Easy to make and healthy cranberry chocolate candy that is full of goodness and sweetened just with fruit. High in healthy fats and plant protein. Free of gluten, eggs, dairy, butter and oil.

3/4 cup / 90g Dried Cranberries (sweetened with fruit juice)
3/4 cup / 75g Ground Almonds / Almond flour
1.7 oz / 50g Dark 80%+ Chocolate

Steps:

  • Blend the ground almonds and dried cherries together in a small blender until they form a ball.
  • Stop blending the moment the blender begins to stress.
  • A 600w bullet type blender is enough to make this cranberry chocolate candy recipe.
  • Melt the chocolate using a bain marine, melt 3/4 bring off the heat then stir in the remaining 1/4 for easy chocolate tempering.
  • Roll the cranberry almond dough into about 12 bite sized balls.
  • Dip the cranberry balls in the chocolate, spooning over to coat in a thick layer of dark chocolate.
  • Place the chocolate cranberry candy down on a flat surface to set and enjoy within a couple of days.
  • The chocolate cranberry candies will last for several weeks in an airtight container.

1 1/2 cups fresh cranberries
1/2 cup sugar
1 (6 ounce) package semi-sweet chocolate chips
1 (6 ounce) can evaporated milk (2/3 cup)
1/2 teaspoon vanilla
4 cups graham cracker crumbs
2 cups miniature marshmallows
1/2 cup pecans, chopped

Steps:

  • In saucepan, combine cranberries, sugar, and 1/2 cup water. Bring to boil; simmer for 3 minutes, or until cranberries are tender but hold their shape.
  • Drain, reserving 2 tbsp. syrup.
  • Melt chocolate with milk; stir till smooth. Add vanilla.
  • Stir in remaining ingredients, cranberries, and reserved syrup.
  • Pat in well-greased 9x9x2-inch baking dish. Chill till firm. Cut in squares.

This recipe sounds crazy, but it totally works. The sauce is neither too sweet nor too salty. Yummy and pretty enough for company. Easy and uses ingredients I always have on hand. You can use less chicken and the same amount of sauce ingredients; just use a smaller baking dish so sauce doesn't burn. Good served with rice to soak up all that delicious sauce. If you don't have whole berry sauce, jellied sauce works too. I've sometimes added some dried cranberries for visual interest, but they're not necessary.

1 (1 1/4 ounce) envelope dry onion soup mix
1 (14 -16 ounce) can whole berry cranberry sauce

Steps:

  • Preheat oven to 350°F Spray a 13x9" baking dish with non-stick.
  • Combine soup mix and cranberry sauce.
  • Place chicken in prepared dish; cover with sauce.
  • Cover and bake 25 minutes; remove cover and bake 15 minutes longer or until internal temperature reaches 165°F.

1 (14 ounce) can sweetened condensed milk
1 (16 ounce) package frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Mix cranberry sauce and condensed milk together in a bowl. Slowly mix in whipped topping until combined. Transfer to a pretty serving dish, cover, and refrigerate for 4 to 8 hours. Serve cold.

  • Line an 8-inch square baking pan with parchment paper, greased foil or wax paper. Or, use this break-apart candy mold. Set aside at room temperature.
  • Melt the chocolate using the double boiler method, or do the following: add chocolate chips and coconut oil to a medium, microwave-safe bowl (large enough to add cereal later). Heat in 20-second increments until softened and melty. Stir in between heating increments, until smooth.
  • Add cereal to melted chocolate. Here is the vegan gluten free brown rice crisp cereal I use. Using a rubber spatula, stir and fold until well incorporated. Pour this mixture into the prepared baking pan. Using the spatula, smooth into an even layer. Tap the pan a few times to help even out the mixture.
  • Allow to set at room temperature until firm. Or, for a quick fix, follow freezing instructions. Transfer this pan into the freezer. Freeze for 10-15 minutes. Remove from freezer and allow to thaw for 10-15 minutes. Slice into 18 rectangular bars (3 rows by 6 columns). Enjoy! Storing instructions below.
