ELEGANT MUSHROOM SOUP
This easy recipe turns commonplace ingredients into a wonderfully tasty soup. My family is delighted whenever they see it simmering on the stove.

- In a large saucepan, saute onion and mushrooms in butter for 3 minutes or until onion is tender. Stir in the flour, pepper and salt; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add parsley; and nutmeg if desired. , Top individual servings with a dollop of sour cream.

FARRO-MUSHROOM SOUP
A twist on mushroom-barley soup, this warming broth, nourished with fresh hens of the woods, royal trumpets, oysters, and chanterelles, counts as a meal. The farro is tender but with a satisfying chew, a handful of dried porcini offers additional depth of flavor, and dill and vinegar give each spoonful a real pop.

- Soak farro overnight in water to cover; drain.
- In a small bowl, pour boiling water over porcini; let stand 5 minutes. Drain, reserving liquid. Chop porcini.
- In a medium saucepan, combine farro, broth, and porcini liquid. Bring to a boil, then reduce to a simmer, cover, and cook until almost tender, about 45 minutes.
- Meanwhile, melt butter in a large skillet over high. Add onion, garlic, and porcini mushrooms and cook, stirring frequently, until onion is translucent, about 4 minutes. Add wild mushrooms and cook, stirring occasionally, until mushrooms have released liquid and begun to brown, 6 to 7 minutes. Season with salt and pepper. Stir in sherry; cook until evaporated, about 1 minute.
- Stir mushroom mixture into soup; cook, partially covered, until farro is tender, about 15 minutes. Season with vinegar, salt, and pepper. Serve, sprinkled with dill.
STROGANOFF CASSEROLE WITH A TWIST
Delicious layers of seasoned ground beef, mushroom soup, sour cream, mushrooms, spinach, and saltines topped with Muenster or any melty cheese! Fantastic!

- Preheat oven to 350 degrees F (175 degrees C). Rub butter all over a 2-quart baking dish.
- Heat a large skillet over medium heat. Add ground beef, pepper, onion powder, and salt; cook and stir until browned, 5 to 8 minutes.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Lay 6 saltine crackers in the bottom of the prepared baking dish. Top with 1/2 the ground beef. Dollop 1/3 of the mushroom soup mixture over beef. Lay remaining saltines on top. Cover with spinach and another 1/3 of the mushroom soup mixture. Spread remaining ground beef and mushroom soup mixture on top. Cover with mushrooms.
- Bake in the preheated oven until bubbly, about 30 minutes. Top with Muenster cheese and continue baking until cheese is melted, about 5 minutes more.

- In a large saucepan over medium-high heat, melt the butter, then add the onion and saute until translucent, 3 minutes. Add the garlic and stir, then cook for 1 more minute.
- Add the mushrooms, salt, and pepper and cook until they begin to turn golden brown, about 5 minutes.
- Add the flour and stir to coat the mushrooms, until combined.
- Add the white wine, stir, and cook until combined, about 1 minute.
- Add the vegetable stock, stir, and simmer for 15 minutes.
- Add the heavy cream and stir to combine.
- Blend soup to your desired consistency with an immersion blender or standing blender.
- Serve hot, garnished with parsley.
- Enjoy!

A TWIST ON MUSHROOM SOUP
I actually dislike cooking, but if the recipe is easy enough, I'll make it....this personal adaptation of a "Pol Martin" recipe is so good, and easy, I actually enjoy making it!! The "twist" comes from the addition of the lemon juice.

Steps:
- Melt butter in large pot over medium heat.
- When hot, add onions and celery.
- Cover and cook 3 minutes over low heat.
- Add sliced mushrooms and seasonings to the pot, mix well, then add lemon juice.
- Cover and cook for 6 minutes over medium heat.
- Mix in flour until well incorporated.
- Cook 2 minutes over low heat, uncovered.
- Pour in chicken stock and mix well.
- Cook soup, partly covered, over low heat for 30 minutes.
- Enjoy!
