AIR FRYER "SUN-DRIED" TOMATOES
This past summer I found myself asking how I was going to preserve the abundance of grape tomatoes I had from my garden. Sun drying was the only thing I could come up with but problem was, there wasn't any sun. Air fryer to the rescue! I have a small air fryer so I wrote this up for 5 ounces (12 grape tomatoes) so that it would be easy to do in small batches. Store in an airtight container in the freezer for re-hydrating or pack in oil and store in the refrigerator for salads, soups, sauces, etc.

Not a labor intensive process, but certainly a lengthy one. Once dried, store these tasty gems in the refrigerator.

Steps:
- Preheat oven to 200 degrees F (95 degrees C).

MAKE YOUR OWN SUN-DRIED TOMATOES: OVEN, DEHYDRATOR, OR SUN
Found a great source for food preserving info at www.faqs.org, very pleased with my dried tomatoes! Paraphrased notes from the site: The best tomato to use for dehydrating is the Roma tomato because it contains less water and seeds. You can use any tomatoes but they may take a little longer to dry. All drying times below are approximate. It takes about 7-8 pounds of tomatoes to yield about a pint of dried tomatoes. Herbs are optional, you may prefer pain tomatoes for greater cooking versatility. After the tomatoes are dry, store in air-tight containers, or pack in oil.

Steps:
- TOMATO PREPARATION ALL METHODS.
- Cut out the stem and scar and the hard portion of core lying under it.
- Cut the tomatoes in half, lengthwise. If the tomato is more than about 2 inches long, cut it in quarters.
- Scrape out all of the seeds that you can without removing the pulp.
- Mix together thoroughly basil, oregano, thyme, and salt.
- Sprinkle a small amount of this mixture on each tomato.
- OVEN-DRYING (approximately 12 hours).
- Arrange the tomatoes, with the cut surface up, on non-stick cookie sheets (glass or porcelain dishes are OK.) Do not use aluminum foil or aluminum baking sheets as the acid in the tomato will react with the metal.
- Bake in 170°F oven for about 3 hours.
- Leave the oven door propped open about 3 inches to allow moisture to escape.
- After 3 hours, turn the tomatoes over and press flat with your hand or a spatula.
- Continue to dry, turning the tomatoes every few hours, and gently pressing flatter and flatter, until tomatoes are dry.
- DEHYDRATOR (approximately 8 hours):.
- Place the tomatoes, cut side up, directly onto the dehydrator trays.
- Set dehydrator temperature to about 140°F.
- After 4 or 5 hours, turn the tomatoes over and press flat with your hand or a spatula.
- After a few hours, turn the tomatoes again and flatten gently.
- Continue drying until done.
- SUN-DRYING (approximately 3 days):.
- Dry in hot weather, with relatively low humidity.
- Place tomatoes, cut side down, in shallow wood-framed trays with nylon netting for the bottom of the trays.
- Cover trays with protective netting or cheesecloth.
- Place in direct sun, raised from the ground.
- on blocks or anything else that allows air to circulate under the trays.
- Turn the tomatoes over after about 1 1/2 days, to expose the cut side to the sun.
- Place the trays in a sheltered spot after sundown, or if the weather turns bad.
- ADDITIONAL NOTES FOR ALL METHODS.
- No matter what method you choose, be aware that not all of the tomatoes will dry at the same rate. They do not all have the same amount of moisture, nor do they experience the same temperature and air circulation while they are drying.
- They are done when they are very dry, but still pliable. Texture is about that of a dried apricot. If dried too long, they become tough and leathery. If not dried long enough, they will mold and mildew, unless packed in oil. So watch them carefully while they dry. Try to remove them on an individual basis, before they become tough.
AIR FRYER BAKED BRIE WITH PESTO, SUNDRIED TOMATOES AND ARTICHOKE HEARTS
Thanks to the air fryer, not only does puff pastry get perfectly golden brown and flakey, the overall cook time is a fraction of what it would take in a standard oven. Layered with pesto, sundried tomatoes and marinated artichoke hearts, this crowd-pleaser is loaded with flavor and festive charm.

Steps:
- Preheat an air fryer to 350°F.
- Brush both sides of the sliced bread with the olive oil and season with a pinch of salt and several grinds of black pepper. Transfer to the air fryer basket, shingling the slices so they all fit snuggly. Air fry until golden brown and toasted, flipping halfway through, about 4 minutes.
- Meanwhile, stir together the artichokes, sundried tomatoes and 2 tablespoons of the pesto in a medium bowl until evenly combined. Set aside. Whisk the egg with a splash of water in a small bowl and set the egg wash aside.
- Dust a clean worksurface or cutting board lightly with flour. Roll out the puff pastry to a 14-by-12-inch rectangle. Cut 1/4-inch-wide strips of dough off the shorter end to create a 12-by-12-inch square, reserving the strips for decorating.
- Brush the center of the square of puff pastry lightly with the egg wash. Lay the reserved strips at an angle in a crisscross pattern in the center of the square of pastry, 4 going in one direction and 4 in the other. Press down gently to adhere. Place a piece of parchment paper on top of the puff pastry, then use the parchment paper to help flip the whole thing over so the crisscross pattern is now facing down.
- Spoon the artichoke-sundried tomato mixture into the center of the dough, then top with the remaining 1 tablespoon of pesto and the wheel of brie. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Flip the puff pastry-wrapped brie over so the crisscross design is now on top. Brush the entire exterior of the pastry with the egg wash, then refrigerate until the pastry is chilled, 20 to 30 minutes.
- Preheat an air fryer to 375°F. Place the brie in the center of the air fryer basket and air fry until the pastry is golden brown and cooked through, about 18 minutes.
- Let sit for 5 minutes, then serve warm with the toasted bread, crackers, sliced bell peppers and endive.

- In a medium-large mixing bowl, add the tomato slices, olive oil and salt and pepper, toss to combine.
- Cook at 240 degrees F(115 degrees C) for 45 minutes or until desired doneness is reached. Open the basket every 10 minutes to check on their doneness. You might want them more juicy or more dry. The type of tomatoes will affect the cooking time, the larger and juicier the tomatoes are, the longer they will take to dehydrate.
- Serve right away (use silicone/non-stick tongs to remove them from the dry basket) or store in an air tight container in the refrigerator for up to 5 days.
