- Mix garlic powder, paprika, onion powder, cumin, salt and pepper.
- Coat chicken thighs in oil then sprinkle 2/3 of spice mixture over the thighs. Transfer to greased air fryer basket, placing off to one side.
- Toss potatoes with oil and remaining spices. Transfer to air fryer basket next to the chicken thighs.
- Air fry at 400ºF 10 minutes.
- Add peppers to the potatoes, toss and sprinkle with salt.
- Air fry at 400ºF for 10-15 more minutes or until chicken thighs are cooked through (165ºF internal temp).

- Pat chicken dry, and place the chicken and potatoes on air fryer cooking trays or in air fryer basket, and spritz with olive oil

- Pat chicken thighs dry with a paper towel and brush the skin-side of each piece with olive oil. Place chicken thighs, skin-side down, in a single layer on a plate.

- Preheat the Air Fryer to 375°F (190°C).
- In a large mixing bowl, toss the potatoes with 1 clove of garlic, and half of the seasonings and oil (smoked paprika, red chili flakes, salt, black pepper, and olive oil).
- Place the potatoes in the Air Fryer basket, and air fry for 10 minutes flipping halfway through.
- Meanwhile, in the same bowl, toss the chicken with the thyme and the rest of the ingredients (garlic, smoked paprika, red chili flakes, salt, black pepper, and olive oil) until well coated.
- After the potatoes have been cooking for 10 minutes, remove the basket from the Air Fryer and with a spatula move the potatoes to one side. Add the chicken to the other side and cook for 10 more minutes flipping halfway through.
- Check the internal temperature of the chicken, if it registers 165°F (75°C), then it's cooked. Remove from Air Fryer basket. Or cook until it reaches the safe temperature.

- Preheat the air fryer at 400F for 5 minutes.
- Trim the chicken thighs of excess fat and skin. Blot the chicken dry with paper towels.
- If you're making the homemade chicken rub, mix all of the ingredients together in a small bowl. This makes more than the recipe needs but you'll be all set for your next few dinners! Your favorite grocery store rub will work as well!
