AMERICAN FLAG FRUIT TART



American Flag Fruit Tart image

A sweet pastry crust with a luscious cream cheese filling topped with berries and cream to resemble an American flag! Crust adapted from Dorie Greenspan.

1 1/2 cups all-purpose flour
1/2 cup powdered sugar
1/4 teaspoon salt
1 stick plus 1 tablespoon (9 tablespoons) very cold (or frozen) unsalted butter, cut into small pieces
1 large egg yolk
2 packages (16 ounces) cream cheese at room temperature
1 cup sugar
1 teaspoon vanilla
1 tablespoon lemon juice
1/2 pint blueberries
16 ounces fresh strawberries
1/2 cup heavy cream
2 tablespoons powdered sugar

Steps:

  • To make crust,put the flour, powdered sugar and salt in a food processor and pulse to combine.
  • Add the butter and pulse until the mixture resembles cornmeal with some pea sized chunks.
  • Whisk the egg yolk, and add it a little at a time, pulsing after each addition. Continue pulsing with long 10 second pulses until the mixture comes together.
  • Turn the dough out onto a lightly floured work surface and gently knead until any extra flour is incorporated.
  • Press the dough into an 11-inch greased tart pan with a removable bottom. Press the dough evenly over the bottom and up the sides of the pan. Freeze the crust for at least 30 minutes.
  • Preheat the oven to 375 degrees.
  • Top with a piece of non-stick foil or buttered foil and press it onto the surface.
  • Place the tart pan on a baking sheet and bake for 25 minutes or until the crust is golden brown. Remove to wire rack to cool completely.
  • When crust is cooled, make filling by placing all filling ingredients in a bowl and beat until the mixture is smooth. Scrape into the tart shell and smooth top with an offset spatula.
  • To decorate, select the biggest blueberries and cut strawberries in half, removing the stems and hulls. Set aside.
  • Whip cream with powdered sugar and pipe some rows of cream across the surface leaving enough space between for rows of strawberries. Leave one corner free of whipped cream for the blueberries.
  • Add strawberry halves, cut side down, in rows, then fill the open area with rows of blueberries.
  • Keep chilled until you serve.

1 package(s) 8 oz. softened cream cheese
1/4 cup(s) sugar
1/2 teaspoon(s) almond extract
1 cup(s) fresh blueberries

1 cup(s) halved fresh strawberries

Steps:

  • Press Cookie dough into an ungreased 12 in. pizza pan. Bake at 350 for 10 min-15 min.or until golden brown. Cool on wire rack.
  • In a small bowl,beat cream cheese,sugar,and extract until smooth. Spread over cooled crust. In the center of the tart,arrange blueberries in the shape of a Star. Add a raspberries around the outer border. Place strawberries in the middle of the tart.

This delicious No Bake Fruit Tart is all dressed up in red, white and blue and perfect for any celebration. Graham cracker crust, creamy cheesecake-like center with a hint of lemon all topped in red strawberries and raspberries as well as blueberries and blackberries. The presentation is gorgeous and this dessert recipe is always a winner!

Crust:
1 ½ cups graham cracker crumbs
6 Tablespoons butter, melted
1 Tablespoon sugar
Filling:
½ cup cold heavy whipping cream
½ teaspoon vanilla extract
8 ounces cream cheese, softened
1/2 cup powdered sugar
Zest of one lemon + 2 teaspoons lemon juice
Topping:
¾ pound fresh strawberries, sliced
1 pint raspberries
1 pint blueberries
(optional: add blackberries if you like
garnish with fresh mint if desired

Steps:

  • To prepare the Graham Cracker Crust: Mix the graham cracker crumbs together with the butter and the sugar until they are moist. Press into the bottom and up the sides of a tart pan. Place in the fridge for at least one hour.
  • To prepare the filling: In your stand mixer with the whisk attachment beat whipped cream and vanilla until stiff peaks form. Set aside.
  • With your mixer and the paddle attachment, cream together cream cheese, powdered sugar, lemon zest and lemon juice until smooth.
  • Gently fold in whipped cream into cream cheese mixture, taking care not to mix it too much and "deflate" the whipped cream.
  • To assemble the tart: Spread the filling into the graham cracker crust. Top with fresh berries. Chill for an hour before slicing and serving.

Patriotic colors and summery flavors combine to make this the perfect 4th of July dessert. Red raspberries, white chocolate pastry cream and blueberries top an almond shortbread crust. Add a dusting of confectioners' sugar and you have an easy, yet elegant, pastry. I made the tart in a rectangular pan to mimic the shape of the flag, but it also works well in a more traditional round pan or even as individual tartlettes. Later in the summer try this same dessert, but switch the berries for fresh peaches or plums.

1/4 cup almond meal
1 1/4 cups all-purpose flour
1/2 cup confectioners' sugar
1/4 teaspoon salt
9 tablespoons unsalted butter, at room temperature
1 large egg yolk
3 tablespoons cornstarch
1/2 cup sugar
4 large egg yolks
1 1/2 cups whole milk
1/2 vanilla bean
Pinch salt
1 tablespoon unsalted butter
2 1/2 ounces white chocolate, finely chopped
1 1/2 cups fresh blueberries
2 cups fresh raspberries
Confectioners' sugar for dusting the top

Steps:

  • To make the tart dough: In a food processor combine the almond meal, flour, confectioners' sugar and salt. Pulse several times to combine. Add the butter and egg yolk, process just until the dough comes together. Distribute the dough into the 13-by-4-inch tart pan (or 10-inch round).
  • Lay plastic wrap over the dough and press it into the pan so that it is an even thickness. Remove the plastic and freeze the dough until it is firm, about 20 minutes.
  • Preheat the oven to 350 degrees F. Cover the dough with foil and fill with pie weights or beans. This will keep the dough from slouching in the pan. Bake for 25 minutes, then remove the foil and beans, bake for an additional 5 to 10 minutes or until the crust is a light golden color. Allow to cool to room temperature.
  • Prepare the pastry cream: Whisk together the cornstarch and 1/4 cup of sugar. Add the egg yolks to the cornstarch and mix into a smooth paste. Set aside.
  • Bring the milk, remaining 1/4 cup of the sugar, vanilla bean, and salt to a gentle simmer in a medium saucepan. Slowly, and in small amounts, whisk the hot milk into the egg mixture. Once the egg mixture is warm to the touch, pour it back into the milk in the pan.
  • Bring the custard to a gentle boil, whisking continuously for 2 to 3 minutes. The pastry cream will thicken almost immediately, but it is important to cook the starch until it isn't grainy. When the pastry cream is done it will be smooth and glossy.
  • Remove from the heat and add the butter and white chocolate to the pastry cream. Allow to sit for 3 minutes, then gently whisk them together. Pour the pastry cream into a shallow container. Cover with plastic wrap, pressed directly on the surface of the cream to prevent a skin from forming. Set the container in the freezer for 15 minutes (this cools down the eggs quickly) and then refrigerate for up to a few days.
  • Fill the cooled tart shell with the pastry cream. Decorate the top with the berries and refrigerate until ready to serve. Dust with confectioners' sugar right before slicing and serving.

Nothing is as impressive as a fresh fruit tart. We make this delicious dessert at the bakery with our shortbread cookie crust, but for this tart I decided to go lighter with a yummy vanilla almond biscotti crust. It melts in your mouth ???? Not only does it taste amazing, the presentation is equally impressive.

Number Of Ingredients 6

1 and 1/2 cups vanilla biscotti crumbs, about 5-6 large biscotti
4 ounces unsalted butter, melted
1 recipe homemade vanilla pudding, chilled
1 cup homemade whipped cream
1 cup fresh blueberries
2 cups fresh raspberries

Steps:

  • Preheat oven to 350 degrees.
  • Begin by making the biscotti crust: Melt butter. Brush the bottom and sides of a 9-10 inch tart pan with some melted butter.
  • Place the biscotti in the food processor and puree until crumbs form. Add the melted butter and pulse
  • to combine.
  • Press the biscotti mixture evenly into the tat pan. Refrigerate for 30 minutes or freeze for 15 minutes so that the crust holds its shape when baked.
  • Bake for 10 minutes. Allow to cool completely.
  • When the tart shell (biscotti crust) has cooled completely, remove from pan and place on a serving plate.
  • Fill with vanilla pudding.
  • Arrange the blueberries to look like the stars on the American Flag.
  • Arrange the raspberries to look like the red stripes.
  • Fill a pastry bag or a ziplock bag, fitted with a large star tip with the whipped cream. If you do not have a decorating tip, it is ok to just cut the tip of the ziplock bag and pipe white stripes in between the raspberries.
  • Serve immediately or keep chilled in the refrigerator until serving time.

  • Preheat the oven to 350º F. Make your crust: in the bowl of a food processor, combine all shortbread crust ingredients, starting with only 1/2 cup coconut oil. Pulse a few times, until mixture is combined and holds together when pinched.   • Top with coconut cream: spoon coconut cream onto cooled tart. Using a spatula, spread out to evenly cover. If desired, use the back of a spoon to cream a gentle swirl texture on top. Top with fruit: place blueberries on top of 1/4 of tart, then place raspberries in American flag stripes pattern. If not serving immediately, keep refrigerated.
