RICH GARLIC SOUP WITH SPINACH AND PASTA
This is a heartier version of garlic soup, a meal in a bowl with a generous egg yolk enrichment and lots of iron-rich spinach.

Steps:
- Bring a medium saucepan full of water to a boil. Fill a bowl with ice and water. Separate the head of garlic into cloves and drop them into the boiling water. Blanch for 30 seconds, then transfer to the ice water. Allow to cool for a few minutes, then drain and remove the skins from the garlic cloves. They'll be loose and easy to remove. Crush the cloves lightly by leaning on them with the side of a chef's knife.
- Place the garlic cloves in a large saucepan with the 2 quarts water, olive oil, bouquet garni, and salt to taste, and bring to a gentle boil. Reduce the heat, cover and simmer 1 hour. Strain and return the broth to the saucepan. Taste and adjust salt, and bring back to a simmer.
- Add the macaroni shells to the broth and simmer until cooked al dente.
- Distribute the garlic croutons among 6 soup bowls and top each one with a heaped tablespoon of cheese. Beat the egg yolks in a bowl. Making sure that it is not boiling, whisk in a ladleful of the hot garlic broth.
- Add the spinach to the simmering broth and stir for 30 seconds to a minute, until all of the spinach is wilted. Turn off the heat and stir in the tempered egg yolks. Stir for a minute, taste and adjust seasonings. Ladle the soup over the cheese-topped croutons, and serve.

- Place turkey carcass in a soup kettle or Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Remove carcass; cool. Set aside 3 qt. broth. Remove turkey from bones and cut into bite-size pieces; set aside., In a soup kettle or Dutch oven, saute the onions, carrots and celery in butter until tender. Reduce heat; stir in flour until blended. Gradually add 1 qt. of reserved broth. Bring to a boil; cook and stir for 2 minutes or until thickened., Add cream, rice, salt, bouillon, pepper, remaining broth and reserved turkey. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender.

- Place turkey carcass in a large pot or Dutch oven and cover with water. Bring to a boil. Reduce heat to medium, cover, and simmer for 1 hour. Remove carcass and allow to cool. Separate turkey meat from the bones. Cut meat into bite-size pieces; discard bones. Reserve about 12 cups turkey broth in a large bowl. Save remaining broth for another use.
- Melt butter in another large pot or Dutch oven over medium heat; cook and stir onion, carrots, and celery in melted butter until tender, about 5 minutes. Stir flour into vegetable mixture; cook and stir until smooth, about 5 minutes. Gradually stir in about 1/3 the reserved turkey broth. Bring to a boil; cook and stir until thickened, about 2 minutes.
- Stir remaining turkey broth, turkey meat, half-and-half, fettuccine, stuffing, salt, chicken bouillon, pepper, and poultry seasoning into half-and-half mixture. Reduce heat to medium-low, cover, and simmer until noodles are tender, about 10 minutes more.

- Heat a medium soup pot over moderate heat. Add oil, shallots and garlic. Sauté 5 minutes. Add drained tomatoes and crushed tomatoes, stir. Add stock and stir to combine soup. - In a 5-qt. Dutch oven, bring spinach, broth and carrots to a boil. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat; cool to lukewarm. , Meanwhile, in a large skillet, saute the onion and garlic in butter until onion is soft, about 5-10 minutes. Add flour; cook and stir over low heat for 3-5 minutes. Add to spinach mixture. Cool slightly., Puree in small batches in a blender until finely chopped. Place in a large saucepan. Add the cream, milk, pepper and nutmeg; heat through but do not boil.

DAY AFTER THANKSGIVING SOUP
I always make this soup the day after Thankgiving or anytime we have a turkey carcass. It is very adaptable depending what vegetables and pasta that you have on hand. Some years for a change of pace I use uncooked rice instead of the pasta. Recipe adapted from Bon Appetit (October 1985)

- Melt butter in a large dutch oven or soup pot over medium heat. Add turkey carcass and brown lightly, stirring occassionally (8-10 minutes).
- Add onion, carrot, celery, garlic and thyme (or sage) to pan and cook for 10 minutes.
- Add water (enough to cover turkey carcass), bouillion cubes, tomato, gravy (if available) and pan juices (if available). Bring to a boil.
- Reduce heat and simmer for 2-3 hours.
- Strain broth, reserving turkey pieces (I usually get 1-3 cups turkey pieces).
- Return broth to pan (I use a clean pan). Bring to a boil and add pasta (or rice), celery, carrots, and mushrooms (or other vegetables). Bring to a boil and cook for 10-20 minutes or until pasta and vegetables are done.
- Stir in parsley and salt and pepper.

CHILLED GARLIC AND SPINACH SOUP
Green garlic, which greatly resembles an overgrown scallion, has a mild flavor. Heads of fresh garlic are mature but just harvested. Because they haven't been cured for winter storage, they're very juicy. If you can't find either type of garlic, substitute scallions for the green garlic and regular (cured) garlic for the fresh. The soup will still be delicious.

- Preheat oven to 400 degrees. Place fresh garlic heads on parchment-lined foil, drizzle with oil, and season with salt. Wrap in foil, and roast until tender, about 40 minutes. Let cool, then squeeze out garlic, discarding skins. Place 1/4 cup yogurt in a bowl, and stir in 2 teaspoons roasted garlic.
- Heat oil in a medium saucepan over medium-high heat, and saute green garlic until translucent, about 3 minutes. Add broth, and bring to a boil. Reduce heat, and simmer 5 minutes. Let cool.
- Transfer broth mixture to a blender. Add remaining yogurt and half the spinach, and puree. Add remaining spinach, the basil, and 2 tablespoons roasted garlic (reserve remainder for another use), and puree. Add lemon juice, and season with salt. Refrigerate at least 2 hours and up to 1 day. Before serving, top with a little roasted-garlic yogurt and basil.
GARLIC SOUP WITH SPINACH
I made a lot of turkey stock after Thanksgiving and pulled some out for this spinach-packed, very quick and easy soup. A vegetarian version made simply with water and garlic is equally delicious.

- Place the stock or water in a large saucepan or soup pot with the bouquet garni. Season to taste with salt and freshly ground pepper. Bring to a simmer and add the garlic. Cover and simmer 15 minutes. Add the pasta and simmer 5 minutes, until cooked al dente. Remove the bouquet garni.
- Beat the eggs in a bowl and stir in 1/3 cup of stock, making sure that it is not boiling, and the cheese.
- Stir the spinach into the simmering stock and simmer for 1 minute. Drizzle in the egg mixture, scraping all of it in with a rubber spatula. Turn off the heat and stir very slowly with the spatula, paddling it back and forth until the eggs have set. Taste, adjust seasoning, and serve at once.

- Heat a large pot over medium-low heat. Cook sausage and onion until onion is soft and translucent, breaking up sausage as it cooks, 5 to 7 minutes. Add garlic and cook 1 to 2 minutes more.
- Pour all chicken broth into the pot and bring to a boil, about 5 minutes. Add tortellini and cook 5 minutes more. Add tomatoes with juice and return to a boil. Reduce heat to low and simmer soup for 10 minutes.
- Stir spinach into soup; it will look like too much, but it will wilt quickly. Add basil and red pepper flakes and simmer 5 minutes more. Season with salt and pepper.
- Pass Parmesan cheese at the table when you serve the soup.

You've had the big meal, you've had the traditional hot, turkey sandwiches and Mom's delicious turkey casserole, now you're down to the bones. Try this colorful soup variation to finish off the bird in style. You make the stock ahead so you can degrease it then make the soup the next day or freeze it to use at your convenience. Time to make does not include making the stock.

- To make the stock: Remove any remaining stuffing from the turkey carcase. Break the backbone just at the join with the ribs to make it easier to get into the pot.
- Put the carcase, any drippings you have, and any stray parts like wingtips, that leg no one wanted, and pieces of skin into a stockpot.
- Peel and quarter the onion. Add it to the pot.
- Break the celery into 2-3 pieces and add that as well.
- Add COLD water to come up about 3/4 of the way up the bones. Bring to a simmer and simmer gently for 3-4 hours.
- Cool and refrigerate to congeal the grease.
- The next day, remove the congealed grease (if it didn't harden sufficiently in the fridge give it a couple hours in the freezer).
- Warm the broth enough to be comfortable for your hands. Strain the warmed broth through a colander into another pot. (Some people like to line the colander with cheesecloth).
- Pick the useful meat from the bones and return it to the broth. Proceed with the soup or freeze for later use.
- Note -- remember the pot/bowl when straining the broth. Every soup maker has forgotten at least once. :oops:.
- Add tomatoes, garlic, thyme, Italian seasoning, salt, and pepper and bring to a boil.
- Add the spinach and return to a boil.
- Add the rotini, return to a boil, then simmer for 10-12 minutes or until the pasta is cooked, stirring several times.
- Serve sprinkled with Parmesan or Asiago cheese.
- Note, its out of season after Thanksgiving, but if you have some fresh basil available, chop a few leaves and scatter a pinch over each bowl before adding the cheese.
- Note: 2-4 chicken carcases or several pounds of backs and necks can be substituted for the turkey carcase. Roast the backs and necks first for the richest flavor.
