Ravioli Alfredo With Peas image

2 9-ounce packages mushroom ravioli
Freshly ground pepper
4 tablespoons unsalted butter
1/2 cup heavy cream
1 cup frozen peas, thawed
1/2 cup grated parmesan cheese
Pinch of freshly grated nutmeg
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the ravioli and cook as the label directs. Reserve 1/2 cup of the cooking water, then drain the ravioli.
  • Combine the butter, cream and peas in a large skillet and bring to a simmer over medium heat; cook 1 minute. Add the ravioli, cheese, nutmeg and a splash of the reserved cooking water to the skillet and toss. Add more cooking water to thin the sauce, if needed. Season with salt and pepper. Divide among bowls and top with the parsley.

1 pound fusilli con buco pasta, such as Rustichella d'Abruzzo or Setaro
3 tablespoons unsalted butter
2 tablespoons olive oil
1 clove garlic, smashed
2 1/2 cups freshly grated Parmesan, plus more for serving
1 cup mascarpone, at room temperature
2 teaspoons grated lemon zest (from 1 large lemon)
1 1/2 cups frozen peas, thawed
1 tablespoon lemon juice
1 teaspoon pink peppercorns, ground

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just short of al dente, 10 or 11 minutes.
  • Meanwhile, heat a large straight-sided skillet over medium heat. Add the butter and olive oil to the hot skillet. When the butter is melted, add the garlic; cook, stirring often, until soft and fragrant. Add 1/2 cup of the pasta water, then reduce the heat to low.
  • When the pasta is ready, lift it out of the water and add it directly to the sauce; reserve the pasta water. Sprinkle the Parmesan over the pasta and stir to combine. Return the heat to medium, add the mascarpone, lemon zest and 3/4 teaspoon salt and toss well. Continue cooking until the pasta is al dente, another minute or two, adding pasta water as needed to thin the sauce.
  • Add the peas and lemon juice; toss well to combine. Add more pasta water as needed to reach the desired sauce consistency (you will most likely use about 1 1/2 cups pasta water in all).
  • Sprinkle with the pink pepper and additional Parmesan, if desired.

1 cup fat-free milk
1 cup chicken broth
1 1/2 pounds cauliflower, cored and broken into florets, divided
1/4 cup grated Parmesan (1 ounce), divided
Coarse salt and pepper
1 tablespoon heavy cream
3/4 pounds fettuccine
1 tablespoon unsalted butter
1 cup frozen peas, thawed

Steps:

  • In a medium pot, bring milk and broth to a rapid simmer. Add cauliflower and cook, covered, until just tender, 7 minutes. Using a slotted spoon, transfer 3 cups cauliflower to a bowl. Cook remaining cauliflower (4 cups), covered, until soft, 6 to 8 minutes longer. Transfer soft cauliflower to a blender with 1 1/2 cups cooking liquid, 2 tablespoons Parmesan, and 1 teaspoon salt. Blend until smooth; pulse in heavy cream.
  • In a large pot of salted boiling water, cook pasta according to package instructions. Reserve 1 cup pasta water. Drain and return pasta to pot. Stir in butter, cauliflower puree and florets, and peas. Add pasta water if necessary to create a creamy sauce that coats the pasta. Season with salt and pepper and serve with remaining 2 tablespoons Parmesan.

Easy Alfredo with Peas image

1 pkg. (375 g) Catelli Smart Spaghetti
375 mL whipping cream
2 cups (500 mL) peas, fresh (or frozen optional)
1 cup (250 mL) shredded Parmesan cheese
1/3 cup (80 mL) green onions, thinly sliced
1/2 tsp (2 mL) ground nutmeg
1 Salt to taste

Steps:

  • 1. Add 4 litres of water to a pot and add 1 tbsp (15 mL) salt to water. Bring to a boil.
  • 2. Heat a large pot or frying pan over medium heat. Once the pan is hot, add cream and bring to a simmer. Simmer for 4 minutes to slightly thicken. Keep warm.
  • 3. Meanwhile, cook pasta according to package directions. Add peas to the hot cream and return to a simmer. Once pasta is cooked, drain well and add to the hot sauce.
  • 4. Add Parmesan cheese, nutmeg and sliced green onions and bring to a simmer. Adjust salt to taste and serve at once
  • Chef tip: To add a little more gusto to the dish, experiment with garlic and mushrooms in the sauce and finish it off by stirring an egg yolk into the dish.

2 tablespoons olive oil
1 (10 ounce) package fresh mushrooms, sliced
1 -2 garlic clove, minced

1 -2 cup grated romano cheese
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Cook fettuccine as label directs.

  • Saute mushrooms and garlic in olive oil until juices evaporate and mushrooms are lightly browned.
