Steps:
- Place a few ice cubes in a pitcher; add pineapple juice, coconut milk, lime juice, and almond-flavored syrup and stir until chilled. Strain mixture and pour into 4 glasses.
- Top each glass with club soda; mocktail will foam up.
- Dust each mocktail with nutmeg. Garnish with a lime wheel, sprig of mint, and umbrella.

Steps:
- To make simple syrup, bring the sugar and 1/2 cup water to a simmer in a saucepan on medium heat, then turn off the heat and let cool to room temperature.
- In a tall thermos, add the cucumbers, mint and simple syrup. Stir with the handle of a wooden spoon. Add the lime juice and vodka, then cover and shake vigorously for about 30 seconds. Chill until ready to serve.
- Pour over ice in glasses, then top off with the club soda. Serve immediately.
HAVANA COOLER
Havana Cooler is a refreshing and popular rum-based cocktail that originated in Cuba. This version is from the Taste of Cuba website, which states it's from the Cocina Cubana Club. Ginger ale is the traditional mixer used for the Havana Cooler, but you can use Sprite or other lemon-lime carbonated soda in place of the ginger ale.
