Banana, Oatmeal, Blueberry Muffins image

The are great for breakfast or anytime, not very sweet. They are lighter and have nice texture with the addition of the oatmeal. These are also good without the blueberries added in.

1 1/2 c all purpose flour
1 c rolled oats
1/2 c white sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
3/4 c milk
1/3 c vegetable oil
1 tsp vanilla extract
1 1/2 c mashed banana
1 c blueberries, fresh

Steps:

  • 1. 1. Combine flour, oats, sugar, baking powder, soda and salt.
  • 2. In a large bowl, beat the egg lightly. Stir in the milk, oil and vanilla. Ad the mashed banana and combine well. Stir the flour mixture into the banana mixture and blueberries until just combines. Line a 12 cup muffin tin with paper bake cups and divide the batter among them.
  • 3. Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

An easy oatmeal muffin recipe that is made with only 4 wholesome ingredients. That's right, these easy muffins are made with rolled oats, bananas, blueberries, and almond milk. That's it!

3 cups old fashioned oats (regular or gluten free )
5 bananas (overripe )
¼ cup almond milk (unsweetened )
1 cup blueberries (fresh )

Steps:

  • Preheat oven to 350° Fahrenheit.
  • Grease a 12-count muffin tin with nonstick spray.
  • Add all the ingredients to a food process, and process until evenly creamy.
  • Using an ice cream scoop, fill each muffin tin well to the top with batter.
  • Place in the oven, and bake for 18-20 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
  • Enjoy warm!

1 cup white sugar
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
1 tablespoon milk
1 teaspoon allspice
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
½ cup old-fashioned oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.
  • Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat first egg into the butter until completely blended; beat in the vanilla extract with the remaining egg.
  • Mix bananas, milk, and allspice together in a separate bowl; stir into the creamed butter mixture. Whisk flour, baking powder, and baking soda together in a separate bowl; slowly stir into banana-butter mixture until batter is just mixed. Fold oats and walnuts into batter. Scoop batter into the muffin cups using a large ice cream scoop.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 35 minutes.
