Sliced almonds and a dash of nutmeg add woodsy notes to this cheese and asparagus side dish.

2 tablespoons sliced almonds
2 teaspoons butter or margarine
2 teaspoons all-purpose flour
1/2 cup half-and-half
1/8 teaspoon salt
Dash pepper
Dash ground nutmeg, if desired
2 lb fresh asparagus spears, trimmed
1/2 cup chopped yellow bell pepper (1/2 medium)
1/4 cup shredded Parmesan cheese (1 oz)

Steps:

  • In 8-inch skillet, cook almonds over medium-low heat 4 to 6 minutes, stirring frequently, until fragrant and lightly browned. Remove from skillet; set aside.
  • In same skillet, melt butter over medium-low heat. With wire whisk, stir in flour until blended. Stir in half-and-half, salt, pepper and nutmeg. Cook, stirring constantly, until mixture boils. Cook 2 to 3 minutes longer, stirring constantly, until thickened. Remove from heat; cover to keep warm.
  • In 4-quart saucepan or Dutch oven, place asparagus; add 1/2 cup water. Heat to boiling over medium heat. Cook uncovered 3 to 5 minutes or until asparagus is crisp-tender, adding bell pepper during last minute of cooking; drain.
  • On large serving platter, arrange asparagus and bell pepper. Spoon sauce over top; sprinkle with cheese and almonds.

1 pound fresh asparagus, tough ends trimmed
¼ cup shredded Parmesan cheese
1 teaspoon sea salt
¼ teaspoon garlic powder, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spray the inside of a 9x13 casserole dish with olive oil cooking spray. Place asparagus in the dish and lightly spray spears with cooking spray.
  • Sprinkle asparagus with Parmesan cheese, sea salt, and garlic powder.
  • Roast in preheated oven until fork easily punctures thickest part of stem, about 12 minutes.

2 tablespoons sliced almonds
4 teaspoons olive oil, divided
1 pound fresh asparagus, cut into 2-inch pieces
1/4 cup water
1 teaspoon sugar
1/4 teaspoon salt
Dash pepper
1 teaspoon lemon juice

Steps:

  • In a large skillet, saute almonds in 1 teaspoon of oil until lightly browned; remove and set aside. In the same skillet, saute asparagus in the remaining oil for 1 minute. Add the water, sugar, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until asparagus is tender. Drain. Sprinkle with lemon juice; top with almonds.

3 tablespoons butter, divided
3 tablespoons bread crumbs
1 garlic clove, minced
1/2 teaspoon dill weed
1/2 cup sliced almonds
1/4 cup grated Parmesan cheese
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1 tablespoon lemon juice

Steps:

  • In a skillet, melt 2 tablespoons butter over medium heat. Stir in bread crumbs, garlic and dill; saute until crumbs are golden brown. Remove from heat; stir in the almonds and cheese. Set aside. , Cook asparagus in a small amount of water until crisp-tender. Drain; heat with remaining butter. Sprinkle with lemon juice. 1 cup Parmesan cheese (shredded)
1/2 cup almonds (sliced, toasted)

Steps:

  • Preheat oven to 400 F.
  • Trim asparagus ends. Place asparagus in a medium-size casserole dish, drizzle with 2 tablespoons of olive oil, season with salt and pepper.
  • Top with minced garlic.
  • Roast for 10 minutes, uncovered, at 400 F.
  • Remove from oven.
  • Sprinkle half of shredded Parmesan cheese all over the asparagus. Top with half of the toasted almonds. Top with the remaining half of shredded Parmesan cheese.
  • Roast for 10 or 15 minutes, uncovered, at 400 F.

2 lbs asparagus
1/2 cup almonds, sliced
2 tablespoons extra virgin olive oil
2 garlic cloves, finely chopped
salt & freshly ground black pepper, to taste

Steps:

  • Bring a large pot of slightly salted water to a boil.
  • Snap off and discard the ends of the asparagus. Cut trimmed asparagus spears on a diagonal into 2-inch-long pieces.
  • Cook asparagus in boiling water until crisp-tender, about 4 minutes.
  • Drain and rinse under cold water. Pat asparagus dry with paper towels.
  • Heat a large skillet over medium-heat. Add almonds and cook, stirring occasionally, until toasted (abour 3 minutes). Transfer to a plate.
