GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

- In a small bowl, pour boiling water over dates, and set aside to cool. Preheat oven to 325 degrees F (165 degrees C). Grease a 10x10 inch baking pan.
- In a medium bowl, cream together the shortening and white sugar. Add eggs, one at a time, beating after each addition. Add the dates, including any water; mix well. Sift together the flour, cinnamon, nutmeg, and baking soda; stir into the date mixture. Then stir in the nuts.
- Spread the mixture evenly into the prepared 10x10 inch pan, and bake for 45 minutes in the preheated oven. When cool, cut into bars, and roll each bar in confectioners' sugar.

I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

- Make the crust: Preheat oven to 375 degrees. Butter a 9-by-9-inch baking pan. Line with parchment paper, leaving a 2-inch overhang. Butter parchment; set aside.
- In the bowl of a food processor, combine flour, sugar, salt, and butter. Pulse to combine. Add egg and pulse until evenly moistened. Transfer mixture to prepared pan; press into bottom (use the base of a dry measuring cup or a small offset spatula to help). Freeze for 10 minutes. Bake until lightly golden, 20 to 25 minutes.
- Make the filling: In a saucepan, combine dates, sugar, and cider. Cook over medium heat until soft and the consistency of jam. Using a hand blender, puree mixture until smooth. Stir in lemon zest. Spread mixture evenly over baked crust.
- Make the topping: In a medium bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Using your hands, work in butter to form crumbs. Evenly distribute crumbs over filling to cover. Bake until topping is golden brown and filling is set, 20 to 25 minutes. Run a paring knife around edges of pan to loosen; let cool completely in pan on wire rack. Using parchment overhang, remove from pan; cut into squares using a serrated knife.

- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
- Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.

- Preheat oven to 350 degrees. Butter an 8-by-8-by-2-inch baking pan, and set aside. In a large bowl, combine flour, oats, brown sugar, and baking soda. Add butter, and blend with your fingertips until mixture resembles coarse crumbs.
- Transfer two-thirds of the crumb mixture into prepared pan, and press into bottom and up sides. Spread date paste over bottom layer of the dough. Cover with remaining crumb mixture.
- Bake until golden brown, about 35 minutes. Transfer pan to a wire rack to cool completely. Invert onto a plate, then back onto a cutting board. Cut into 2-inch squares. Store in an airtight container for up to 1 week.

These are my all-time favorite bars; I just love dates and nuts together. These bars have a crumbly texture with a creamy date center enhanced by raspberry juice.

- Preheat the oven to 350°F. Lightly oil an 8-inch square baking pan with canola oil spray.
- To make the filling, place the dates, raisins, vanilla extract, and juice in a saucepan and bring to a boil. Decrease the heat and simmer, stirring occasionally, for 5 minutes, or until the liquid has been absorbed and the dates have formed a purée. Set aside.
- Grind 1 cup of the walnuts in a food processor until fine. Chop the remaining walnuts by hand until medium coarse. Place all the walnuts in a bowl. Add the oat flour, barley flour, and cinnamon. Mix well. In a separate bowl, stir together the agave nectar and canola oil. Pour over the flour mixture and combine with a fork or your fingers, until crumbly.
- Sprinkle slightly more than one half of the crumb mixture into the prepared baking dish. Pat down evenly to form the bottom crust. Spread the date purée over the crumb mixture and top with the remaining crumb mixture. Press down lightly. Bake for 25 minutes, or until golden. Cool for 30 minutes before cutting into squares.

- In medium bowl mix 1 1/2 c boiling water and 1 1/2 tsp baking soda with the dates.
- Set aside to cool.
- Beat together margarine,1 c sugar and eggs in large bowl.
- To this add vanilla extract and date mixture.
- Add flour, 3/4 tsp baking soda and salt.
- Pour into greased and floured 13x9 pan.
- Sprinkle 1/4 c sugar, nuts and chocolate morsels on top.
- Bake @ 325 degrees 45 minutes.
- The difficult part: set aside until the next day to eat.

Steps:
- Preheat oven to 350°F.
- Spray a 9 x 13-inch pan with non-stick cooking spray (Pam) or grease pan and then line pan with aluminum foil. Spray Pam over foil or grease foil.
- Sift flour, salt and baking powder in a medium bowl.
- Add all remaining ingredients (except for the powdered sugar) and mix well with a wooden spoon.
- Spoon mixture into pan, spreading evenly.
- Bake for 20-30 minutes or until golden brown.
- Invert onto work surface and carefully remove foil and slice into bars while still warm.
- Transfer bars to a rack to cool and sprinkle with powdered sugar (if desired).
