Shortbread + almonds = delicious! This recipe came from the newspaper a few years ago, says it was submitted by Charlotte Midthun of Granite Falls, Minn.

2 cups butter, at room temperature and divided
3/4 cup sugar, divided
1 egg
3/4 teaspoon almond extract
1/2 teaspoon salt
2 3/4 cups flour
1 cup brown sugar, packed
1/3 cup honey
1/4 cup heavy whipping cream
1 lb sliced almonds

Steps:

  • Line a 10x15 jelly roll pan with foil (shiny side up). In bowl of electric mixer on medium/high speed, beat 2 sticks of butter until creamy (approx. 1 min.). Gradually add 1/2 cup sugar, beat until light and fluffy (approx. 2 min.). Add egg, extract, and salt, beat until throughly combined. Reduce speed to low, add flour and mix until just incorporated.
  • Press dough evenly into pan and push up sides. Cover with plastic wrap and refrigerate for 30 minutes.
  • Preheat oven to 375. Using a fork, prick dough in several places across pan. Bake for 10 minutes. Remove and allow to cool.
  • In a large saucepan over med/high heat combine remaining butter, remaining sugar, brown sugar, and honey. Heat, stirring occasionally until the sugar dissolves. Increase heat, and allow mixture to boil for about 3 minutes undisturbed (No stirring). Then remove from heat and stir in cream and almonds. Spread mixture evenly across the cooled dough, return to oven and heat until bubbly. Cut into triangles while slightly warm.

1 package (3 oz) cream cheese
2 tablespoons firm butter or margarine
2 cups Original Bisquick™ mix
1/3 cup milk
1 egg yolk
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon almond extract
1 egg white, slightly beaten
2 tablespoons sliced almonds
2 teaspoons sugar

Steps:

  • Heat oven to 425°F. In medium bowl, cut 3-oz package of cream cheese and the butter into Bisquick mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in milk and egg yolk.
  • Place dough on surface well dusted with Bisquick mix; gently roll in Bisquick mix to coat. Knead 10 times. Roll dough into 16x8-inch rectangle.
  • In small bowl, mix 8-oz package of cream cheese, 1/3 cup sugar and the almond extract until smooth. Spread cream cheese filling lengthwise over half of dough to within 1/4 inch of edge; carefully fold dough over filling. Brush egg white over top. Sprinkle with almonds and 2 teaspoons sugar. Cut into 4 (4-inch) squares; cut squares diagonally in half to form 8 triangles. Place on ungreased cookie sheet.
  • Bake about 14 minutes or until golden brown. Serve warm or cold. Cover; refrigerate any remaining triangles.

ALMOND DANISH SWIRLS

This is a Paula Deen recipe (although I've heard it was originally a Pillsbury Bake-Off winner years ago) that is absolutely simple and delicious! It's easy to make variations, too, if you're not that into almond.... substitute the almond extract for vanilla, or orange, or butter rum.... and the almonds in the filling for pecans, or a bit of orange marmalade, or toffee bits, or mini-chocolate chips.... the variations are endless! I increased and slightly sweetened the filling, and make half again (1 1/2 recipe) the amount of glaze from Paula's recipe according to our family's tastes. Splenda also works well to sub for the sugar for those low-carbers and diabetics out there. The egg wash isn't mandatory; I usually skip it and just ice the danishes and sprinkle on the nuts.

8 ounces cream cheese, softened
1 teaspoon almond extract
2/3 cup confectioners' sugar
1/2 cup slivered almonds, chopped fine
2 (8 ounce) cans refrigerated crescent dinner rolls, chilled until used
1 tablespoon flour
1 egg white
1 teaspoon water
3/4 cup confectioners' sugar
6 teaspoons milk
3/4 teaspoon almond extract

Steps:

  • In a small bowl, beat the cream cheese, almond extract, and sugar until fluffy. Fold half of the chopped almonds into the cream cheese mixture. Separate 1 can of chilled dough on a board sprinkled with the flour. Firmly press the perforations between 2 triangles on both sides to seal into a rectangle. Press or roll each piece of dough to form a 7 by 4-inch rectangle, and spread each with about 2 tablespoons of the cream cheese filling to within 1/4-inch of the edges. Starting at the short end, roll each rectangle tightly into a cylinder. Repeat with the other can of dough and remaining filling.
  • Place on a plate, cover with plastic wrap, and chill until firm, about 30 minutes.
  • Preheat the oven to 350 degrees F while the rolls are chilling.
  • Remove from the refrigerator and cut each roll into 4 slices. Place 1/2-inch apart, cut side up, on ungreased baking sheets. In a small bowl, combine the egg white with 1 teaspoon water. Brush over the swirls. Sprinkle with the remaining chopped almonds. Bake for 18 to 20 minutes, until light brown.
  • While the swirls are baking, combine the glaze ingredients in a small bowl. Cool the swirls for 3 minutes on wire racks placed over a sheet of waxed paper. Drizzle the icing over the warm swirls.
  • These are always wonderful, but are best still warm from the oven. Enjoy!

6 Tbsp evaporated milk
3 eggs
1/2 tsp salt
1 5/8 c all purpose flour
chopped almonds (amount is your choice)

Steps:

  • 1. Cream butter and sugar in bowl. Stir in milk and 2 of the eggs. Add salt and flour, mix well. Chill overnight.
  • 2. Roll out on floured suface,cut in triangular shapes. Beat remaining egg brush on triangles. Sprinkle with almonds. Place on greashed cookie sheet. Bake at 375 degrees until golden brown.

1 cup chopped toasted almond
1 cup sifted powdered sugar

Steps:

  • Combine first 4 ingredients; beat at medium speed with an electric mixer until creamy.
  • Gradually add flour, beating well.
  • Press dough into a lightly greased 9-inch square pan. Set aside.
  • Combine cream cheese, 1 cup sugar, egg, and 1 teaspoons lemon rind; beat at medium speed until smooth.
  • Stir in almonds; spoon mixture over prepared dough.
  • Bake at 300F for 1 hour and 10 minutes or until set.
  • Combine powdered sugar, water, and cinnamon, stirring well.
  • Dollop topping onto uncut warm bars.
  • Let stand 1 minute; spread evenly.
  • Cool in pan on a wire rack.
  • Cover and chill 3 to 4 hours.
  • Cut into bars.
