Air Fryer Parmesan Zucchini Chips are crunchy, savory bites of heaven! This is hands down one of the best ways to eat zucchini!

2 medium sized zucchini sliced
salt and pepper
1 cup flour
3 large eggs
1 cup Panko
1/4 cup parmesan cheese
1 Tablespoon Italian seasoning

Steps:

  • Salt and pepper the sliced zucchini. Put the flour in a small bowl. Whisk the eggs in a small bowl, and combine the Panko, parmesan cheese, and Italian seasoning in another small bowl.
  • Dip the zucchini in the flour, then the egg, then lastly in the Panko mixture.
  • Add the zucchini in an even layer in the air fryer basket. Cook at 400 degrees for 5 minutes, flip, and spray with olive oil. Continue cooking for 5 minutes or until done.

1 cup Panko breadcrumbs
½ cup grated parmesan cheese
1 tsp garlic powder
1 tsp paprika
1 tsp oregano
½ tsp salt
½ tsp black pepper, freshly ground
1 medium Zucchini
¼ cup all-purpose flour
2 eggs, beaten

Steps:

  • Line a large cooking sheet with parchment paper.
  • In a medium bowl, combine breadcrumbs, parmesan, and spices. Adjust seasonings to taste. Set aside.
  • Slice the Zucchini into ¼ inch thick slices.
  • Dip each Zucchini slice first in flour to completely coat, then shake off the excess flour.
  • Next, dip the floured slice in beaten egg, shaking off the excess.
  • Finally, dip the slice in breadcrumb mix, making sure to coat the slice completely. Put coated Zucchini slice onto the prepared cooking sheet. Repeat until all the Zucchini slices are done.
  • Preheat the air fryer to 400°F and spray the basket with cooking spray.
  • Put coated Zucchini into the air fryer basket in a single layer and spray lightly with cooking spray. Cook for 8-10 mins, until golden and crispy.
  • Serve warm with marinara sauce or other dipping sauce of choice.
  • Plate, serve, and enjoy!

2 large zucchini
1 tablespoon olive oil
1 teaspoon garlic powder
salt ((to taste))
pepper ((to taste))
1/4 cup Parmesan cheese

Steps:

  • Slice the zucchini into ¼ inch rounds
  • Transfer to a large mixing bowl and drizzle with olive oil, garlic powder, salt, and pepper. Gently toss to combine.
  • Transfer to the air fryer and top with shredded parmesan.
  • Set your air fryer to 400°F for 5 minutes. After 5 minutes open air fryer and flip the zucchini then sprinkle parmesan on the other side. Close air fryer and cook for another 4-5 minutes.
  • The zucchini rounds are ready once the parmesan cheese is golden brown and the edges of the zucchini are crisp. Enjoy with your favorite dipping sauce. We served them with spicy mayo.
