Steps:
- Preheat the air fryer to 400 degrees.
- While the air fryer is preheating, slice the zucchini, squash, red bell pepper, and red onion into equal sized pieces. Moisten skewers (if wooden). Alternating vegetables, add to the skewers.
- Cook on the top shelf for eleven to thirteen minutes (I prefer a little burnt, so use the higher time).

Steps:
- Add all the veggies, spices + cooked lentil in a food processor and pulse to mix everything together.
- Pulse till 2 minutes until everything is minced and nicely incorporated.
- Now add 2 bread slices, water, and pulse to form a smooth mix.
- Remove the kabab mix into a large bowl.
- Now divide the vegetable mix into equal parts (I made 24 small kebabs out of them).
- Then flatten the mix in between your palms and form any shape of kebabs you desire. (I made them slightly oblong).
- Keep the kebabs in a lined tray or plate and keep in the fridge for 15 minutes. (this helps in kebabs holding it shape while sauteeing or frying).
- Heat a medium-size wok or skillet and add 1/4 cup of oil.
- Let the oil heat for a minute.
- Remove the uncooked vegetable kababs resting in the fridge.
- Now add 3-4 kababs (depending on the size), in the hot oil and shallow fry on both sides.
- Similarly, add more oil and shallow fry all the kababs.
- Pre-heat oven at 190C
- Line the uncooked kababs on a baking try.
- Spray the cooking oil on each kabab and bake for 10 minutes.
- Turn off the oven and flip the kababs on another side, spray with oil and bake for another 10 minutes.
- Once the kababs have reached the desired consistency of color (golden to dark brown), turn off the oven.
- Remove the cooked kababs immediately or they'll brown a lot.
- Either way, you choose to cook, once the kababs are made, transfer them to a serving bowl.
- Serve with choice of chutneys and pickles.
- Enjoy.

- Place 3-4 kababs or as many your basket can accommodate (leaving some space in between).
- Spray cooking oil on both sides.
- Air Fry for 15 minutes or till crispy golden brown on both sides.
- Once cooked, transfer to a serving dish and enjoy.

AIR FRYER VEGETABLE KABOBS
Steps:
- soak skewers in water for at least 10 mins before using.
- Preheat air fryer to 390F / 198C.
- Thread vegetables onto the skewers.
- Place skewers in air fryer and make sure they are not touching. If air fryer basket is small, you may need to cut the ends of the skewers to fit.
- Cook for 10 mins, turning half way through the cook time. Since air fryer temperatures can vary, start with less time and then add more as needed.
- Transfer veggie kabobs to a plate and serve.
- Preheat the grill (or barbecue) to medium.
- Oil the grill plate (make sure use an oil approved for your dietary considerations).
- Place kabobs on a griddle on the hot barbecue or grill.
- Cook for 2-3 mins on each side until they are cooked through.
- Transfer to a plate and serve.

- Tender Veggies: Preheat air fryer to 375 degrees F (190 C). Prep veggies by chopping them to the size you want, optionally drizzling with oil (this will make them a bit more roasted tasting in the end). Add to your air fryer in as flat of a layer as possible and cook for 10 to 15 minutes, shaking the air fryer pan once or twice during cooking to promote even cooking.
- Firm Veggies: Preheat air fryer to 375 degrees F (190 C). Prep veggies by chopping them to the size you want (remember: smaller pieces cook faster!) - Cut the beef sirloin into 1-inch (2.54centimeters) chunks.
- Combine the beef sirloin chunks with the meat marinade ingredients.
- Let the beef sirloin marinade for at least 45 minutes. For best flavours leave the beef sirloin in the marinade over night.
- Cut the mushroom and zucchini in thick slices 0.4-inch (1 centimeter).
- Cut the garlic cloves into thin slices.
- Marinade the mushroom and zucchini with the vegetable marinade ingredients for 45 minutes.
- Soak skewers in water for at least 10 minutes.
- Once the meat and vegetables are done marinating, start putting the ingredients through the skewers. I usually start with the vegetables first, then the sliced garlic, and then the meat. This is pattern is repeated until the skewer is full. If you want the ingredients to be grilled in between, leave a small gap between the ingredients.
- Pre-heat the air fryer with a temperature of 180 degrees Celsius (356 degrees Fahrenheit) for 2 minutes.
- Spray some oil in the Air Fryer basket. Alternatively, you can use Air fryer parchment paper.
- Pull the air fryer basket out after the pre-heating is completed. Make sure to use tongs, as the air fryer basket is hot after the pre-heating, and place the kebabs in a single layer in the air fryer basket.
- Set the air fryer at 180 degrees Celsius (356 degrees Fahrenheit) for 10 minutes. Then place the basket back into the air fryer for grilling.
- When the timer has reached 5 minutes pull the air fryer basket out and turn the kebabs around. Note: if your air fryer comes with a rack, you can place the kebabs on the rack and then it does not need to be turned. The circulated air will crisp the other side as well as it will be elevated.
- Place the kebabs back into the air fryer for the remaining 5 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
- Pull out the air fryer basket when the air fryer has finished grilling.
- Take the kebabs out with tongs and serve with your favourite sides (look at serving suggestions above for some ideas).
