ALLISON'S SUPREME CHOCOLATE CHIP COOKIES
Extra rich chocolate chip cookies. These stay soft a long time!

- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large bowl, cream together the shortening, butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and coffee liqueur. Combine the flour, baking soda, and salt; stir into the sugar mixture. Mix in the oats, chocolate chips, and walnuts. Roll tablespoonfuls of dough into balls, and place them 2 inches apart onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until golden. Cool on a wire rack for a few minutes before eating!

ALLISON'S WHITE SUGAR COOKIES
My SIL (from Illinois) shared this delicious recipe with me some years ago. It is the one roll-out sugar cookie that I go back to again and again because of the easy-to-work-with dough and the wonderful flavor. My kids like to use Christmas tree shapes and frost them with green icing, but I like to cut them in star shapes and bake them with just a sprinkling of colored sugar. The dough is easiest to work with when it has been chilled.

Steps:
- In a mixing bowl, cream shortening and sugar.
- Add eggs; mix well.
- Dissolve baking soda in hot water; add to mixture.
- Blend in vanilla and sour cream.
- Add flour, baking powder and salt; mix well.
- Cover and chill dough for at least 2 hours.
- Preheat oven to 350°F.
- Line cookie sheets with parchment paper. (I buy in bulk from the local food service store - a great price and less grease and clean-up).
- On a lightly floured surface, roll dough to desired thickness (1/8-inch for crispy and 1/4-inch for softer cookies).
- Optional - sprinkle cookies at this point with colored sugar. To make cookies to frost, bake them plain.
- Bake for 10-12 minutes, until edges are lightly browned.
- Decorate with your favorite frostings and decorative candies.

SUGAR COOKIES
Everyone needs a good sugar cookie recipe. If you can master the very simple technique behind this one dough, you have several variations at your disposal, most likely without a trip to the grocery store.

Steps:
- In a large bowl, whisk together flour, baking powder and salt.
- In another bowl, using an electric mixer, beat together butter and sugar on medium-high until the mixture is light, fluffy and pale, 2 to 3 minutes. Scrape down sides of the bowl, and add eggs, one at a time, beating well after each addition. Add vanilla, and beat until everything is well combined, stopping to scrape down the bowl as needed.
- Add dry ingredients all at once, and mix on low speed just until incorporated.
- Scrape dough out of bowl and divide it in half. Wrap each piece in plastic wrap, patting into a 1-inch-thick disk. Chill at least 2 hours and up to 5 days.
- Heat oven to 325 degrees. Roll out dough, one disk at a time, on lightly floured parchment paper or work surface until it's about 1/8 inch thick. Create shapes, using a lightly floured cookie cutter. (Alternatively, using a knife, cut the dough into squares, rectangles or diamonds.) If at any point the dough becomes too soft to cut and cleanly remove from parchment paper, slide it onto a cookie sheet and chill for a few minutes in the freezer or refrigerator. Gather any dough scraps and combine them into a disk. Roll and repeat the cookie-cutting process, chilling as necessary.
- Place shapes onto parchment-lined baking sheets 1 inch apart and bake until cookie edges are lightly browned with sandy, pale centers, 12 to 15 minutes, rotating the sheets halfway through. Cool the cookies on a rack, if you have one. Otherwise, let them cool on the pan. Decorate with a glaze, royal icing, frosting, glitter, food-grade luster dust or whatever you'd like. Don't forget the sprinkles.
WHITE SUGAR COOKIES

- Cream together shortening, sugar and eggs.
- Sift together salt, flour, cream of tartar, baking soda and nutmeg.
- Blend together milk, vanilla and lemon,.
- Alternately blend into the creamed mixture the dry ingredients with the milk mixture ending with the milk mixture. Add the walnuts.
- Drop by teaspoonful onto greased cookie sheet.
- Bake at 400F 8-10 minutes or until browned.

ANNE'S BASIC SUGAR COOKIES
A quick sugar cookie recipe is a lifesaver during the holidays... or on any day. And this method is so simple, I'm a little embarrassed to call it a recipe. It's what you do with it that counts. Roll and cut into your favorite shapes. Or roll balls in coarse sugar before baking. Form the dough into a log, then slice and bake. Turn them into snickerdoodles by adding cinnamon to the sugar. Or give these cookies a completely new look by folding in sprinkles before baking. The possibilities are limitless! Store, lightly covered, at room temperature, for 1 week.

- Place a rack in the center of the oven and preheat to 375 degrees F (190 degrees C).
- Combine cake mix, butter, egg, vanilla, and almond extract in a large mixing bowl. Beat with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat until the mixture comes together into a sticky ball, 30 to 45 seconds.
- Roll the dough to 1/4- to 1/2-inch thickness on a lightly floured board with a lightly floured rolling pin. Use cookie cutters to stamp out shapes and place them 2 inches apart on ungreased cookie sheets. (You can reroll the dough scraps once and cut out more cookies.) Brush the cookies with egg white and decorate with sprinkles.
- Place one pan in the oven at a time. Bake until the edges of the cookies are golden brown, 8 to 10 minutes for smaller cookies and 10 to 12 minutes for larger. Let the cookies rest on the cookie sheet for 1 minute, then remove to wire racks with a metal spatula to cool completely, about 20 minutes.

- Cream butter and sugar. Add vanilla.
- Mix in egg, salt, cinnamon, and baking powder.
- Add flour and mix until a dough-like form is reached.
- Refrigerate for 30 minutes before rolling out.
- On a lightly floured surface, roll out dough to a 1/4 inches thickness and cut out with desired cutters.
- Bake at 350°F.
- For soft cookie: 8 minutes, at first they will appear unfinished, but they will harden as they cool.
- For hard/crispy cookie: 12 minutes, they will become nice and crunchy once they cool.
- Frost with 1 1/4 cup powdered sugar and 2 Tbs water.
