1/2 cup unsalted butter, softened
1 package (3.4 ounces) instant lemon pudding mix
1/2 cup sugar
1 large egg, room temperature
2 tablespoons 2% milk
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
ICING:
2/3 cup confectioners' sugar
2 to 4 teaspoons lemon juice

Steps:

  • In a large bowl, cream butter, pudding mix and sugar until light and fluffy, 5-7 minutes. Beat in egg and milk. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough in half. On a lightly floured surface, shape each into a 6-in.-long roll. Wrap and refrigerate 3 hours or until firm., Preheat air fryer to 325°. Unwrap and cut dough crosswise into 1/2-in. slices. In batches, place slices in a single layer on greased tray in air-fryer basket. Cook until edges are light brown, 8-12 minutes. Cool in basket 2 minutes. Remove to wire racks to cool completely., In a small bowl, mix confectioners' sugar and enough lemon juice to reach a drizzling consistency. Drizzle over cookies. Let stand until set., To Make Ahead: Dough can be made 2 days in advance. Wrap and place in a resealable container. Store in the refrigerator., Freeze option: Place wrapped logs in a resealable container and freeze. To use, unwrap frozen logs and cut into slices. Cook as directed, increasing time by 1-2 minutes.

Prep and freeze the cookie dough (will keep in the freezer for up to 3 months!) and when you're having a craving, slice and pop them in your air fryer and they will be ready in less than 10 minutes.

½ cup unsalted butter, softened
½ cup white sugar
1 (3.4 ounce) package instant lemon pudding mix
1 large egg, at room temperature
1 medium lemon, zested and juiced, divided
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 ¼ cups powdered sugar
1 medium lemon, juiced

Steps:

  • Cream butter, sugar, and pudding mix together in a bowl. Beat in egg, lemon juice, and 1/2 of the lemon zest. Set aside remaining lemon zest for icing.
  • Sift flour, baking powder, and salt together in another bowl. Add to butter-pudding mixture and beat until well combined. Roll dough into 2 logs, wrap in plastic wrap, and freeze until firm, about 4 hours.
  • Preheat an air fryer to 325 degrees F (165 degrees C). Line the air fryer basket with parchment paper.
  • Slice frozen dough into 1/4-inch slices and place in the prepared basket.
  • Air fry cookies, working in batches, until edges start to brown, 6 to 10 minutes. Remove from the air fryer and leave in the basket until cool to the touch, then place on a wire rack to cool completely.
  • While cookies are baking, combine powdered sugar, lemon juice, and reserved lemon zest in a bowl. Dip 1 side of each cookie in icing. Let icing set until hardened, about 2 minutes.

3/4 cup unsalted butter (softened)
1 cup sugar
1/3 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups chocolate chips

Steps:

  • In a large bowl, combine the butter, sugar, and brown sugar. Beat the butter with sugars until smooth and creamy.
  • Add eggs, vanilla, salt, baking soda, and half of the flour. Mix until the dry ingredients have combined with the butter mixture.
  • Add in the remaining half of the flour and mix on medium speed, until the cookie dough is thick and creamy. Once the dough is mixed, stir in the chocolate chips, and optional nuts, until they are evenly distributed throughout the dough.
  • Use a small cookie scoop or spoon to shape the dough into balls. Place the dough balls into the air fryer basket on top of parchment paper. Leave about an inch in between each cookie.
  • Air Fry at 300 degrees F for 7-8 minutes. When cookies are golden brown, let them sit in the air fryer basket for an additional 1 to 2 minutes before transferring to cooking rack.

1 large egg
1 ½ teaspoons vanilla extract
¾ cup creamy peanut butter

½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup granulated sugar, for rolling

Steps:

  • Beat together the butter, brown sugar, and granulated sugar in a medium mixing bowl until light and creamy.
  • Beat in the egg and vanilla extract until just combined. Beat in the peanut butter.
  • Add the flour, baking powder, baking soda, and salt to the mixing bowl and beat until well combined.
  • Place the dough in the refrigerator for 30 minutes to chill.
  • Line the basket of your air fryer with parchment paper and preheat to 350 degrees.
  • Use a medium cookie scoop to scoop out portions of cookie dough. Shape into a ball with your hands and roll through granulated sugar to coat.
  • Arrange the cookie dough in the air fryer basket leaving 1-2 inches between each cookie to allow space for the cookie to spread.
  • Use a fork to lightly press a crisscross pattern into the top of each cookie.
  • Air fry for 5 minutes or until golden brown on the edges and tips of the crisscross pattern. Do not overbake.
  • Let cool for a couple of minutes before carefully removing from the air fryer with a spatula. Cookies will fall apart if not handled gently. Cool completely on a wire rack.

Steps:

  • Rinse chicken tenders under cold running water and wash off any ice. Pat dry with paper towels. Lightly spray chicken tenders with avocado oil and season with salt and pepper.
  • Place chicken tenders in an air fryer basket, making sure the pieces don't overlap.
  • Cook in the air fryer at 360 degrees F (180 degrees C) for 15 minutes. Turn chicken tenders over and continue cooking until chicken is no longer pink in the center and the juices run clear, about 8 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
