.
  • Meanwhile, cook noodles in boiling water until tender (about 10 minutes).
  • Place 3 noodles in a 13x9 baking dish.
  • Spread with one cup sauce, then 1/4 of the asparagus (not including reserved tips), then 1/4 of the mozzarella.
  • Repeat layers 3 more times then top with final layer of noodles and sauce.
  • Sprinkle with Parmesan cheese.
  • Bake in preheated 375 degree oven for 35-40 minutes or until bubbling and golden.
  • Sprinkle reserved asparagus tips over top.
  • Bake for an additional 5 minutes.
  • Let sit for 10 minutes before serving.

2 cups whole milk
8 ounces cream cheese, cubed
8 ounces sharp cheddar, grated
4 ounces Gruyere, grated

Steps:

  • Preheat broiler, with rack 6 inches from heating element. Brush 4 small (8-ounce capacity) gratin dishes with butter. Bring a large pot of salted water to a boil; add pasta and cook according to package directions 1 minute less than al dente. Add asparagus and cook 1 minute more; drain.
  • Meanwhile, heat milk in a medium pot over medium-high until just simmering. Add cream cheese; whisk until smooth. Reserve 1/4 cup each cheddar and Gruyere; add remaining cheeses and butter to pot and whisk until smooth. Season with salt and pepper. Add cooked pasta and asparagus; stir to coat. 85g butter , cubed
85g cheddar (such as Montgomery or vegetarian alternative), or other hard cheese, finely grated
5 eggs
175ml milk
100g cheddar (such as Montgomery or vegetarian alternative), or other hard cheese, grated
300g asparagus , trimmed and cut in half lengthways

Steps:

  • Put the flour in a bowl, add the butter to the flour and rub in with your fingertips until it resembles breadcrumbs. Add the grated cheddar into the pastry and mix. Add 3 tbsp cold water and mix until the pastry forms a ball. Wrap in cling film and chill for 5 mins. Butter a 20 x 6cm deep loose-bottom tart tin, or a 35 x 12cm rectangular tart tin.
  • Heat oven to 180C/fan 160C/gas 4. Lightly dust the work surface with flour, roll out the pastry and line the tin. Chill in the freezer for 20 mins, then line the pastry case with baking paper, fill with beans and cook for 15 mins. Remove the beans and paper, then return the pastry case to the oven for 10 mins.
  • Crack the eggs into a jug, whisk, then add the milk and whisk again. Sprinkle half the grated cheese over the pastry case, then add the asparagus, egg mix and remaining cheese (if using a rectangular tin, you may not need all the mixture, so add it gradually). Bake in the lower half of the oven for 30-35 mins or until the egg mix is set.
